My mother is an excellent cook who rarely follows a recipe exactly. My two sisters and I do the same thing, adding something here, omitting something there. With this soup, I sometimes leave out the bacon and butter, and have used canned corn and creamed corn with good results. 8 bacon strips, cut into 1-inch pieces
1 medium onion, finely chopped
1 cup sliced celery
1/2 cup diced green pepper
3 cups cubed peeled potatoes (about 3 medium)
3 cups chicken broth
4 cups whole milk, divided
4 cups fresh or frozen whole kernel corn, divided
2 cups cubed fully cooked ham
2 tablespoons butter
3 tablespoons minced fresh parsley
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce, optional

Steps:

  • In a large saucepan, cook bacon until crisp. Remove bacon to paper towel to drain, reserving 1/4 cup drippings in pan. Saute the onion, celery and green pepper in drippings for 5 minutes. Add potatoes and broth. Reduce heat; cover and simmer for 10 minutes. , Place 1/2 cup milk and 2 cups corn in a blender; cover and process until pureed. Pour into saucepan. Add ham and remaining corn; simmer for 10 minutes or until vegetables are tender. Stir in the butter, parsley, salt, pepper, pepper sauce if desired and remaining milk; heat through. Garnish with bacon.

4 ears corn on the cob- roasted/grilled
1/2 medium yellow onion- diced
6-8 yukon gold potatoes- cut into 1/2" cubes
1 smoked ham hock
4 slice bacon
1 c mushrooms- rough chopped (optional)
1 tsp minced garlic
1 tsp dried rosemary
1 tsp dried sage
3-4 Tbsp chopped fresh parsely
1 c dry white wine (optional)
32 oz carton of low sodium chicken broth
1 c half and half (may substitute milk or fat free half and half
1-2 Tbsp cornstarch
1-2 Tbsp olive oil, extra virgin
1-2 Tbsp butter or margarine
salt and pepper

Steps:

  • 1. Heat grill to medium high. Husk corn and brush ears with olive oil, sprinkle with salt and pepper. Roast corn directly on grill about 30-40 minutes, turning several times during cooking. Let cool and cut corn from cob. In lieu of roasting corn, you can cut corn from cobs and sauté in a skillet until carmelized. You may also use frozen corn. Thaw corn and pat dry to remove moisture before sautéing. A cast iron skillet with a bit of olive oil works best for carmelizing (this will bring out a sweet, smoky flavor in the corn).
  • 2. Meanwhile, heat a large soup pot on medium high heat, dice and sauté bacon until crisp. Drain bacon on a paper towel. Leave about 1-2 teaspoons of bacon drippings in the pot.
  • 3. Add a tablespoon or so of olive oil and about the same of butter or margarine. Sauté onions until translucent. Add potatoes, mushrooms, garlic, rosemary, sage, and about 1 tsp each of salt and pepper. Stir and cook this mixture to coat vegetables with bacon flavor and seasonings, about 5 minutes.
  • 4. Add wine to deglaze the pot then add chicken broth, ham hock, and diced ham. Bring to a boil, reduce heat and let simmer until potatoes are softened but still firm, about 15-20 minutes.
  • 5. At this point, you can either continue with the recipe or remove from heat and finish up when you are about ready to serve. I think it tastes better if you let it sit for a while to let the flavors come out.
  • 6. To finish up the recipe, remove ham hock, return to medium high heat and add corn. Stir cornstarch into half and half to dissolve and add to pot. Stir frequently until just boiling. Remove from heat and stir in bacon and parsley. Add additional salt or pepper if needed. You can also remove the small amount of meat from the ham hock and add this to the pot.
  • 7. Serve with a warm flaky biscuit or focaccia bread and enjoy!

1 onion, diced
3 red potatoes, quartered, or more to taste
½ cup cubed cooked ham, or to taste
3 cups heavy whipping cream
1 (15 ounce) can creamed corn
1 (12 ounce) package frozen corn kernels
1 cup 2% milk
½ cup water
1 cube chicken bouillon
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground ginger
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir onion until translucent, 5 to 10 minutes. Add potatoes and ham to onion; cook and stir until ham is heated through, about 5 minutes.
  • Mix whipping cream, creamed corn, frozen corn kernels, milk, water, chicken bouillon, garlic powder, onion powder, and ground ginger into onion-potato mixture; cook over medium-high heat until potatoes are softened, 30 to 45 minutes. Season soup with salt and pepper.

2 celery ribs, diced
1/4 cup onion, diced
2 tablespoons margarine or 2 tablespoons butter

2 quarts water, or more if needed
4 cups chicken stock, low-sodium
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
1/4 cup roughly chopped garlic cloves
1 Anaheim pepper, roughly chopped
1 cup roughly chopped cilantro stems
2 shallots, peeled and roughly chopped
3 stalks celery, roughly chopped
2 cups red potatoes, peeled and diced (1/2-inch)
4 tablespoons butter, plus 1 tablespoon
1 sweet onion, diced
1 Anaheim pepper, small dice
1/4 cup diced poblano peppers
1 tablespoon minced garlic
3/4 cup diced bacon
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1/2 cup heavy cream
1/2 cup freshly minced cilantro leaves
Chipotle Cream, recipe follows
Spicy Saltines, recipes follows
1/2 cup heavy cream
2 teaspoons chipotle paste
Salt and freshly ground black pepper
1 lime, zested, plus 1/2 lime, juiced
1/4 cup fresh cilantro leaves, minced
1 stick butter, room temperature
1 tablespoon granulated garlic
1/4 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon fine grain sea salt
1/8 teaspoon ancho chili powder
1/8 teaspoon hot paprika
1/8 teaspoon white pepper
1 sleeve saltine crackers, unsalted (about 30)

