SALMON WITH TARRAGON SAUCE
This is simple, elegant but ,best of all, it is low calorie!! Great for when you want something on the sophisticated side but don't need the guilt.

Steps:
- Preheat oven to 400 degrees.
- Melt 2 T. of the butter in a roasting pan large enough to hold the fish.
- Put the fish in the butter and turn to coat. Sprinkle with salt.
- Bake 20 minutes, turning once.
- Meanwhile, in small saucepan, combine wine, tarragon, and mustard and bring to a boil over medium heat. Simmer for 2 minutes.
- Remove from heat and swirl in the 2 T. remaining butter until melted.
- Divide fish into 4 servings and top with the sauce.

ROASTED SALMON STEAKS WITH TARRAGON BUTTER
When I roast salmon steaks, I often like to start a pan of root vegetables in the oven 5 to 10 minutes before the salmon. I toss quartered potatoes and 1-inch chunks of parsnips and carrots with a small amount of olive oil. A complete meal is cooked in less than 20 minutes!

- Position the oven racks so that the top rack is 6 inches from the top of the oven. Preheat the oven to convection roast at 500°F. Coat a shallow roasting pan and flat roasting rack with nonstick spray.
- Rinse the salmon steaks under cold running water and pat dry with paper towels. Brush the steaks with olive oil on both sides and sprinkle lightly with salt and pepper.
- Place the salmon on the roasting rack and roast on the top rack for 5 to 8 minutes or just until the fish flakes easily when tested with a fork.
- To make the tarragon butter, cream the butter with the tarragon and red wine vinegar until blended and smooth. Add salt and pepper to taste. Serve about 1 tablespoonful of tarragon butter on each salmon steak.

BAKED SALMON WITH TARRAGON AND BACON
One of my favorite things to eat is a beautiful piece of salmon, simply prepared allowing the fish to shine on it's own. This is just such a recipe.

Steps:
- Pre-heat oven to 400°F.
- Butter (or spray with non-stick spray) one side of a large sheet of aluminum foil (double the size needed to hold the salmon fillets in one layer); place in a baking dish (butter side up) large enough to hold the salmon (again, in one layer).
- Fry the finely chopped onion in butter in a frypan until soft and golden but not brown.
- Add the bacon and tarragon and cook for another two minutes.
- Stir in the lemon juice and remove from heat.
- Place the salmon fillets on the foil in the baking dish.
- Cover each fillet with some of the onion/bacon mixture and drizzle any pan juices over as well.
- Fold the foil over the fish and seal to make a parcel.
- Bake for 15-20 minutes, or until fish flakes easily with a fork.
- May be served with a dollops of thick cream or creme fraiche (but I personally don't think it needs it!).

- In a bowl, combine the melted butter with the garlic, shallots, ground fennel seeds, lemon zest, orange zest, tarragon, black pepper and thyme.
- Preheat the oven to 300°. Brush a large glass or ceramic baking dish with olive oil. Lightly season the salmon fillet with kosher salt. Spread half of the seasoning mixture on the skinned side of the fish. Place the salmon skinned side down in the baking dish and fold the thin tail end under itself to make the fillet an even thickness. Stir the cayenne pepper into the remaining seasoning mixture and spread it over the salmon. Let the salmon stand at room temperature for 20 minutes.
- Carefully pour the orange juice into the baking dish and cover the baking dish tightly with aluminum foil. Bake the salmon for about 35 minutes, until it is barely opaque in the center.
