Steps:
- Bring water, salt, and butter to a boil.
- Stir in rice with a fork.
- Bring back to a boil, then cut heat to simmer.
- Cover (do not take off lid to check on rice, or stir, you may get gummy rice, if you do!) and cook for 15 minutes.
RAINBOW TROUT WITH JASMINE RICE AND CITRUS VINAIGRETTE
Steps:
- Season trout fillets lightly with salt and pepper on both meat and skin sides. Lightly dust fillets with flour and shake off excess. In a non-stick skillet large enough to hold all 4 fish, heat the oil and butter over high heat until almost smoking. (You may need to work in batches or use 2 skillets if you don't have one that is large enough). Carefully place the trout, meat side down, in the skillet and saute for about 2 minutes or until golden brown. Carefully turn the fish over with tongs and finish cooking on the skin side, about 2 more minutes. With tongs, remove the trout from the skillet and serve immediately with the rice and vinaigrette.
- Combine all ingredients in a large saucepan. Add enough salt and pepper to make the water taste slightly salty. Cover and bring to a boil. When the water level drops below the rice, reduce heat to maintain a simmer. Simmer for about 8 minutes and turn off the heat. Leave covered and let stand for about 5 minutes. Fluff rice with a fork and serve hot with the trout.
- Add vinegar, citrus juice, shallots, and mustard to a blender. Blend for 30 seconds. Slowly add oil while machine is running until emulsified; the vinaigrette should be thick. Season with salt and pepper, to taste. Add more citrus juice, to taste, if desired. Drizzle over trout. Toss with steamed fresh seasonal vegetables, if desired.
JASMINE RICE
A side dish of jasmine rice can complete any meal and is simple to prepare. Try it with Spicy Thai Chicken for a wonderful Dinner Tonight.

- In a small saucepan, heat oil over medium-high heat. Add lemongrass, shallot, and garlic; cook, stirring, until fragrant and translucent, about 1 minute.
- Add rice and mix to coat with oil; cook until slightly toasted, about 1 minute. Add 1 cup water, stock, and salt; stir to combine. Cover and cook until liquid is absorbed and rice is cooked through, about 15 minutes.
- Remove from heat and let stand, covered, 5 to 10 minutes. Fluff with a fork and garnish with scallions; serve immediately.

Steps:
- Rinse the rice well several times until the water runs clean; drain thoroughly.
- Bring water to a boil in a lidded saucepan; stir in rice, bouillon, salt, orange and lemon zest, and the optional smashed garlic clove.
- Cover, reduce heat and simmer for about 20 minutes or until water has been absorbed. Do not stir during the cooking process to prevent gumming.
- Remove from heat, add optional green onions and fluff with fork.

JASMINE RICE
Steps:
- Rinse and drain rice in cold water to remove starch and impurities. Place drained rice and the cold water in a heavy saucepan. Bring the water to a rolling boil, uncovered, over high heat.
- Stir, reduce the heat to low, cover the pan tightly, and cook for 20 minutes. Remove the covered pan from the heat and let stand 10 minutes without removing the lid.
- Remove the lid and fluff the rice gently with a fork or rice paddle. Serve warm.
GREEN JASMINE RICE
I got the recipe from Canadian Living and it is a really nice rice with a subtle flavour. If you want more flavour you could add green salsa or hot peppers. The rice is meant to be served as a side to those dishes you don't want to have overpowered by the side. Quick and simple.

- Place jasmine rice in an ovenproof small pot; wash with cold water and drain off the water.
- Add clean cold water into the pot to the depth of the second line of your middle finger while touching the surface of the rice.
- Preheat oven to 375°F
- Bring rice and water to a boil; when the water starts to boil, remove from heat and cover the pot.
- Place into the oven and bake for 18 minutes.
- Remove from oven and serve immediately.

PERFECT JASMINE RICE
Steps:
- Put the rice in a medium bowl and fill with cold water. Gently agitate the rice to loosen any dust and sediment clinging to the rice and drain through a fine mesh sieve. Repeat 2 more times.
- Transfer the rice to a medium saucepan and shake the pan to level the rice. Add enough water so that when you place the tip of your index finger on the top of the rice, the water comes up to the first crease (joint) of your finger. Cover the pot with a tight-fitting lid and place over high heat. As soon as the rice comes to a boil, reduce the heat to low and cook for 20 minutes. Transfer the rice to a large bowl and fluff with a heatproof spatula.
