Quick, easy and healthy Romaine Avocado Chicken Salad Recipe with a homemade dressing. Chicken breast served over a bed of Romaine with tomatoes, cucumbers, avocados and a most delicious homemade dressing.

1 recipe of pan seared chicken
1 romaine lettuce hearts, chopped
8 oz cherry tomatoes, halved
2 mini cucumbers, sliced
1/2 large red onion, sliced
1/2 avocado, sliced
1/3 cup oil
½ tsp italian seasoning
1 garlic clove, minced
2 Tbsp fresh lemon juice
½ tsp salt
¼ tsp ground black pepper

Steps:

  • Prepare the pan seared chicken.
  • On high heat, heat 1 Tbsp oil in a skillet. Sear chicken 2 minutes on both sides. Turn heat down to low, close lid of the skillet and cook another 5-6 minutes, until chicken is tender.
  • Meanwhile, in a small bowl, combine the ingredients for the dressing and mix until well incorporated.
  • Add all of the salad ingredients to a bowl.
  • Slice cooked chicken. Add to salad.
  • Drizzle dressing over salad. Toss gently. Enjoy!

This wonderful summer salad that is a meal all in one with grilled chicken, strawberries, avocado, spinach, and romaine lettuce topped with a sweet poppy seed dressing.

½ cup olive oil
¼ cup cider vinegar
2 tablespoons honey
2 teaspoons white sugar
1 ½ teaspoons poppy seeds
½ teaspoon salt
½ teaspoon ground dry mustard
½ teaspoon grated onion
¼ cup Italian-style salad dressing
3 tablespoons teriyaki sauce
2 medium boneless chicken breasts
2 cups baby spinach, torn into bite-sized pieces
2 cups torn romaine lettuce
2 cups hulled and sliced strawberries
1 ripe but firm avocado, pitted and sliced into bite-sized pieces
½ cup toasted pecans

Steps:

  • Combine olive oil, vinegar, honey, sugar, poppy seeds, salt, mustard, and grated onion in a blender. Transfer dressing to a bowl or jar and refrigerate at least 1 hour before serving.
  • Combine Italian dressing and teriyaki sauce in a sealable container and add chicken. Seal and marinate at least 30 minutes to 1 hour before grilling.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from marinade and grill until juices run clear, 5 to 8 minutes per side. Remove from heat, let cool about 10 minutes, and cut into bite-sized pieces.
  • Toss grilled chicken, spinach, and romaine lettuce together in a large serving bowl. Gently stir in strawberries and avocado. Refrigerate until ready to serve.
  • Top salad with dressing and pecans when serving.

3 tablespoons extra-virgin olive oil
1 firm-ripe California avocado
3 cups coarsely chopped romaine, washed well and spun dry

1 large head romaine lettuce, outside leaves discarded
1 large tomatoes, chopped
1 small red bell pepper, julienned
1/2 small avocado, cut into chunks
2 tablespoons coarsely chopped walnuts (optional)
2 tablespoons lemon juice
2 teaspoons balsamic vinegar
extra virgin olive oil, to taste
salt and black pepper, to taste

Steps:

  • Remove outer leaves of lettuce heads and discard. Cut off tops of leaves and discard. (Tops are bitter.)
  • Chop remaining inner leaves. Rinse in cold water, and dry (this will keep the flavor of the salad from getting diluted).
  • In a small bowl, whisk together lemon juice, vinegar, olive oil, salt and pepper. Toss with salad greens, red bell pepper, tomato and avocado chunks. Sprinkle with chopped walnuts if desired.
  • Serve immediately, and enjoy!
