Steps:
- Bring a large pot of salted liquid to a boil. Meanwhile, cook ground beef with onion and garlic over medium heat, stirring to break up meat, until browned. Drain well, if necessary.
- Put pasta sauce, mustard, tomatoes, and italian seasoning; bring to a simmer. Cut heat to low and simmer 8-11 minutes.
- Cook pasta until al dente according to package directions. Drain and place on platter. Pour sauce over pasta; sprinkle with parmesan cheese and serve immediately.

A dear friend of mine shared her recipe for roman holiday. I never heard of it before but now i make it all the time. I changed the recipe a bit. She srves hers with a side of meatballs, My version has ground beef right in for a easy one pot meal.

Steps:
- 1. Cook ground beef w/onions & peppers, drain and add your sauce to mixture. Save a little sauce for topping. Parboil pasta eldente. Add to meat sauce.
- 2. mix ricotta with one egg s&p and 1/2 cup parm. Start layer like lasagna. Start with sprayed baking pan, first pasta, then ricotta then mozz. Prolly about two-3 layers. Top with some extra sauce Mozz and parm.
- 3. Bake uncover in 350 oven for 30 min.

- Bring 3 quarts of water to a rolling boil. As your waiting on the water, finely grate the Pecorino Romano, preferably with a Microplane or similar grater.
- When your water is boiling, season generously with salt and add your pasta. Cook for four minutes, stirring occasionally.
- Meanwhile, heat butter in a heavy bottomed skillet over medium heat and add in your pepper. Cook until fragrant (about 1 minute).
- When your pasta has been cooking for 4 minutes, scoop out 3-4 ladles (about 1.5 cups) of pasta water and add to the skillet with the butter and pepper. Bring the butter, pepper, and pasta water mixture up to a boil to emulsify, then, using tongs, remove the pasta from the pot and add to the skillet. Continue cooking, stirring frequently, until the pasta is al dente, about 3-5 more minutes. If the skillet begins to look dry, add another ladle of pasta water.
