1 3-pound boneless pork loin roast with fat cap
1 teaspoon kosher salt
1 teaspoon granulated sugar
1 pound bulk pork or Italian sausage
4 slices bacon (cut into ¼" slices)
1 yellow onion (diced)
1 stalk celery (chopped)
1 Granny Smith apple (peeled and diced)
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 cloves garlic (minced)
2 slices hearty white bread (torn into pieces)
1 teaspoon chopped fresh sage
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons unsalted butter
2 tablespoons vegetable or canola oil
¾ cup chicken broth or stock

Steps:

  • Adjust the oven rack to the lower-middle position and heat oven to 325°Line a large rimmed baking sheet with aluminum foil and set a V-rack wire rack inside. Spray the rack with nonstick cooking spray.
  • Butterfly the pork loin roast or ask your butcher to do this for you.
  • Use paper towels to pat the pork dry and rub it on all sides with salt and sugar. Place the roast in a zipper-lock bag and refrigerate 1-4 hours.
  • In a large skillet, cook the sausage and bacon until the sausage has browned, the bacon is cooked through but not crispy. Transfer the meat to a paper towel-lined plate reserving 2 tablespoons of the rendered fat in the skillet.
  • Add the onion, celery and apple to the skillet. Season with salt and pepper and cook until the onion, celery and apple are tender. Add the minced garlic and remove the skillet from the heat. Pour the onion mixture into a large mixing bowl and wipe out the skillet.
  • Add the reserved sausage/bacon mixture to the onion mixture, in the bowl, and stir well.
  • While the above cooks, place the bread, sage, rosemary and thyme in the bowl of a food processor and pulse the mixture into coarse crumbs.
  • Set the skillet over medium heat and add the butter. When the butter melts, add the coarse breadcrumb mixture and stir until the breadcrumbs are lightly toasted, about 3 minutes (do not allow the breadcrumbs to burn). Add the breadcrumb mixture to the sausage/onion mixture and stir well. Set aside.
  • Remove the pork from the bag and set it in a second large baking tray. Pat it dry with paper towels and arrange it, fat cap down, on the tray.
  • Cover the pork with the sausage/onion stuffing, leaving a ½-inch border on all sides.
  • Cut 7 (10-inch) pieces of kitchen twine and set them next to the work area.
  • Roll the pork tightly and tie it at 1-inch intervals along the length of the roast. Season it, on all sides, with kosher salt and black pepper.
  • Heat the large skillet over medium heat and add 2 tablespoons oil.
  • Place the roast in the skillet and brown on all sides (about 3 minutes per side).
  • Set the roast in the V-rack wire rack on the rimmed baking sheet, fat side up, and set it in the oven. Pour the chicken stock under the roast in the bottom of the baking sheet.
  • Roast the pork 50-60 minutes or until the thickest, middle part of the pork registers 145°F on a meat thermometer. Remove the roast from the oven, tent loosely with foil, and let it rest 10-20 minutes before slicing. Remove the kitchen twine before slicing.
  • If desired and if there is enough, pour any rendered juices from the bottom of the pan through a mesh strainer and serve alongside the roast.

Known as porchetta in Italy, this pork dish has become a much-loved classic in Britain and a great alternative to turkey for a festive meal. Boning, butterflying and stuffing the pork like this means that the flavours go all through the meat, especially if you leave it to marinate in the fridge for a couple of days. A crackling good dish!

3kg piece of boned belly pork attached to the loin, butterflied and rind scored
1.5kg potatoes, such as Maris Pipers, thickly sliced
1 onion, thickly sliced
100ml white wine or cider
100ml chicken stock or water
sea salt and black pepper
3 tbsp finely chopped rosemary
1 thyme sprig, leaves only, finely chopped
1 garlic bulb, cloves peeled and crushed
1 tbsp fennel seeds, crushed
1 tsp chilli flakes
zest of 1 lemon
50ml wine

Steps:

