These Individual Strawberry Trifles are decadent, rich and oh so delicious. Sherry soaked sponge, sweet strawberry compote, creamy vanilla custard all topped with a pillow of whipped cream. All served as an individual serving! Who could resist that?

1 small sponge cake
3 tbsp Strawberry jam
2 cups custard
200 g fresh strawberries
Zest of 1/2 lemon
6 tbsp sweet sherry (- see note 1)
2 cups whipping cream
icing sugar (- for dusting)

Steps:

  • Cut the cake in half and use the jam to sandwich the slices together.
  • Use a cookie cutter to cut 4 circles out of the cake and place them into 4 glasses. Cut the remaining cake up and fill the gaps.
  • Spoon a tablespoon and a half of sherry into each glass.
  • Reserve 4 strawberries and then hull the remaining strawberries and cut them into quarters.
  • Divide the cut strawberries amongst the trifles.
  • Sprinkle over the lemon zest over the strawberries.
  • Spoon over the custard.
  • Pour the whipping cream into a bowl and whisk until it forms soft peaks.
  • Spoon this over the custard and garnish with a cut strawberry and a dusting of icing sugar.

Steps:

  • For the marinated strawberries: In a small, shallow casserole dish, toss the strawberries with the vinegar and let stand at room temperature for 15 to 20 minutes. After the strawberries have marinated, check for sweetness, adding sugar if desired.
  • For the whipped cream: In a large bowl, using an electric mixer, whisk the cream to soft peaks. Add the vanilla and confectioners' sugar. Whip to stiff peaks. Set aside.
  • For the trifle: Using a serrated knife, slice the pound cake lengthwise into 1/2-inch-thick slices. You will only need four slices. Using a 2-inch cookie cutter, cut out circles from each cake slice. Line up two highball glasses and place one cake circle in the bottom of each. Brush the cakes with amaretto liqueur. 135g strawberry jelly cubes (I used Hartley's)
2 eggs
60g sugar
60g flour

Steps:

  • Preheat the oven to 180 degrees Celsius. Grease and line the base of a 20 cm round cake tin. Whisk the two eggs and 60g sugar with a handheld whisk until pale and fluffy. Fold in the flour well, being sure to scrape to the bottom. Pour the mixture into the tin and bake for 10-12 mins.
  • Prepare the jelly with the water. Cut out rounds of your sponge and place in the bottom of the trifle dish. Pour over all of the prepared jelly. Leave in the fridge for 6+ hours, preferably overnight. If you are in a rush, freeze for 1 hour then place in the fridge until set.
  • Make the custard. Whisk together the egg yolks and 30g sugar. Heat the milk until almost boiling, then gradually pour over the yolks and sugar. Whisk in 2 tbsp cornflour. Return to the heat and whisk on low for 10 minutes until the custard is thick. Leave to cool for 30 minutes then pour over the jelly sponge. Place in the fridge to chill.
  • Remove the trifle from the fridge when cool. Whip the cream to soft peaks, and spread over the trifle. Decorate with the toppings in a decorative pattern. Chill for 2+ hours before serving with a large spoon.

2 (3 1/2 ounce) boxes instant lemon pudding mix
2 cups milk
1 loaf pound cake
1 cup strawberry
1 cup kiwi
1 cup blueberries
Cool Whip or whipping cream

Steps:

  • You need 6- 8 glass dessert bowls or parfait glasses or you can do one big trifle in a glass bowl.
  • Prepare the pudding according to the instructions on the box (mix with the 2 cups of milk) Cut the pound cake into cubes Slice the strawberries and peel and slice the kiwi (you can use any fruit you like actually) Put a layer of pudding in each bowl, then a layer of cake cubes, layer the fruit (strawberries, kiwi, and blueberries) on top of that and then a final layer of pudding.
  • Refrigerate for several hours.
  • Before serving, garnish each trifle with a dollop of Cool Whip (or whipping cream), strawberry slice and a few blueberries.
