I adopted this recipe because it didn't have a chef "Mama" here on zaar. I haven't tried it yet, but when I do I will let you know, and I will submit any changes I make. Go ahead and try it if you like! Looks good!

Number Of Ingredients 10

1 lb tagliatelle pasta noodles or 1 lb trenette pasta noodles
3/4 cup virgin olive oil
12 cloves fresh garlic
1 medium white onion
6 medium idaho potatoes
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2-1 cup butter or 1/2-1 cup margarine
1 lb fresh string bean
1 cup grated parmesan cheese (good quality)

Steps:

  • Peel potatoes and cube (cut to 3/4-1 inch pieces).
  • Boil potatoes in salted water till tender.
  • Do not over-cook.
  • Meanwhile, steam string beans till tender but still crisp and set aside with potatoes.
  • In a heavy skillet or cast iron frying pan, heat oil and add halved cloves of garlic and finely chopped onion.
  • Saute till golden crisp.
  • Meanwhile, cook pasta noodles in salted water.
  • Cook aldente (cooked just right).
  • Drain, add potatoes, string beans and toss gently.
  • Add butter to heated garlic and onion sauce to melt.
  • Pour sauce over pasta mixture, add pepper, parmesan cheese and work through very gently.
  • Serve this pasta dish with extra parmesan cheese and french bread.

Giacomina's Authentic Pasta Asciutta image

This recipe has been rumored to be one of Sophia Loren's favorites. A quick tip to keep your cheese mold-free is to store it in a tightly covered container with a few sugar cubes. To add a pesto flavor, sprinkle with 1/4 cup finely chopped fresh basil and toss gently to coat.

6 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
1 pound fresh green beans, washed and trimmed
¾ cup olive oil
12 cloves garlic, halved
1 onion, chopped
1 pound fettuccini pasta
½ cup butter
salt and pepper to taste
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender. Be careful to not overcook. Drain, and set aside. Meanwhile, steam string beans for 10 to 12 minutes, or until tender but still crisp. Set aside.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain.
  • In a heavy skillet, heat oil over medium low heat and add garlic and onion. Saute until golden and crisp. Add butter, and heat until melted.
  • Add potatoes, green beans, Parmesan, and the garlic and onion mixture to pasta, and gently toss. Season with salt and pepper.
