4 large potatoes, peeled and cubed
1/2 medium white onion, finely chopped
3 cups water
1 teaspoon chervil
1 1/2 teaspoons dill weed
1 pinch nutmeg
1 pinch sea salt
1 pinch black pepper
4 cups heated milk
1/3 stalk celery, diced

Steps:

  • Place potatoes, onion and celery in saucepan.
  • Add water and season with salt and pepper.
  • Partly cover and bring to boil.
  • Cook 18 minutes over medium heat or according to size of potatoes.
  • Potatoes should be fully cooked.
  • Drain vegetables, but keep the liquid!
  • You`ll need it
  • Return the liquid to the saucepan.
  • Cook over high heat reduce the liquid by 1/4 of original amount.
  • While waiting for liquid to reduce preheat the milk.
  • I recommend 55 to 130 seconds depending on microwave oven.
  • Milk should be warm if dropped on the wrist.
  • Remove saucepan from heat.
  • Pour milk into saucepan, stirring constantly.
  • Add cooked vegetables, nutmeg and dill.
  • Pepper to taste.
  • Cook 4 minutes over very low heat.
  • Do not allow milk to boil at any time during aforementioned step.
  • Sprinkle with chervil and Voila!

I got this recipe from a newsletter (via email). This recipe is courtesy of Linda Dixon. I made it and I loved it. If you like a cream-type of potato soup and dill, this is the one for you. Please feel free to tweak to your personal preferences, I did. I will post the recipe how I got it. The substitutions I made was instead of evaporated milk, I used about 5 oz. (1/3 of a 16 oz tub) of sour cream, and I used shredded carrots instead of sliced. Enjoy.

7 cups cubed peeled potatoes
4 cups chicken broth
1 cup water
2 cups chopped onions
1/2 cup chopped celery
1/2 cup thinly sliced carrot
1/4 cup butter or 1/4 cup margarine
2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons dried dill weed
12 ounces evaporated milk

Steps:

  • In a large crockpot, combine first ten ingredients.
  • Cover and cook on high until the vegetables are tender (Depending on your crockpot this time can vary from 3 to 7 hours.).
  • Add milk. Stir to blend and heat.
  • Use a hand mixer to blend some of the "chunks" to thicken soup. Fix to preference: to thicken further, use potato flakes & to thin soup, add regular milk.

1 1/2 pound russet (baking) potatoes, peeled and cut into 1/2-inch pieces
1/2 stick unsalted butter
4 cups water
1 cup whole milk
2 tablespoons chopped dill

Steps:

  • Cook vegetables in butter in a 5- to 6-quart heavy pot, covered, over medium-high heat, stirring occasionally, until beginning to brown and stick to bottom of pot, about 15 minutes. Add water, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper and simmer, covered, until vegetables are tender, about 10 minutes. Transfer 3 cups soup to a blender with milk and blend until smooth (use caution when blending hot liquids). Return to pot, then stir in dill and salt and pepper to taste.

Steps:

  • Combine 5 cups water, the butter, the carrots and potatoes in a saucepan. Bring to a boil and cook until the potatoes are tender. Add the pickles and continue to boil.
  • Meanwhile, whisk together the flour, sour cream and salt in a separate bowl. Add enough water to make a paste, then slowly, to avoid curdling, add the mixture to the soup to thicken. Bring to a boil, then remove from the heat. Add pickle juice, to taste.

4 chicken bouillon cubes or 2 tablespoons chicken bouillon powder
8 ounces Velveeta reduced fat cheese product

  • Bring the first 8 ingredients to boil, reduce to simmer.

  • Thin to desired consistency with warm milk.

Here's a grandmother's recipe related to gnocchi but from a grandmother who was not Italian. In this recipe from my mother, Annette Gertner, a potato-based dough is formed into small noodle shapes, which are tossed with bread crumbs and onions, Austrian-style. Another way to serve the noodles is to gently fold them with warm sour cream and chives.

1 large baking potato, such as russet, peeled
1 large egg, lightly beaten
2 teaspoons salt, plus more for pot
2/3 to 3/4 cup all-purpose flour, plus more for rolling
1 large onion, thinly sliced and separated into rings
3 tablespoons unsalted butter
1/2 cup dry plain bread crumbs
1 teaspoon minced fresh dill

Steps:

  • Cut potato in quarters, place in a pot with water to cover, bring to a boil over high heat and cook until tender, about 15 minutes. Drain and mash until smooth in a large bowl. Allow it to cool to lukewarm. Stir in the egg and half the salt. Mix in enough flour to make a soft dough that's not sticky. Spread more flour on a board and transfer dough to the board. Knead lightly for a minute or two. Roll or pat into a rectangle that's about 1/4-inch thick.
  • Mix onion with remaining teaspoon salt and spread in a large, heavy skillet. Cover and place over low heat to steam until tender but not brown, 5 to 8 minutes. Set aside.
  • Bring a large pot of salted water to a boil. Slice dough into 1/4-inch wide strips and cut into 1-inch-long pieces. Drop into boiling water, reduce heat to medium, and cook until noodles rise to the surface, 1 to 3 minutes. Drain and toss with 1 tablespoon of the butter. Keep covered.
  • Add remaining butter to the skillet with the onions. Cook on medium until the butter melts, toss, add bread crumbs and dill and cook for a few minutes until ingredients are well-combined and the bread crumbs are fragrant. Add noodles, reheat and gently fold everything together and serve.

1/8 teaspoon pepper
1/2 cup buttermilk

Herb potato chips and finely shredded leeks, optional

Steps:

  • In a large saucepan, saute leeks and celery in butter until tender. Stir in the broth, potatoes, carrot, thyme, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until vegetables are tender. Cool slightly., Transfer to a blender; cover and process until smooth. Return to the pan. Whisk a small amount of soup into buttermilk; return all to the pan, stirring constantly. Add dill; heat through (do not boil). Garnish if desired.

Steps:

  • In a large saucepan or soup pot with cover, combine stock, pickles, pickle liquid & potatoes. Bring to a boil, reduce heat and cook covered, over low heat until potatoes start to get soft (about 10 minutes).
  • Combine flour and milk, add to broth, bring to a boil and remove from heat.