Steps:

  • Preheat the grill to medium-high heat. Put the corn on the grill and cook for 5 to 6 minutes, turning as needed to evenly brown. Remove the corn from the grill and when cool enough to handle, then put corn, stem down in a large bowl and with a sharp knife, remove the kernels, set aside.
  • Put the corn cobs into a large stock pot, add the water, chicken stock, salt, pepper, garlic, peppers, cilantro stems, shallots and celery. Put the pot over high heat and bring it to a strong boil. Cook for 45 minutes, then strain the solids. Cool.
  • In a medium saucepan, cover the diced potatoes with 3 cups of the cooled stock and bring to a boil over medium heat. Cook until fork tender, about 15 minutes. then remove from heat and set aside.
  • In a large stock pot over medium-high heat, add the 4 tablespoons of butter, and once melted, add the diced onions, half of the corn kernels and the peppers. Saute until a golden fond starts to form on bottom of pan, about 6 to 8 minutes. Add the garlic and cook for 1 minute more, stirring frequently. Stir in 3 cups of the stock and simmer for 30 minutes. Cool the mixture for about 5 minutes, then carefully add it to a blender and puree.
  • Wipe the stock pot clean, put it over medium-high heat and add the bacon. Cook until crisp, then drain on a paper towel lined plate. Add the remaining 1 tablespoon of butter to the bacon fat, along with the remaining corn. Season with the salt and pepper and saute for 4 to 5 minutes. Add the stock and potatoes and combine well. Stir in the heavy cream, add the corn puree mixture. Heat through and adjust seasoning, if necessary.
  • Serve garnished with the cilantro and a dollop of the Chipotle Cream and Spicy Saltines.
  • In a small glass bowl, add the cream and beat with an electric mixer until stiff, about 3 to 4 minutes. Add the chipotle, salt and pepper, to taste, zest and lime juice beat until incorporated. Add the cilantro and season with salt, if necessary. Refrigerate covered until ready to use.
  • Preheat the oven to 300 degrees F. Fit a baking sheet with a rack.
  • Combine all of the spices in a small bowl and mix well. In a separate small bowl, beat the butter with an electric mixer until fluffy. Add the spices and beat until incorporated.
  • Spread about 1/2 teaspoon of the mixture gently onto each cracker and set them on the rack in the baking sheet. Once all are done, bake for 5 minutes. Remove and cool. Store in an air tight container.

Roasted fresh corn and potato chowder is hard to beat on a chilly day! For a twist, add just a few ounces of smoked salmon and have an incredible British Columbia-inspired smoked salmon corn chowder. Had this in a little cafe on a dock in Vancouver, BC while waiting for a sea plane to take me to the outer west coast of Vancouver Island for a late season salmon fishing trip. I spent several years playing around with it to recreate it. Don't know if I matched theirs exactly, but I have come up with this basic roasted corn chowder recipe that turns into a great smoked salmon chowder, too.

3 tablespoons butter, divided
3 cups fresh white corn kernels
1 teaspoon dried tarragon
1 pound bacon
1 large onion, chopped
3 cups chicken stock, or as needed
6 potatoes, diced
¼ cup chopped fresh flat-leaf parsley
4 cloves garlic, chopped
1 teaspoon dried celery flakes
½ teaspoon paprika
½ cup half-and-half
salt and ground black pepper to taste
¼ cup shredded Cheddar cheese, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt 1 tablespoon butter in an oven-proof skillet over medium heat; stir in corn and tarragon and cook, stirring occasionally, until corn begins to brown, about 5 minutes.
  • Place skillet with corn in the preheated oven; roast, stirring every 5 minutes, until lightly browned but not dry, about 20 minutes.
  • Place bacon in a Dutch oven over medium-high heat; cook, turning occasionally, until evenly browned, about 10 minutes. Remove bacon slices; drain on paper towels. Pour off all but 1 tablespoon bacon fat.
  • Heat reserved bacon fat in Dutch oven over medium heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue to cook and stir until the onion is very tender and dark brown, about 15 minutes.
  • Pour chicken stock over caramelized onions; stir, scraping the bottom of the pot to dissolve any browned bits, and bring to a boil. Stir corn, potatoes, parsley, garlic, celery, and paprika into onion mixture. Crumble bacon, reserving about 1/4 cup for garnish, and stir bacon into soup. Reduce heat to low; simmer until potatoes are tender, about 30 minutes.
  • Stir remaining 2 tablespoons butter and half-and-half into soup; season with salt and pepper. Sprinkle reserved bacon and Cheddar cheese over soup to serve.

9 cups low sodium chicken broth
1 1/2 teaspoons garlic, bottled minced
2 russet potatoes, peeled, diced

1 tablespoon dried basil
2 (15 ounce) cans diced tomatoes
2 cups fat free coffee creamer
