- In a bowl, whisk together orange zest and juice, vinegar, honey, and 1/4 teaspoon pepper. Place pork, orange wedges, and rosemary in a shallow dish or zip-top bag and coat with marinade. Refrigerate pork at least 2 hours or up to overnight.
- Remove pork, orange wedges, and rosemary from marinade; transfer pork and oranges to a wire rack set on a foil-lined rimmed baking sheet. Season pork with salt and pepper. Transfer marinade to a small saucepan, simmer over medium until reduced by half, about 5 minutes.
- Heat broiler, with rack in upper third of oven. Broil pork and oranges 3 minutes, then flip pork, brush with reduced marinade, and add rosemary. Broil until pork is lightly charred and cooked through, 5 to 7 minutes. Brush with more reduced marinade and serve.
ROSEMARY ORANGE GLAZED ROASTED PORK TENDERLOIN

- In a blender, puree orange quarters, juice, garlic, paprika, olive oil, and salt until smooth. Rub the paste all over the pork tenderloins and place in a baking pan. Cover with plastic and refrigerate for at least 8 hours and up to 24 hours.
- Remove from refrigerator and wipe to remove excess rub paste. Allow to rest on the counter for one hour so that it comes up to room temperature which promotes even cooking.
- Meanwhile, in a small saucepan over medium heat, stir together the sauce ingredients. Simmer until the mixture thickens, about 10 minutes.
- Preheat the oven to 450 degrees. Place the tenderloins in a baking pan in the oven (uncovered) for 10 minutes, then lower heat to 350 and cook for 25 minutes, at this point, spread with half of your sauce and bake another 20 minutes or until a thermometer inserted in center of loin reads 145 degrees.
- Toss the potatoes and brussels with olive oil, salt, pepper and garlic seasoning and add them the last 20-30 minutes
- Remove the pork tenderloin and veggies from the oven and and the remaining sauce and freshly chopped herbs for garnish.
- Let rest at least 15 minutes before slicing and serving.

Steps:
- Season pork chops with rosemary, salt and pepper.
- Heat oil in large skillet over medium-high heat.
- Add chops and cook until browned and cooked through, about 5 minutres per side.
- Remove to a serving platter and cover to keep warm.
- Add onion and garlic to the pan; saute until soft.
- Add broth and orange juice, scraping to remove any browned bits from the bottom of the pan.
- Boil until liquid is reduced by half, about 3 minutes.
- Pour over pork chops and serve over rice.

ORANGE ROSEMARY GRILLED PORK TENDERLOIN
This is my own recipe. I love the flavour of rosemary and orange together, so I came up with a marinade for pork tenderloin. This turned out really good. Makes for a really healthy and fresh tasting grilled pork dish. Served this with Almond Cranberry Rice and carrots.

- NOTE: Most of the time is for marinading time. Actual work time (putting it together and then cooking) is about 30 minutes.
- Cut tenderloin into 1-1/2" thick medallions.
- Mix remaining ingredients together and pour into a ziplock bag.
- Put tenderloin in marinade and mix around well, being sure to coat meat thoroughly.
- Put in fridge for at least 4 hours, but the flavours infuse better when left overnight.
- When ready to cook. Heat your grill and remove medallions from marinade, discarding marinade, and grill on med/high until done. About 15 minutes.

ROSEMARY AND ORANGE GLAZED PORK

- Preheat oven to 450*; line baking sheet with foil. Boil vinegar in small pan and pour over cherries in a bowl; let stand 5 minutes. Stir in apple, shallots, sage, sugar and olive oil. Set aside. Not sure where this recipe came from, but I cooked it at the beach one summer with a friend and it became a tradition every time we returned (and lots of times at home, inbetween). This is a savory roast. The marmalade and white wine bring out the flavor and juiciness of the roast but don't overpower with sweetness.

- Preheat oven to 350 degrees.
- Place the pork loin on a rack in a shallow roasting pan. Brush meat with the olive oil and then sprinkle with salt, pepper and rosemary. Pour the wine and water into the roasting pan. Roast for 1 hour.
- Remove the pan from the oven and spoon 1/2 cup of pan drippings into a small bowl. Add the marmalade and mix well. Pour this mixture over the meat and return it to the oven.
- Continue roasting the meat for 35 to 45 minutes, basting it 2 to 3 times with the pan drippings, until a meat thermometer reaches 160 degrees F.
- Let the meat rest 15 minutes before serving. Skim any fat from the pan drippings and serve with the roast.

APRICOT-ROSEMARY GLAZED PORK LOIN

- Preheat oven to 350°F.
- Remove any excess fat from the roast.
- Place roast in a 13x9-inch baking dish that has been sprayed with non-stick cooking spray.
- Sprinkle with salt and pepper.
- In a small saucepan, heat the preserves, sherry, rosemary and garlic over medium heat, stirring frequently.
- When thickened, spoon 1/4 cup mixture onto pork reserving remainder.
- Insert meat thermometer so tip is in center of thickest part of pork.
- Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes or until the thermometer reads 155°F.
- Cover pork with foil and allow to stand 15 to 20 minutes or until thermometer reads 160°F.
- Cut roast into slices.
- Heat the reserved apricot mixture and serve with roast.

- Wash and dry pork, and cut into four equal pieces.