  • For the filling, either put all the ingredients in a small food processor and blend until well combined - the mixture doesn't have to be completely smooth - or pound with a pestle and mortar. Season with salt and pepper. Lay the pork out, skin-side down, and rub the filling over the meat. Roll it up as tightly as you can and secure at intervals with butcher's string. If you have time, leave the pork in the fridge, uncovered or loosely wrapped in kitchen paper, overnight - or even better, for 2 nights. This gives the flavours time to permeate the meat and allows the skin to dry out. An hour before you are ready to start cooking the pork, remove it from the fridge so it can come up to room temperature. Preheat the oven to 150°C/Fan 130°C/Gas 2. Arrange the potatoes and onion slices on the base of a large roasting tin and season with salt. Pour over the white wine or cider and the stock or water. Make sure the rind of the pork is dry and season it with salt. Place the pork on top of the potatoes and onions. Cover it with foil and put in the oven. Roast for 4 hours until the pork is cooked through. Check with a meat thermometer if you have one - the internal temperature should read 68°C. Turn the oven up to its highest setting and cook for a further half an hour to crisp up the skin. Remove from the oven and transfer the meat and potatoes to separate serving dishes. Leave the meat to rest for half an hour, uncovered, but keep the potatoes warm.

Steps:

  • Heat the oven to 160°C (140°C in a fan oven), 325°F, gas 3.
  • Unroll the roulade and brush with oil. Spread the herbs and the mustard seeds on top, season with salt and ground black pepper and roll up again. Hold closed with toothpicks or tie with kitchen twine. Fry on all sides in hot oil, then deglaze with water and braise in the oven for 45-60 min. Turn 2-3 times and if necessary add some more water.
  • Arrange the finished roulade on a plate. Deglaze the meat juices with a little boiling water, pour into a pot, bring to the boil then reduce slightly on a medium heat. Season with salt and ground black pepper and stir in the butter.
  • Slice the roulade and serve with the gravy.

One 3-pound boneless pork loin roast (roast should have nice fat cap layer on the top)
1/2 cup kosher salt
1/2 cup sugar
12 black peppercorns
6 cloves garlic, roughly chopped
6 sprigs fresh thyme
2 bay leaves
1 small yellow onion, peeled and sliced into rings
4 cups ice cubes
4 ounces andouille sausage links
Kosher salt and freshly ground black pepper
1 tablespoon granulated garlic
1 tablespoon paprika
1 to 2 tablespoons canola oil
1/2 cup diced yellow onion
1/4 cup peeled and diced carrot
1/4 cup diced celery
1/4 cup vermouth
2 cups low sodium chicken stock
2 tablespoons unsalted butter
Zest and juice of half a lemon

Steps:

  • Place the roast onto a cutting board with the short side toward you and fat facing down. Using a sharp filet knife (with the blade horizontal to the board), butterfly the roast open about 1 inch from the bottom of the roast. Work carefully to not cut all the way through. Continue to slice horizontally, opening the roast up until you have a large, thin, flat piece of meat. Place the pork in large airtight freezer bag (or large plastic container with a lid).
  • To prepare the brine, bring 6 cups water, the salt, sugar, peppercorns, garlic, thyme, bay leaves and onions to a simmer in a medium pot over medium heat. Stir until the sugar and salt have completely dissolved. Remove from the heat and cool by adding the ice cubes. Pour the brine into the freezer bag, submerging the roast completely, seal and set aside for 25 minutes.
  • Preheat the oven to 375 degrees F.
  • Remove the pork from the brine and pat dry with paper towels. Lay the sausages inside lengthwise. Pierce the casings with the tip of a sharp paring knife (this will ensure the flavor of the sausage goes into the pork as it cooks). Starting with the short side, roll up the roast tightly, jelly roll style. Secure the roast with tightly fitted kitchen twine at even intervals about 2 inches apart. Sprinkle with salt, pepper, the granulated garlic and paprika.
  • Heat the oil in a large cast-iron pan over medium heat. Add the roast and sear fat-side down first, 3 to 4 minutes, and then on each of the three other sides. When turned to the final side, transfer the pan to the oven and bake until the internal temperature hits 145 degrees F on an instant-read thermometer, 45 to 55 minutes. Remove the roast from the oven; rest the pork on a platter while you make gravy from the pan drippings.
  • Set the pan over medium-low heat. Add a little oil, if needed, and saute the onions, carrots and celery. Cook the vegetables until well caramelized, about 8 minutes. Then season with salt and pepper. Deglaze the pan with the vermouth and reduce until the liquid has almost completely reduced. Add the chicken stock and reduce again for another 5 minutes; this will ensure you have a nice, rich sauce. Taste and season with salt and pepper.
  • Remove the pan from the heat and swirl in the butter to thicken the sauce. Finish with the lemon zest, a squeeze of lemon juice and serve the sauce over sliced andouille-stuffed pork loin.

