4 large russet potatoes, scrubbed, but not peeled
3 -4 tablespoons olive oil
1 pinch sea salt
fresh ground black pepper
1 dash smoked paprika
1 dash steak spice seasoning

Steps:

  • Heat oven to 425 degrees F.
  • Cut the potatoes into nice thick "handcut fry slices," put in a large bowl and cover with cold water. You can do this in advance if you want - for up to 24 hours. It helps to remove the excess starch.
  • Drain the potatoes and pat dry on paper towel.
  • Arrange in a single layer on a baking sheet. Drizzle with oil, sprinkle with salt, pepper, and paprika.
  • Bake until tender and golden crispy outside, about 40 minutes. When out of the oven, hit them with some dashes of steak spice.

Steps:

  • Preheat oven to 500°F.
  • Cut potatoes lengthwise into 1/3-inch-thick slices, then cut into 1/3-inch-wide sticks. Immediately toss with oil, salt, and pepper in a large bowl, then spread sticks in 1 layer in a large shallow (1-inch-deep) baking pan.
  • Bake in lower third of oven 15 minutes. Loosen potatoes from bottom of pan with a metal spatula, then turn over and spread out again. Bake until crisp and golden brown on edges, about 10 minutes more.

  • Preheat the oven to 425 degrees F.

6 sprigs fresh thyme, or 2 teaspoons dried
Salt and freshly ground pepper

Steps:

  • Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
  • Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.
  • Remove from oven, discard thyme stems (the leaves will have fallen off), sprinkle with salt and pepper, and serve immediately.

  • Preheat oven to 350°F
  • On a large rimmed baking sheet, combine potatoes, onion, bell pepper, rosemary and oil; season with salt and pepper.

1 tablespoon white sugar
¼ cup extra-virgin olive oil

Steps:
