ROSEMARY & GARLIC LAMB SHOULDER

Cooking a whole lamb shoulder is the perfect way to feed a crowd at Easter. The beauty of slow-cooking big joints like this is that you end up with lots of lovely leftovers to shred up and use up in salads, burritos, pastas - you name it.

1 x 2 kg lamb or hogget shoulder, bone in
1 bunch of fresh rosemary
1 bulb of garlic
2 teaspoons English mustard
olive oil
6 red onions
4 tablespoons balsamic vinegar
1 tablespoon plain flour
1 splash of red wine, optional
ROOT VEG MASH
400 g carrots
2 cloves of garlic
400 g floury potatoes
400 g parsnips
extra virgin olive oil

Steps:

  • Remove the lamb shoulder from the fridge and allow to come up to room temperature.
  • Preheat the oven at 200ºC/400ºF/gas 6.
  • Pick most of the rosemary leaves into a pestle and mortar and bash with a pinch of sea salt. Peel and add 2 cloves of garlic and bash again. Muddle in the English mustard and 2 tablespoons of olive oil.
  • Slash the lamb all over with a sharp knife, season with black pepper, then rub the rosemary mixture all over the lamb, making sure to get into all the nooks and crannies.
  • Peel and thickly slice the onions, then place in a large deep roasting tray with the remaining rosemary and unpeeled garlic cloves. Drizzle with the balsamic vinegar and pour in 200ml of cold water.
  • Place the lamb shoulder on top and roast for 20 minutes.
  • Carefully remove the tray from the oven and cover tightly with a double layer of tin foil, then return to the oven, turn the heat down to 160ºC/315ºF/gas 2½, and cook for 4 hours, or until the meat pulls easily away from the bone.
  • Remove the shoulder to a platter, cover loosely with the foil and leave to rest.
  • Skim the fat from the tray, pick out and discard the rosemary, and squeeze the garlic cloves out of their skins.
  • Place the tray on the hob over a medium heat, stir in the flour and cook for 2 minutes.
  • Add 500ml of boiling water and the wine (if using), and stir well. Bring to the boil, then reduce the heat to low and simmer for 15 minutes, or until thick and glossy.
  • To make the root veg mash, peel and roughly chop the carrots and peel 2 cloves of garlic. Place in a large pan of boiling salted water over a medium-high heat and cook for 5 minutes.
  • Meanwhile peel and roughly chop the potatoes and parsnips, add them to the pan of boiling water with the carrots then cook for a further 15 minutes, or until tender.
  • Drain in a colander and leave to steam dry. Tip back into the pan, add a lug of extra virgin olive oil, then mash with a potato masher. Season to taste.
  • Shred up the lamb and serve up with the mash and onion gravy. Delicious served with steamed seasonal greens.

Steps:

  • In a large skillet, heat the olive oil. Add the onions, season lightly with salt and pepper and cook over moderate heat until they start to soften, about 5 minutes. Add the rosemary and continue cooking the onions until very soft and just starting to brown, about 10 minutes longer.
  • Add the balsamic vinegar and soy sauce and cook just until the liquid is mostly evaporated, about 1 minute. Remove the rosemary sprig and serve.

You will be tempted to stir the pan frequently as the liquid reduces, but the onions need time to cook undisturbed in order to get deeply browned. Balsamic Glazed Pork With Caramelized Onions image

My market had a sale on boneless, country style pork ribs so I stocked up. Not wanting to baste with a tradiditional tomato barbeque sauce, I became bold and made this up as I went along. The end result was very tasty indeed. You could use boneless chicken breasts or boneless pork chops in place of the ribs.

1 -1 1/2 lb country-style boneless pork ribs
3 tablespoons butter or 3 tablespoons margarine, divided
2 tablespoons olive oil
1 large onion, chopped into medium dice
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried sage
1/2 teaspoon dried garlic powder (see Note)
salt and pepper
1/3 cup balsamic vinegar
1 cup white wine

Steps:

