ROASTED PORK TENDERLOIN WITH POTATOES AND MUSTARD SAUCE



Roasted Pork Tenderloin with Potatoes and Mustard Sauce image

A great make ahead meal, this Roasted Pork Tenderloin with Potatoes and Mustard Sauce can be prepped the day before, and all you have to do is roast on the day of!

Number Of Ingredients 15

1 1/2 teaspoons granulated garlic
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
salt and pepper
2 pork tenderloins (2 1/2 - 3 lbs total)
2 1/2 lbs small red potatoes, unpeeled, cut into 1-inch pieces
4 slices bacon, cut into 1/2-inch pieces
6 tablespoons extra virgin olive oil
1/4 cup minced fresh parsley
1 shallot, minced
2 tablespoons whole-grain mustard
1 1/2 tablespoons white wine vinegar
pinch of sugar
1 tablespoon extra virgin olive oil, for finishing

Steps:

  • In a small bowl, combine the garlic, oregano, coriander and cumin. Add 1/2 teaspoon salt and 1/2 teaspoon pepper. Rub the spice mix all over the pork and wrap tightly with plastic wrap.
  • Place the potatoes, bacon and 2 tablespoons of the oil in a large ziplock bag and toss to coat. Press out as much air as possible.
  • In a small bowl, combine the remaining 1/4 cup oil, parsley, shallot, mustard, vinegar and sugar. Cover.
  • Store the pork, potatoes and dressing in the refrigerator for at least 1 hour and up to 24 hours.
  • When ready to cook and serve, remove the dressing from the refrigerator and allow it to come to room temperature.
  • Adjust the oven rack to the upper-middle of the oven and heat the oven to 325ºF. Line a baking sheet with foil and spray with nonstick cooking spray. Place the potatoes on the baking sheet in a single layer. Season with salt and pepper. Roast the potatoes for 30 minutes.
  • Remove the baking sheet from the oven, and with a spoon or spatula, push the potatoes to the sides of the baking sheet. Pat the pork dry and place in the center of the baking sheet. Return to the oven and roast until the pork registers 130ºF on a thermometer, 15-20 minutes.
  • Remove the pork and the potatoes from the oven and adjust the rack 6 inches from the broiler. Switch the oven to broil and return the baking sheet. Broil the pork and potatoes until the pork is spotty brown and registers 140ºF, 3-5 minutes.
  • Transfer the pork to a cutting board and tent loosely with foil. Let the pork sit for 10-15 minutes. Return the potatoes to the oven and continue to broil for an additional 5-10 minutes, until lightly browned.
  • Slice the pork into 1/2-inch slices. Serve the dressing with the pork and potatoes.

1 teaspoon dried rosemary

3 tablespoons honey
4 cloves garlic, (minced)
1 tablespoon whole grain mustard
½ teaspoon dried rosemary
½ teaspoon dried thyme
salt and fresh ground black pepper, (to taste)
2 pound pork tenderloin

Steps:

  • Preheat oven to 400˚F.
  • Place cut potatoes in a 9x13 baking dish.
  • To the potatoes add 2 tablespoons olive oil, and season with rosemary, salt, and pepper; toss to combine.
  • Bake for 35 minutes.
  • In the meantime, prepare the pork tenderloin.
  • In a mixing bowl combine olive oil, honey, garlic, mustard, rosemary, thyme, salt, and pepper; whisk until thoroughly combined.
  • Brush the pork tenderloin with the honey mixture.
  • Place the pork tenderloin over the potatoes and pour any remaining honey mixture over the potatoes and pork.
  • Bake for 22 to 25 minutes, or until potatoes are tender and tenderloin is cooked through. Pork is cooked through when internal temperature registers at 145˚F. Do NOT cook any longer because the pork will be dry.
  • Remove from oven and let stand about 5 minutes before cutting and serving.

