Very tasty authentic Chinese dish. Can also use shrimp instead of pork. Might be a little on the salty side for some.

1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 teaspoon rice wine
1 teaspoon sugar
1 tablespoon cornstarch
12 ounces pork fillets, cut into 1 inch cubes
3 cups peanut oil
1 1/2 teaspoons kosher salt
1/4 teaspoon five-spice powder
1 teaspoon pepper

Steps:

  • For the marinade: Combine all of the ingredients in a bowl.
  • Pound the pork lightly to tenderize and marinate it for 30 minutes.
  • Heat the oil in a pan.
  • When the oil starts to smoke, add the pork and fry over medium heat for 1 minute.
  • Remove the pan from the heat and leave th epork in the hot oil for 1 minute.
  • Remove the pork from the pan, but do not drain the oil.
  • Reheat the oild until it starts to smoke.
  • Return the pork to the pan and fry for 30 seconds.
  • Remove, drain, and set aside.
  • Clean the pan and return it to the heat.
  • Add the salt, five-spice powder, and pepper.
  • Return the pork to the pan and toss to coat the cubes evenly.
  • Serve immediatly.

12 ounces, thin dried Chinese egg noodles
2 tablespoons sesame oil
sauce
3 tablespoons soy sauce
1 1/2 tablespoons oyster sauce
1 1/2 tablespoons Chinese rice wine or dry sherry
1 1/2 teaspoons honey
1 tablespoon peanut or vegetable oil
1 1/2 teaspoons minced garlic
1 teaspoon minced or grated fresh ginger
3 scallions, cut into 2-inch lengths
4 or 5 fresh shiitake mushrooms, thinly sliced
1/2 pound Chinese barbecued pork, store-bought or homemade, cut into small, bite-sized pieces

Steps:

  • 1. Bring a medium pot of water to a boil. Add the noodles and cook according to the package instructions until al dente, or the minimum amount of time suggested by the package. Drain the noodles, rinse under cold water, and drain again, shaking well to remove excess water. Return the noodles to the pot, toss with the sesame oil until the noodles are well coated, and set aside.
  • 2. Prepare the sauce: In a small bowl, combine the soy sauce, oyster sauce, rice wine, and honey. Set aside.
  • 3. Heat a wok or large skillet over high heat until a bead of water sizzles and evaporates on contact. Add the peanut oil and swirl to coat the bottom. Add the garlic, ginger, and scallions and stir-fry until aromatic, about 30 seconds. Add the mushrooms and cook until softened, 1 to 2 minutes.
  • 4. Add the noodles and pork. Pour in the sauce mixture and toss with tongs or chopsticks until the noodles and pork are heated through and well coated with sauce. Transfer to a platter and serve.

Steps:

  • Light the barbecue if using or turn the oven on to 220C
  • Take the pork and with sharp knife remove any white membrane from around the pork
  • Put the marinade ingredients into a shallow dish large enough to take the pork, mix together with a spoon and roll the pork to ensure it is covered.
  • Leave the pork to marinade for as long as you can, turn the pork to ensure the pork is evenly marinated
  • Remove the pork from the marinade and wipe off any chunks of marinade
  • Place the pork on the barbecue and turn every 7 mins to ensure it is fully cooked, if using the oven place on a rack and put on the highest shelf for 30 minutes until fully cooked - test by inserting a knife there should be no red juices, leave to stand for 15 minutes for the meat to rest and finish cooking, ideally cover or wrap in foil to keep warm.

4 pork chops or 4 pork tenderloin
1 tablespoon soy sauce
1 tablespoon rice wine
2 teaspoons sugar
1/2 teaspoon salt
1 dash pepper or 1 dash five-spice powder
1 tablespoon minced garlic
1 egg
6 tablespoons cornstarch
oil (for frying)

Steps:

  • Tenderize meat pork with a meat mallet. If you're short on time, pound to at least 1/4 inch thickness or thinner.
  • Mix together all the ingredients except cornstarch and oil and pour over pork. Allow to marinate for 30 minutes. (I've marinated it as long as 1 day and as little as 10 minutes.).
  • Just before frying, pour cornstarch on top of pork and stir into marinade.
  • Heat enough oil in a large skillet to cover bottom. Place pork in pan when oil begins to shimmer. Cook pork chops over med-high heat until cooked through.

½ cup soy sauce
⅓ cup honey
⅓ cup ketchup
⅓ cup brown sugar
¼ cup Chinese rice wine

Steps:

  • Cut pork with the grain into strips 1 1/2- to 2-inches long; put into a large resealable plastic bag.
  • Stir soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, red food coloring or red bean curd (see Cook's Note), and Chinese five-spice powder together in a saucepan over medium-low heat. Cook and stir until just combined and slightly warm, 2 to 3 minutes. Pour the marinade into the bag with the pork, squeeze air from the bag, and seal. Turn bag a few times to coat all pork pieces in marinade.
  • Marinate pork in refrigerator, 2 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove pork from marinade and shake to remove excess liquid. Discard remaining marinade.
  • Cook pork on preheated grill for 20 minutes. Put a small container of water onto the grill and continue cooking, turning the pork regularly, until cooked through, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

420g pack pork fillet, trimmed and sliced into medallions
1 tbsp soy sauce
1 tbsp Chinese five-spice
2 tbsp honey
1 tbsp cornflour
1 egg, beaten
225g cooked rice
200g frozen pea, defrosted
2 spring onions, sliced

Steps:

  • Mix the pork medallions with the soy sauce and five-spice; leave to marinate for 5 mins. Heat a large non-stick pan, then fry the pork for 2-3 mins on each side until cooked through. Pour in 150ml boiling water with the honey and bubble for 2 mins. Mix the cornflour with a little water, stir into the sauce and cook until it thickens and is glossy.
  • Meanwhile, make the fried rice. Pour the egg into a non-stick frying pan to make an omelette, cooking for 2 mins on each side. Remove, roll up, and cut into thin strips. Add the rice to the pan with the peas and stir-fry for 3-5 mins until piping hot, then gently stir through the omelette with the spring onions and seasoning and cook for 1 min. Serve with the pork and a dash more soy sauce.