  • *Note-You could use chopped fresh garlic in place of the dried powder, but I wouldn't add it until the the last ten minutes or so.
  • I'm thinking the garlic may burn if you add it at the beginning and would ruin the dish.
  • Combine all dry spice ingredients.
  • Sprinkle on both sides of the ribs, rub into meat surface.
  • Let stand at room temperature for 1/2 hour.
  • In a large skillet, add the olive oil and 2 tablespoons of the butter over medium-high heat.
  • When the butter has melted, add the ribs.
  • Cook for approximately 5 minutes, and then turn over and sear the other side.
  • You want to get a nice crust from the spices on each side.
  • Add the chopped onion.
  • Cook for approximately five more minutes, stirring the onions until they become tender and are starting to brown.
  • Pour the balsamic vinegar over everything in the skillet.
  • Turn the heat down to medium-low and cover the skillet.
  • Cook for approximately 10-15 minutes more, depending on the thickness of the meat.
  • Occasionally stir the onions and turn the meat.
  • You want to really caramelize the onions, until they become slightly charred.
  • They take on a lovely, sweet and smoky flavor.
  • Test your meat to ensure that it's cooked through by inserting a meat thermometer in the center.
  • Temperature should be 170 degrees.
  • Remove the pork and onions to a platter.
  • Turn the heat up to medium-high.
  • Add the wine to the skillet.
  • Stir up the browned bits in the skillet with a wooden spoon.
  • Cook until the wine is reduced by about half, five minutes.
  • Take the skillet off of the heat, and add 1 tablespoon butter.
  • Stir the sauce until the butter has melted, and season with salt and pepper.
  • Pour the sauce over the pork ribs and onions.

1 free-range chicken , about 1.5kg/3lb 5oz
bunch rosemary
3 tbsp olive oil
4 red onions , left whole but peeled and trimmed
3 tbsp balsamic vinegar
1 tbsp honey

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Starting at the neck, carefully loosen the breast skin away from the flesh, trying not to tear it, then place a branch of rosemary down the side of each one. Put the rest of the rosemary in the cavity. Season the chicken inside and out, place in a roasting tin, then sit an onion in each corner of the tin. Drizzle the olive oil over the chicken and onions, then roast everything for 1 hr 20 mins.
  • Meanwhile, stir the vinegar and honey together until the honey has dissolved. When the chicken has had about 40 mins, whip it out of the oven, drizzle the chicken and onions with the vinegar mix, then continue to roast until the time is up. Remove the chicken to rest, turn the onions over and continue to roast them in the oven while the chicken rests, about 20 mins. Serve each person a portion of chicken, a roasted onion and some of the sticky pan juices.

2 teaspoons chopped fresh rosemary leaves
2 tablespoons balsamic vinegar
1 tablespoon olive oil
2 lbs red onions, cut crosswise into 1/2-inch-thick slices
1/3 cup fresh parsley leaves, chopped fine

Steps:

  • Prepare outdoor or indoor grill.
  • In a very small saucepan heat rosemary and vinegar over low heat until hot, but not boiling. Remove pan from heat and cover. Let stand for 20 minutes so that the vinegar becomes infused with the rosemary.
  • In a metal measuring cup heat oil over low heat or microwave until warm. (Heating thins oil, making it easier to brush sparingly over onions.) If you are using an indoor grill, place slices on the grill. For an outdoor grill, use a grilling basket to keep onion slices from falling through. If you don't have a basket, place a soaked bamboo skewer through the rings parallel to the cuts so that they do not tumble through the grill. Brush both sides of each slice lightly with oil. Season onions with salt and pepper and grill 4 to 6 minutes on each side, or until lightly charred and softened.
  • Transfer onions as grilled to a large bowl, separating rings, and toss with vinegar mixture, parsley, and salt and pepper to taste.
  • Serve onions warm or at room temperature.

  • Melt 6 tablespoons butter in heavy small saucepan over medium heat. Add minced shallot and cook until translucent, about 2 minutes. Add vinegar and rosemary and simmer until syrupy and reduced to 1/2 cup, about 6 minutes. Remove from heat (balsamic sauce will separate as it stands).
  • Prepare barbecue (medium-high heat). Peel sweet onions, then cut into 1/2-inch-thick rounds. Skewer horizontally with toothpicks to keep intact. Peel shallots; cut in half lengthwise. Trim root ends and tops of leeks. Cut in half lengthwise; rinse to remove any dirt. Trim root ends of green onions. Place sweet onions, shallots, leeks, and green onions on rimmed baking sheet and drizzle with oil; toss. Sprinkle with salt and pepper.
  • Sprinkle steaks with salt and pepper. Grill sweet onions, shallots, leeks, and green onions until tender, turning often, about 5 minutes for green onions and 10 minutes for sweet onions, shallots, and leeks. Move onions to cooler part of grill to keep warm. Grill steaks to desired doneness, about 7 minutes per side for medium-rare. Transfer steaks and onions to platter; cover.
  • Remove rosemary sprigs from balsamic sauce; add orange juice and bring to simmer. Remove saucepan from heat; add remaining 2 tablespoons chilled butter and whisk until melted and sauce is smooth. Season sauce to taste with salt and pepper. Drizzle some of sauce over steaks and onions. Serve, passing remaining sauce separately.
