SAVORY SWEET POTATO CASSEROLE
This savory sweet potato casserole recipe is made with a creamy garlicky mashed filling, and sprinkled with the most irresistible maple rosemary walnut topping. See notes above for possible ingredient variations.

Steps:
- Place the sweet potatoes in a large stockpot. Fill the pot with cold water, enough that the water line sits about 1 inch above the potatoes. Stir the garlic and 1 tablespoon sea salt into the water. Turn the heat to high and cook until the water comes to a boil. Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking the potatoes for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance. Carefully drain out all of the water.
- Meanwhile, as the sweet potatoes are boiling, heat the butter, milk, smoked paprika, and an additional 1.5 teaspoons of sea salt together either in a small saucepan or in the microwave until the butter is just melted and warm. (You want to avoid boiling the milk.) Set aside until ready to use.
- After draining the water, immediately return the sweet potatoes to the hot stockpot, place it back on the hot burner, and turn the heat down to low. Using two oven mitts, carefully hold the handles on the stockpot and shake it gently on the burner for about 1 minute to help cook off some of the remaining steam within the potatoes. Remove the stockpot entirely from the heat and set it on a flat, heatproof surface.
- Using your preferred kind of potato masher (I recommend this one in general, or this one for extra-smooth), mash the sweet potatoes to your desired consistency. Pour the melted butter mixture over the potatoes, and fold it in with a wooden spoon or spatula until potatoes have soaked up the liquid. Give the mixture a taste, and season with extra salt, pepper, and/or smoked paprika as needed, to taste. Set aside.
- In a separate small bowl, stir together the maple rosemary walnut topping ingredients until evenly combined.
- Heat oven to 350°F and grease a 9×13-inch pan with baking spray. Spread the mashed sweet potatoes in an even layer in the pan, and sprinkle evenly with the walnut topping. Bake for 20 minutes, or until the walnuts are toasted and fragrant (but not burnt) and the potatoes are warmed through. Transfer baking pan to a wire rack.
- Then serve warm, garnished with fresh chives, extra black pepper, or any extra toppings that sound good!
SAVORY SWEET POTATOES

- Adjust oven rack to center position and preheat the oven to 400°F.
- In a large bowl, combine the sweet potatoes and the olive oil. Stir to coat the sweet potatoes. Evenly sprinkle with rosemary, garlic salt, and pepper. Stir well until all sweet potatoes are evenly coated with seasonings and herbs. Transfer the sweet potatoes to a large rimmed baking sheet and spread out so that they are in a single layer.
- Cook for 15 minutes. Remove the pan from the oven and use a metal spatula to scrape any stuck bits. Stir everything around and flip all of the sweet potatoes over. Cook for 10 to 15 more minutes until the potatoes are tender.
- Remove potatoes from oven and, if necessary, season with additional garlic salt and pepper, to taste. Sprinkle with half of the Parmesan, toss and flip to coat, then sprinkle with the remainder of the Parmesan. Bake for a couple more minutes until the cheese is melted. Serve immediately.

- Preheat oven to 180°C (350°F).
- Peel and quarter the potatoes.
- Place in a bowl, add 2 tablespoons of the goose fat and mix so that the potatoes are evenly covered.
- Mix in the parmesan, garlic, rosemary, salt, and pepper and ensure all potatoes are evenly covered.
- Add 1 tablespoon of goose fat to a baking tray and cook for 10 minutes in the oven, making sure the oil is hot. Add the potatoes.
- Cook for 1 hour, flipping every 15 minutes to ensure they are evenly browned.

CREAMY ROSEMARY POTATOES

- Preheat the oven to 350 degrees F. Rub the bottom of a 9-by-13-inch baking dish with softened butter.
- Using a mandoline or a very sharp knife, slice the potatoes very thinly. They'll cook better that way. Place the potatoes in the baking dish and sprinkle with 1/2 teaspoon salt and some pepper.
- In a large skillet over medium-low heat, melt the butter. Add the garlic and onions and cook until translucent, stirring occasionally, about 4 minutes. Cut the bar of cream cheese in half and add the halves to the skillet, stirring constantly. Continue stirring until the mixture is smooth and combined, about 3 minutes. Pour in the half-and-half and stir to combine. Mix in 1/2 teaspoon salt and some pepper. Taste and adjust the seasonings as necessary. Do not undersalt! Add the rosemary and green onions and stir to combine. Finally, mix in 1/2 cup of the grated Parmesan.
- Pour the cream cheese mixture over the top of the potatoes. Scrape out the skillet to get every last drop. Sprinkle the remaining 1/2 cup grated Parmesan generously over the top and bake until golden brown and bubbly, at least 1 hour. Let stand for 10 minutes before serving.

- Heat the oil in a large saucepan, then fry the onion until soft. Crush 2 garlic cloves, add to the onion, then fry for 1 min more. Stir in the sweet potato, then cover with the stock and bring to the boil. Strip the leaves from one of the rosemary sprigs, then add to the pan. Simmer for 10 mins until the potato is soft.

- Put garlic in small ovenproof bowl, and drizzle with olive oil.
- Roast for 30 minutes, until very soft.
