If you have never had a Hanky Panky, you are in for a treat! There is nothing improper about this Hanky Panky Recipe for old-fashioned, delicious, cocktail rye bread appetizers, sometimes called a "polish mistake," topped with a combination of sausage, hamburger meat and, what else, lots of gooey cheesy goodness!

1 ¼ lbs ground beef
1 lb hot pork sausage (I used Jimmy Dean's)
1 lb processed cheese (I used Velveeta)
1 tsp ground oregano
1 tsp garlic powder
½ tsp crushed red pepper
1 pinch fennel seeds
1 loaf party rye bread (sometimes called cocktail rye bread)

Steps:

  • Preheat oven to 400 degrees F.
  • Add ground beef and sausage to a large skillet over medium-high heat. Stir and cook until browned. Use a potato masher or large fork to break up any large clumps of meat.
  • When the meat has browned, drain off any excess fat.
  • Add oregano, garlic powder, crushed red pepper, and fennel seeds. Reduce the heat to low and continue cooking for 20 minutes.
  • Cut the cheese into cubes and add to the meat mixture. Stir until the cheese has melted and everything is thoroughly blended, remove from the heat.
  • Use a small ice-cream scoop (about 1¼ inches in diameter) or a tablespoon to add a dollop of the meat and cheese mixture to each piece of bread.
  • Place on a cookie sheet and bake for 8-10 minutes, or until the bread is toasted and the topping is bubbling.
  • Serve warm or at room temperature.

1 teaspoon Worcestershire sauce
1 (8 ounce) package processed cheese

Steps:

  • Place ground beef and sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
  • Drain the meat and mix in Worcestershire sauce. Spread processed cheese over meat, allowing it to melt. Serve warm on slices of bread.

1 1/2 lbs Velveeta cheese, cubed small
1 loaf miniature party rye rounds

Steps:

  • Fry ground beef and sausage until browned.
  • Drain off fat.
  • Add cubed Velveeta and stir until well combined.
  • Spoon heaping tablespoonsful onto slice of party rye.
  • Serve immediately or keep warm in very low oven.

1 lb hot Italian sausage (reserve 2 tablespoons Fat From Pan)
2 tablespoons flour
2 cups milk
1/2 cup parmesan cheese (Grated)
salt and pepper
1/2 cup parsley (chopped)
10 slices baguette (grilled)

Steps:

  • In a large skillet, saute the sausage until cooked through, about 5-10 minutes. Be sure to break up any large chunks. When cooked drain and set aside reserving 2 tablespoons of the fat.
  • Whisk the flour into the reserved fat followed by the milk. Add the grated parmesan, parsley, cooked sausage, salt and pepper. Mix to combine.
  • Grill the slices of baguette, transfer to a sheet tray and spoon the sausage mixture on top. Place in the oven on broil until golden and bubbling, about 3 to 4 minutes. Remove from the oven and garnish with chopped parsley.

This seems to be another alternative to my recipe for "Little Sausage Snacks". I found this recipe at Cooks.com. Sounds good but haven't tried it yet. Cute name!

2 loaves rye cocktail bread
1 lb Velveeta cheese
1 lb ground beef
1 lb pork sausage, mild
1 teaspoon Tabasco sauce
1 teaspoon oregano

Steps:

  • Brown meats together and drain well.
  • Add Tabassco and oregano.
  • Cut Velvetta into chunks and add to meat in large skillet. When cheese is melted, spread on rye bread.
  • Put on cookie sheet and bake at 350 degrees until hot. You can also make ahead and freeze then heat in 350 oven.

  • Heat a medium skillet over medium. Add the beef and sausage and cook, stirring and breaking up any clumps. When the meat has almost completely browned, drain off the fat and return to heat. Add the onions and saute until soft, about 5 minutes. Sprinkle the Worcestershire sauce, paprika, garlic powder, and chili powder over the meat mixture and stir well. Add the cheese and mix until completely melted. Remove the skillet from heat and the let the mixture rest and cool.
  • On a lightly floured surface, roll out the dough to a 10" x 15" rectangle. Using a 3" round cookie cutter, cut out 20-24 circles (if need be, gather up the scraps, re-roll, and cut).
  • Spoon a nice, heaping teaspoon of the meat mixture onto the center of one dough circle. Gently fold the dough in half and pinch close, then bring the two ends of the half moon to meet up and over the seam, so it looks similar to a drawstring purse. Pinch the open edges closed, then turn the ball over (so the seams are on the bottom), and use your fingers to shape up the ball. Place it on the baking sheet, seams down.
