Roasted garlic butter and herbs for garlic bread, chicken, shrimp etc. For the garlic juice, I use the liquid from jarred garlic. For shrimp: add all ingredients to a skillet with 2 lbs of shrimp and sauté until shrimp are pink, optionally add a splash of beer or wine.

Steps:
- Cut off the top of a garlic head. Place on a piece of foil. Sprinkle with 1 Tablespoon oil and salt & pepper, wrap foil around garlic. Bake 1 hour at 350.
- Push roasted cloves out of the garlic into a microwave safe bowl, mash with a fork.
- Add butter to the bowl and microwave until butter softens.
- Add the rest of the ingredients, mix well.

This is great on veggies, potatoes, pasta, rice. Top a grilled steak, fish or chicken. Spread on your favorite bread or dip a breadstick into it. Blend into cream cheese for a garlic spread. The uses are endless.

Steps:
- Cut garlic crosswise in half and spread some oil on cut surface, wrap in foil.
- Roast in 375°F oven about 45-50 minutes.
- Till soft and golden.
- Squeeze the meat out of the skins season with salt and pepper add enough oil to taste while using a fork to smash till smooth and creamy. Mix in rosemary.
- Can be frozen.
- Just bring to room temperature and mix with a fork.
- Use on whatever you like or do like me and use on everything!

ROASTED GARLIC BREAD

- Preheat oven to 350 degrees F.
- Cut top from each head of garlic, exposing the cloves. Place heads of garlic (cut side up), on a piece of heavy duty aluminum foil. Pour olive oil over them, and top with thyme springs. Season with salt and pepper. Wrap the foil tightly. Place in a small ovenproof pan, and bake until the cloves begin to pop out, about 1 hour. Remove from the oven and cool.
- To remove the cloves, open the foil and squeeze the lower part of the head of garlic. In a small bowl, mash the cloves to form a paste. (At this point the paste can be used or stored in the refrigerator or freezer.)
- Add butter and chopped thyme to the bowl, stirring to combine. Season with salt and pepper, to taste.
- Toast both sides of the bread, using a hot grill, grill pan, or broiler. Spread the roasted garlic butter paste onto the toasted bread. Serve immediately.

If you love garlic this is for you. Everyone loves it when I bring it to bbqs,holidays,birthdays ect. My husband and I enjoy this recipe so much. Baking time may vary so make sure to check often. I love to make this with butter but you can use olive oil instead.

- 1. preheat oven to 325.Cut ends off garlic making sure all cloves are exposed.Trying not to cut to far down.
- 2. Rub excess loose paper off bulbs leaving some surrounded around cloves.
- 3. Rub soft butter all over cloves making sure to get butter into all the cracks.
- 4. Set bulbs bottom side down with exposed cloves up in baking dish.
- 5. Cover top in foil and bake on 325 for 1-2 1/2 hours. Check every 1/2 hour and baste butter or olive oil on top to keep from drying.
- 6. When garlic starts to pop out of bulb and becomes a golden brown and soft you know its done.
- 7. Let cool to room temperature. and remove garlic from bulb( the end of a peeler works great) carefully.
- 8. Add all cloves to bowl and mix in soft butter or olive oil which ever you prefer. It will then be a spread you can use on any kind of bread you choose.
- 9. Your house will smell strongly like roasted garlic. For all you garlic lovers you will love this recipe. Everyone I have made this for begs for more. You can refridgerate for a long time but usually its gone b4 you can put it away.

- Note- If using salted butter, lower amount of salt used or omit.
- Preheat oven to 325°F.
- Cut off top third of garlic head without peeling away papery skin.
- Drizzle top of garlic with olive oil until it is saturated.
- Place garlic cut side down in a ovenproof ramekin dish or baking pan.
- Roast for 60-75 minutes, or until soft and tender.
- When slightly cooled, squeeze out roasted garlic cloves and place in a mini-food processor (or may place in a bowl to whisk by hand).
- Add softened cream cheese, butter, salt, and pepper to mini-processor and pulse until creamy and smooth.
- Place in a serving/storage dish and blend in snipped chives (if using).
- Serve softened spread with assorted crackers.

- Trim root end from garlic cloves and remove skin. Place cloves on a large square of aluminum foil. Place thyme sprigs among the garlic, sprinkle with salt and pepper, and drizzle with olive oil. Fold up the sides of the foil to create a packet and place on a baking sheet.

ROASTED GARLIC TOFU SPREAD & DIP (MAYO SUBSTITUTE)
This is a combination of two Recipezaar recipes I love: KittyKitty's Roasted Garlic Mayonnaise (#183875) and Carole Reu's Tofu Mayonnaise (#754). I wanted a non-dairy, lower-fat alternative for the Roasted Garlic Mayo and this is what resulted from modifying and combining the two recipes. To get a creamy mixture and avoid too much liquid, press the tofu (instructions below) and discard the excess liquid before using the tofu. I suggest that, because the desired amount of sweetness seems to vary between people who have sampled it, you mix it without sugar first, try it, and then add in small increments to taste, if desired. I think this makes a good veggie dip, as well as sandwich spread. Though thick for a salad dressing, it's good used that way, too.

- To roast garlic, preheat oven to 350°F Separate garlic cloves, mix with a little olive oil, and seal inside a foil packet. Roast for about 30 minutes, or until garlic feels soft through the foil. Let cool, peel away garlic skins, and discard them.
