ROCKY ROAD COOKIE CUPS

Steps:

• Preheat oven to 350°. Shape dough into 1-1/4-in. balls; press evenly onto bottom and up sides of 24 greased mini-muffin cups., Bake until edges are golden, 10-12 minutes. Using the back of a measuring teaspoon, make an indentation in each cup. Immediately place 3 marshmallows and 1/4 teaspoon chocolate chips in each cup; sprinkle with almonds. Return to oven; bake 1 minute longer. Cool completely in pans on wire racks.

NO BAKE ROCKY ROAD COOKIES

Steps:

• Combine sugar, cocoa, butter, and milk in large pan and boil for 3 minutes stirring constantly.
• Remove from heat. stir in peanu butter, vanilla, and oats.
• Gently fold in marshmallows.
• Either spread in buttered pan or drop onto wax paper or pan sprayed with non-stick spray.
• Refrigerate until firm.

ROCKY ROAD PEANUT BUTTER CANDY CUPS

Steps:

• MICROWAVE: peanut butter and chocolate morsels in a large glass bowl at HIGH 2 minutes or until melted, stirring every 30 seconds.
• Stir in 2 tablespoons peanut butter until well blended.
• Stir in rice cereal, marshmallows and chopped peanuts.
• Spoon mixture evenly into miniature paper candy cups.
• Chill for 1 hour or until firm.

ROCKY ROAD COOKIE PIZZA

Steps:

• Preheat oven at 350 degrees.
• Press or roll (using powder sugar) cookie dough to a lightly buttered 12 inch pizza pan.
• Cook 15- 20 minutes till lightly brown.
• Remove from oven.
• Sprinkle evenly with peanuts, chocolate chips, and marshmallows.
• Drizzle with caramel topping.
• Bake addition 5-10 till marshmallows are lightly brown.
• Let cool for 10 minutes.
• Cut into slices or squares.
• Yummy served with vanilla ice cream.