1 pork tenderloin
½ bunch flat-leaf parsley, chopped
⅓ cup bread crumbs
¼ cup dried currants
3 cloves garlic, minced
2 sprigs fresh rosemary, chopped
1 egg
2 tablespoons olive oil
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 pinch cayenne pepper
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Remove the flap of meat at the wider end of the tenderloin and trim the last two inches off of the narrow end of the tenderloin; chop trimmings and reserve.
  • Cut from one side of the tenderloin through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book. Cut a few shallow slashes in the meat. Cover the meat with plastic wrap and pound to about 1/2-inch thick. Roll up pounded tenderloin, cover with plastic wrap, and refrigerate to keep cold.
  • Mix chopped pork trimmings, parsley, bread crumbs, currants, garlic, rosemary, egg, olive oil, 2 teaspoons salt, 1 1/2 teaspoons black pepper, and cayenne pepper together in a bowl with a fork until stuffing is well-combined.
  • Unroll tenderloin on work surface. Spread stuffing over tenderloin, leaving a 2-inch border on one of the long-sides. Roll up tenderloin, ending at the 2-inch border; tie meat with twine to secure shape. Season tenderloin all over with salt and black pepper.
  • Heat an oven-safe skillet over high heat until hot. Cook tenderloin in hot skillet until browned, 3 to 4 minutes per side.
  • Cook in the preheated oven until pork is slightly pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer to a plate and let rest for 15 minutes before removing twine and slicing.

2 stalks celery, chopped

1 tablespoon herbes de Provence
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat margarine in a skillet over medium heat; cook and stir onion, mushrooms, and celery in the hot margarine until vegetables are tender, about 12 minutes. Transfer vegetables to a bowl. Stir bread into vegetables until moistened; season with salt and black pepper.

1 tbsp olive oil
1 onion, finely chopped
few sage leaves, shredded
25g fresh breadcrumbs
4 good quality sausages, skinned
1.6kg boned loin of pork
2 tbsp plain flour
400ml chicken or beef stock
100ml cider

Steps:

  • Heat the oil in a saucepan and cook the onion for 5 mins until soft. Remove from the heat. Once cool, transfer to a bowl and mix in sage, breadcrumbs, sausage meat and some seasoning.
  • Untie the pork and score the skin well with a sharp knife. Cut down the length of the meat, then open out like a book so you can stuff the sausage meat inside. Close back up to resemble original shape and tie at intervals with string to hold it together. Weigh so you know how long it will need to cook for. This can be done ahead; chill until needed.
  • Heat oven to 240C/220C fan/gas 9. Rub the joint all over with salt and pepper and place in a roasting tray. Cook for 25 mins, then turn to 180C/160C fan/gas 4 and cook for 20 mins per 450g/1lb. Remove, and check it's cooked through: any juices that run out should be clear. Transfer to a dish, then cover with foil to rest while you make the gravy.
  • Spoon most of the fat out the tray, leaving the meat juices. Place tray on the hob or transfer juices to a frying pan. Stir in the flour for 1 min followed by the stock and cider, and bubble for a few mins. Strain into a jug. Serve the pork sliced, with the crackling, potatoes, gravy and veg.