⅓ cup red wine
⅓ cup soy sauce
2 tablespoons light brown sugar
2 pounds pork tenderloin
⅓ cup mayonnaise
⅓ cup sour cream
1 ½ tablespoons mustard powder
1 tablespoon minced fresh chives

Steps:

  • Combine wine, soy sauce, and brown sugar in a large resealable plastic bag. Place tenderloin in bag, and refrigerate overnight, or at least 8 hours.
  • In a small bowl, combine mayonnaise, sour cream, mustard powder; mix well. Mix in minced chives if you wish. Chill until ready to serve.
  • Preheat oven to 325 degrees F (165 degrees C). Place meat and marinade in a shallow baking dish, and roast for 1 hour, basting occasionally. Temperature of meat should register 145 degrees F (63 degrees C). Let rest for a few minutes, then cut into 1/2 inch thick slices. Serve with mustard sauce.

Delicate and lean, pork tenderloin is an excellent cut that can be roasted whole or sliced into medallions. This recipe will allow you to prepare the rest of the meal while the tenderloin is roasting in the oven. I like to serve this with sauteed apple slices, sweet potato cakes and haricotes vert with walnuts.

3 lbs pork tenderloin, whole
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
2 tablespoons vegetable oil
2 cloves garlic, minced
2 tablespoons minced shallots
1 tablespoon tomato paste
2 tablespoons whole grain mustard
2 tablespoons honey
2 1/2 tablespoons red wine vinegar
1 1/2 teaspoons thyme, chopped
1/2 teaspoon salt
1 teaspoon black peppercorns, crushed
1 1/3 cups vegetable broth or 1 1/3 cups chicken broth

Steps:

  • Preheat oven to 425*F.
  • Place a rack in a roasting pan, spray with nonstick spray, and place in oven.
  • Remove any excess fat or silverskin from the tenderloin.
  • Season the tenderloin with salt and pepper.
  • Heat the vegetable oil in a large saute pan over medium high heat.
  • Sear the tenderloin until it is golden brown on all sides, about 5 minutes.
  • Remove the tenderloin and place it on the rack in the roasting pan.
  • Roast to the desired doneness.
  • (Pork is safely cooked when it reaches an internal temperature of 160*f) This will take approximately 15 to 20 minutes.
  • while the tenderloin is roasting, return the saute pan to medium heat.
  • Add the garlic and shallots; cook until fragrant, about 1 minute.
  • Add the tomato paste and cook until slightly browned.
  • Add the mustard, honey, vinegar, thyme, salt, pepper and chicken broth.
  • Bring to a boil, then simmer until the mixture reduces to a sauce consistency, about 10 minutes.
  • Keep warm.
  • Remove the tenderloins from the oven and let stand 5 to 10 minutes, before slicing.
  • Carefully skim and discard the fat from the pan juices.
  • Pour the degreased pan juices into the sauce.
  • Bring the sauce to a boil again, reduce the heat and simmer until it is slightly reduced again.
  • Serve the pork sliced with the warm honey-mustard sauce.

We like ours served with mashed sweet potatoes and a pile of sautéed greens, and the leftovers make great sandwiches.

1 1/2 pounds pork tenderloins
3 tablespoons brown sugar
2 tablespoons grainy mustard
2 teaspoons chopped fresh or dried rosemary
2 tablespoons dry sherry

Steps:

  • Pat the tenderloins dry with paper towels.
  • Combine the remaining ingredients in a bowl and stir. Add pork tenderloins and turn to coat well with marinade. Marinate for 15 minutes or as long as overnight.
  • Heat a large cast iron skillet or grill pan over medium-high heat until smoking. (Alternately, heat a charcoal or gas grill to high; bank coals or turn off burner on one side.) Season tenderloins with salt and pepper. Brush pan with olive oil and add tenderloins; reduce heat to medium-low. Cook, turning tenderloins every 3 to 4 minutes, until deeply caramelized on all sides and until desired internal temperature, about 20 to 25 minutes. (You can also broil the tenderloins in the oven - about 10 minutes on one side, then turn and cook about 5 minutes on the other.)
  • Remove and lightly tent with foil; let rest about 10 minutes before cutting into 1/4- to 1/2-inch slices.
