PEANUT BUTTER AND JELLY ROLL-UPS

Steps:
- COMBINE cream cheese and preserves in small bowl until well blended.
- SPREAD tortillas with peanut butter to within 1/2-inch of edges. Top peanut butter with cream cheese mixture, to within 1/2-inch of edges. Carefully roll up tortillas.
- WRAP each rolled tortilla securely in plastic wrap. Refrigerate for several hours or overnight. To serve, remove from refrigerator and unwrap. Slice each tortilla into 4 to 8 angled slices.
CRANBERRY CHUTNEY AND PEANUT BUTTER ROLL-UPS

- COMBINE cream cheese and chutney in a small bowl until well blended.
- SPREAD four tortillas with chutney-cream cheese mixture to within 1/2-inch of the edges of tortillas. Top each tortilla with a second tortilla. Spread top tortilla with peanut butter, to within 1/2-inch of edges. Carefully roll up the layered tortillas. Wrap each securely in plastic wrap. Refrigerate for several hours or overnight.
- REMOVE from refrigerator to serve. Unwrap. Slice each tortilla into 4 to 8 slices. Serve with additional chutney for dipping, if desired.

- Microwave tortillas 10 seconds to soften.
- Spread each with a tablespoon of peanut butter and 2 tsp jam.
- Heat oven to 400°F.
- Place 2-3 apple wedges down the center of each tortilla.
- Roll up tortillas.
- Transfer rolls to baking sheet.
- Brush with melted butter.
- Combine sugar and cinnamon in a small cup.
- Sprinkle half of mixture on top of each roll.
- Bake 10 minutes or until golden brown.
- Let cool 5 minutes before eating.
PEANUT BUTTER AND CUCUMBER ROLL-UPS
A very healthy and tasty alternative to PB&J. Very fresh and crisp - I've been eating peanut butter with savory ingredients all my life and this is one of my favorites. Enjoy as a simple sandwich or slice thin for pin wheels.

Steps:
- Spread peanut butter on the flat bread. Stay to the right side of the bread and spread the peanut butter so it comes to three of the four sides.
- Cut a 4" long piece of the cucumber. Seed and slice the cucumber into 1/4" x 4" sticks. Place cucumber sticks lengthwise from the left side of the flat bread so they will roll up.
- Sprinkle a little salt on the cucumbers.
- Begin rolling from the left side by folding the bread over a couple of cucumber sticks, roll the sandwich tightly to the end and press to seal.
- Turn the sealed side down and let rest for a minute.
- Either cut in half on the diagonal or slice into pin-wheels and enjoy!

Kid friendly. These are really great for a snack or breakfast. One DD loves peanut butter and one can't stand it, hence the name. Recipe can easily be pared down.

- Cut crust from bread.
- Roll to 1/8 in thickness.
- Spread some peanut butter on each slice.
- Combine sugar and cinnamon and sprinkle evenly over each slice.
- Roll up each slice jellyroll style.
- Place seam side down in a lightly greased pan.
- Brush melted butter over rolls.
- Bake at 350 for 7min on each side.

This is from the recipe booklet that came with my dehydrator. Makes awesome fruit roll-ups! The cooking time is the drying time.

- In a blender, mix all ingredients until pureed.
- Pour mixture onto fruit roll sheets made for your dehydrator.
- Dry in a food dehydrator at 135F for 4-8 hours, or until leathery and pliable.
- Remove from sheets while still warm.
- Let cool completely, cut into desired number of pieces and roll in plastic wrap. Store in an airtight container.
