Sauteed Green Beans with Lemon and Blue Cheese image

1 tablespoon butter
1 tablespoon vegetable oil
8 ounces green beans, trimmed
1 tablespoon Worcestershire sauce
1 tablespoon sriracha or other hot sauce
Fresh lemon juice, as needed
2 ounces crumbled blue cheese

Steps:

  • In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

Steps:

  • Combine beans, olive oil, garlic, oregano, thyme, and salt in a microwave-safe dish.
  • Cover and cook in the microwave on high, stirring twice, until beans are tender, 7 to 9 minutes. Stir in blue cheese. Serve immediately.

I was a little hesitant when I first tried this recipe. My sons usually don't care for green beans, and I thought they wouldn't be fond of the blue cheese. To my pleasant surprise, they loved every bite.

4 teaspoons half-and-half cream
1 tablespoon white wine vinegar
1 tablespoon crumbled blue cheese
1-1/2 teaspoons grated Parmesan cheese
1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
Pinch sugar
2 tablespoons olive oil
1 pound fresh green beans, trimmed
4 bacon strips, cooked and crumbled

Steps:

  • Place the first eight ingredients in a blender; cover and process until combined. Gradually add oil in a steady stream, processing until smooth; set aside. , Place the beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain and place in a serving bowl. Drizzle with the blue cheese mixture and sprinkle with bacon.

2 tablespoons extra virgin
olive oil, divided
1 teaspoon sea salt, divided
Freshly ground black pepper
1 large red pepper, cored and seeded
1 Vidalia or other sweet onion, peeled
1/2 cup walnuts
2 to 3 ounces American blue cheese, preferably Rogue River smoked
2 tablespoons chopped chives

Steps:

  • 1. Wash the green beans and dry well. Place in a large bowl and add 1 tablespoon of the olive oil and half of the salt. Season with pepper to taste. Toss to coat well. Spread on a rimmed baking sheet. 2. Cut the red pepper and onion into slices about the same thickness as the green beans. Place in a bowl and add the remaining oil and salt and season with pepper. Toss to coat well. Spread on a second rimmed baking sheet. 3. Heat the oven to 475 degrees. As it heats, toast the walnuts in a small baking dish, 5 to 10 minutes; watch carefully to be sure they don't burn. Cool, then coarsely chop. 4. Roast the vegetables until they're soft and starting to caramelize, 15 to 30 minutes, stirring and turning every 5 minutes to cook evenly without burning. 5. Transfer to a shallow serving dish. Sprinkle with the walnuts. Crumble the blue cheese over and sprinkle with the chives. Serve warm or at room temperature. 1 lb fresh green beans, trimmed
1 tablespoon butter or 1 tablespoon cooking margarine
1/4 cup chopped walnuts
1/4 cup blue cheese, crumbled

Steps:

  • Steam or cook green beans for about 5 minutes, until tender-crisp. Drain and set aside.
  • Melt butter in a medium saucepan over medium heat. Add walnuts and saute for a minute or so, to soften the nuts and flavor the butter.

3 heads garlic, minced
1 tablespoon olive oil
salt and freshly ground pepper to taste
1 pound fresh green beans, trimmed
1 teaspoon butter
⅓ cup sliced almonds
1 tablespoon olive oil
1 pinch cayenne pepper, or more to taste
2 ounces crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
  • Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
  • Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
  • Increase oven temperature to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
  • Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
  • Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7
  • Bake until cheese is melted and beans are fully tender, about 15 minutes.

1/4 cup butter, softened
3 ounces creamy blue cheese, softened, plus a little extra for garnish
1/4 cup shelled walnuts, toasted and chopped, plus extra for garnish
1 teaspoon chopped fresh thyme, plus extra for garnish
1/4 teaspoon fresh ground pepper
1 lb green beans
1 pinch salt

Steps:

  • Mash softened butter & 3 oz blue cheese together in a small bowl using a fork, until well combined. Add 1/4 cup of walnuts, chopped thyme & freshly ground pepper. Stir until well combined. Scrape mixture onto a piece of parchment paper & use the parchment paper to roll & shape into a small log, about 5 to 6 inches (12 - 15cm) long. Place in the fridge for 1 to 2 hours or until hard. You can also pop it into the freezer for quick results.
  • Place beans in large, shallow pan (I use a deep frying pan with a lid). Add about 1 inch (2.5cm) of water with a pinch of salt to pan; cover. Bring to a boil on medium-high heat. Shake pan gently to ensure all beans cook evenly. Cook for about 4 minutes or until beans are tender but still a little firm. Drain water from pan but leave beans in same pan.
  • Cut blue cheese butter log into thick slices & add half to pan. Toss beans until the blue cheese butter slices are melted. Place on serving platter & top with more slices or freeze for another use. Top with extra blue cheese, extra walnuts & extra thyme.

This is a wonderful veggie side dish to serve to guests, it is more like a bean salad, as it is not meant to be served hot, but at room temperature. The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

1/2-1 teaspoon Dijon mustard
2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil
1 1/2 cups sliced almonds, toasted
2 lbs fresh green beans, ends trimmed
1/2-3/4 cup blue cheese, crumbled (or to taste)
salt and black pepper

Steps:

  • In a small bowl whisk together mustard, vinegar, shallot and oil.
  • Prepare a bowl with ice water.
  • In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
