CLASSIC SAUSAGE STUFFING

Steps:
- Preheat the oven to 350˚. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat, until no longer pink, 3 to 5 minutes. Add the onions, celery, sage and thyme and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the chicken broth, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then remove from the heat.
- Whisk the eggs and parsley in a large bowl. Add the bread cubes and sausage-broth mixture and toss until evenly combined. Transfer to the prepared baking dish, dot with the remaining 2 tablespoons butter and cover with foil.
- Bake the stuffing until hot, about 30 minutes. Uncover and bake until golden brown, 20 to 30 minutes. Let cool at least 15 minutes before serving.
PORTUGUESE SAUSAGE POPCORN MUFFINS
This muffin is based on a standard popcorn muffin recipe. Just add some Portuguese sausage, onion and rosemary for a muffin that can be served with soup or a salad.

Steps:
- Sift flour, measure, and sift with baking powder, salt, and sugar.
- Add milk, popped corn, egg, and butter.
- Heat chourico in microwave for two minutes.
- Pat heated chourico with a paper towel to absorb grease.
- Add chourico, onion, and rosemary.
- Fill well-oiled muffin tins 2/3 full.
- Bake in hot oven (435 F) 20 minutes.
- Makes 12 muffins.
- Serve warm.

- Preheat oven to 400°. Line 12 muffin cups with paper liners. In a skillet, cook sausage over medium heat 4-5 minutes or until no longer pink, breaking into crumbles. Remove to paper towels to drain., In a small bowl, whisk eggs, seasoned salt and pepper. Pour into same pan; cook and stir over medium heat until eggs are thickened and no liquid egg remains. Remove from heat., In a large bowl, prepare muffin mix according to package directions. Fold in sausage, scrambled eggs and 1/2 cup cheese. Fill prepared cups two-thirds full., Bake 10 minutes. Sprinkle with remaining cheese; bake 5 minutes longer or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan. Serve warm.