1/2 teaspoon salt
Freshly ground black pepper
2/3 cup olives, pitted and finely chopped (Niçoise, Picholine, Lucques, and/or Castelvetrano)
2 tablespoons capers (salt-packed and very well soaked to desalinate, or brined capers rinsed well)
1 garlic clove, pounded with a pinch of salt
1 teaspoon finely chopped rosemary or sage leaves
1 tablespoon chopped thyme leaves
2 tablespoons chopped parsley
1/4 cup good olive oil
1 tablespoon cooking oil, olive or vegetable

Steps:

  • Set the loin on a cutting board with one of the short, cut ends facing you. With a sharp knife, make a lengthwise horizontal cut, about a third of the way up one of the long sides, like asymmetrically splitting open a hot dog bun. Don't cut all the way through, but nearly-far enough so that you can open up the roast like a book. If you started on the right, the left side will now be twice as thick as the right. At the hinge where they meet, make another horizontal cut midway up the left (thicker) side, so that you can open the roast again, like a magazine gatefold. Sprinkle the pork all over with the salt and pepper and set it aside.
  • Heat the oven to 425°F and make the stuffing by mixing all the remaining ingredients together (except the cooking oil). Spread the stuffing over the cut side of the pork loin, then roll it up and back into shape. Using cotton string, bind the roast with six little string belts.
  • Heat a skillet to high, add the cooking oil, and then carefully lay in the pork roast. Brown the roast on all sides and then put the skillet in the oven. Roast until it is just cooked through, about 20 minutes, then remove it from the pan and let it rest on a platter in a warm place for 10 minutes. Remove the strings, slice, and serve.

1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/2 teaspoon ground coriander, divided
1 (10 ounce) jar cherry preserves
2 tablespoons orange marmalade
heavy string, cut into 10 inch lengths
1/4 lb bulk pork sausage
1 3/4 cups herb seasoned stuffing mix
1 cup peeled chopped tart apple
1/2 cup hot water
1/3 cup raisins
1 tablespoon diced onion
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Buy a boneless, rolled pork loin.
  • Rolled pork loin comes in two pieces.
  • Cut each one lengthwise to, but not through, the other side.
  • Open the meat like a book and pound to 1/2 inch thickness.
  • Sprinkle each side with 1/4 teaspoons each of salt, pepper, and coriander.
  • To prepare stuffing:.
  • Cook sausage until slightly pink; drain well and pat dry with paper towels.
  • Combine sausage and the next 9 ingredients; set aside.
  • Lay out enough 10" pieces of string, spaced 2 inches apart, the length of meat.
  • Place one piece of meat on strings, with strings crossing under meat horizontally.
  • Spoon stuffing mixture evenly down center of one piece of meat.
  • Top with remaining pork rectangle.
  • Tie securely with the string at 2 inch intervals, securing sides together.
  • Trim loose ends of string.
  • Place roast on a greased rack in a shallow roasting pan.
  • Insert a meat thermometer into the thickest portion of the meat, making sure it doesn't touch fat or stuffing.
  • Bake at 325 degrees for one hour and 30 minutes or until meat thermometer registers 145 degrees.
  • Combine cherry preserves and orange marmalade; stir well.
  • Brush roast with preserve mixture.
  • Bake an additional one hour or until thermometer registers 160 degrees, basting often.
  • Allow approximately 30-35 minutes per pound.

  • Preheat oven to 400 degrees F.

1/2 cup thinly sliced green onions

Steps:

  • With a sharp knife, cut a deep pocket between each rib on meaty side of roast. Combine the green pepper, green onions, celery and garlic; stuff deeply into pockets. Season roast with salt and cayenne pepper. , Place roast, rib side down, in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour 40 minutes or until thermometer in the pork reads 145°. 1/8 teaspoon pepper
1 boneless pork loin roast (3 to 4 pounds)
1/4 cup packed brown sugar
2 teaspoons all-purpose flour
1 teaspoon cornstarch
1 teaspoon ground mustard
2 teaspoons cider vinegar

Steps:

  • In a bowl, combine the plums, apricots, ginger, 3/4 teaspoon cumin, orange zest, cinnamon, salt and pepper; set aside. Untie roast and separate pieces. Spoon fruit mixture onto one piece. Top with the second piece; retie with kitchen string. Place on a rack in a shallow roasting pan., Combine the brown sugar, flour, cornstarch, mustard, vinegar and remaining cumin until smooth; rub over roast. Bake, uncovered, at 350° for 1 to 1-1/4 hours or until a thermometer in the pork reads 145°. Let stand for 10 minutes before slicing.
