KEVIN'S MOM'S PANCAKES
When my old roommate made these, we almost used to fight over who got the last one. They are light, fluffy and dead easy! Naturally, the cooking time varies, depending on the size of your pan or griddle.

Steps:
- In bowl, whisk together all dry ingredients.
- In separate bowl, stir together all wet ingredients.
- Make a well in centre of dry ingredients.
- Dump wet ingredients into the well and stir together until just combined.
- A few small lumps in the batter are okay.
- Heat a nonstick pan over low-medium heat.
- Pour batter in 1/4 cup measures.
- Fry about 2 1/2 minutes, until edges are dry and bubbles are just starting to form.
- Flip and fry other side about 2 minutes.

DAD'S SATURDAY MORNING PANCAKES
My dad used to make these every Saturday morning. He likes his pancakes large, but you can cook dollar-size pancakes if you want. Or spoon onto the griddle in the form of your young diner's initial. You can also try adding blueberries, bananas, or chocolate chips to the batter. From a Better Homes and Gardens cookbook, with the addition of my dad's not-so-secret ingredient (vanilla).

Steps:
- Combine flour, sugar, baking powder, and salt in a mixing bowl.
- Beat the eggs in a smaller mixing bowl. Add milk, eggs, oil, and vanilla.
- Pour the liquid mixture into the dry mixture, and stir to combine.
- Spoon about 1/2 cup onto a hot, greased griddle and cook until the underside is brown.
- Flip and cook until the other side is brown as well.
- Serve with maple syrup.

Steps:
- Mix dry ingredients in large bowl, make a well in centre.
- Beat egg in measuring cup add milk, pour in well in centre of bowl.
- Mix all ingredients together with whisk.
- Heat half a teaspoon oil in frying pan, make sure oil is hot, pour a ladle full of batter into pan.
- Fry over med. heat flip when edges are dry and bubbles are coming through top, once flipped press cooked side so the batter squishes out, flip once more.
- Check the middle to make sure its cooked through.
- Repeat steps 4-6 until all batter is gone.
- Serve hot with syrup.
SATURDAY MORNING PANCAKES
Our family has pancakes every Saturday morning and this is the recipe that I've been using for years. My son likes it so much, he doesn't even use syrup. The rest of my family only uses real maple syrup.

Steps:
- Preheat to medium heat a large non-stick griddle. We use a double burner griddle.
- In a large mixing bowl, mix together the dry ingredients.
- In another bowl, beat the egg and then mix together the remaining moist ingredients.
- Dump the wet ingredient mixture to the dry mixture.
- Stir until everything is just blended. You will still have some lumps. (O.K. to break up any very large lumps).
- Put a very light coat of oil onto the pan. I do this by putting a small amount of oil onto the pan and spread out using part of a paper towel and a spatula.
- Put about 1/6 of the batter onto the hot skillet (I can cook 3 at a time). Cook until the edges appear dry and top of pancake bubbly. The bottom should be golden brown before turning.
- Turn and cook until golden on the other side.
- Serve with real maple syrup and butter.
- Makes 6 large pancakes.
