I have seen a couple of recipes for taco soup, but this is different. I received it from my ww leader. It is very much like a chili and is so easy. My family loves it and I love it topped with 1 tbsp low fat sour cream.

1 lb extra lean ground beef or 1 lb turkey
1 large onion, diced
2 (15 ounce) cans chili beans
1 (15 ounce) can zesty beans (I use S&W chili beans in a zesty sauce)
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, undrained
1 (15 ounce) can tomato sauce
1 1/2 cups water
1 (4 1/2 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) envelope ranch dressing mix

Steps:

  • Brown meat and onion, drain and add remaining ingredients. Bring to a boil then reduce heat and simmer 30 minutes. 2 points per cup!

1 tablespoon olive oil
1 bunch scallions, white and green parts separated, chopped
1 pound ground beef chuck
One 1-ounce packet taco seasoning
One 1-ounce packet ranch dressing seasoning
Two 10-ounce cans diced tomatoes with green chiles
Three 15-ounce cans beans, drained and rinsed (a mix of pinto beans, black beans and kidney beans)
One 10-ounce can whole corn kernels, drained
Kosher salt
Shredded Cheddar, for serving
Sour cream, for serving
Pico de gallo, for serving

Steps:

  • Heat the oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the scallion whites and cook, stirring occasionally, until fragrant and soft, about 2 minutes. Add the beef and cook, stirring to break it up into small crumbles, until cooked through, 8 to 10 minutes. Stir in the taco and ranch seasonings until well combined.
  • Add the tomatoes, beans, corn and 1 teaspoon salt. Fill one of the bean cans with water and add it to the pot. Bring to a boil, then reduce the heat to medium and simmer, stirring occasionally, until the beans are warmed through, about 10 minutes.
  • Serve in bowls with scallion greens, Cheddar, sour cream and pico de gallo.

A very satisfying meal; also a great choice for those on a diet. One cup is equal to two Weight Watchers points. If the diet isn't too much of a concern, try topping this with some shredded cheddar and a dollop of sour cream or even enjoy it with some Tostitos Scoops. Yummy and guilt free!

1 lb ground beef
1 small onion
1 (16 ounce) can black beans
1 (16 ounce) can pinto beans
1 (16 ounce) can chili beans (mild or hot)
1 (16 ounce) can whole kernel corn
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) package hidden valley ranch dressing mix
1 (14 ounce) can diced tomatoes with sweet onions
1 (14 ounce) can diced tomatoes with mild green chilies

Steps:

  • Chop onion, combine with ground beef. Brown and drain the ground beef.
  • Dump all of the cans, undrained into a 3 quart pan along with the taco and dressing packets and ground beef and onion. Stir to combine and heat on medium heat until a low boil has been achieved.
  • At this point, it is ready to serve. Additionally, you may let the mixture simmer until reduced and you may enjoy this dish as more of a chili instead of a soup.
  • For a real dump and go, this is a real hit with our family. Enjoy!

This is a slightly different version of Taco Soup for Weight Watchers. It has no meat so it is actually a vegetable soup. We served it for my mother in law and paired it with a salad and some rolls for the rest of the family. It was yummy. One caution it is spicy for some so if you don't like it spicy get the corn without the chilies. We used Lawry's taco seasoning and Hidden Valley Ranch ranch packet for the best flavor. We have no ties to them but love their products for this. It is warm and makes a lot of soup. We served 4 adults and two kids. Got this on a internet site awhile back. It is yummy but remember to JUDGE IT AS A WEIGHT WATCHER recipe because if you went hog wild with ingredients with more fat and calories it could be even better. Enjoy ChefDLH. 1 medium onion, diced
3 cloves garlic, minced
2 pounds ground beef
Kosher salt and freshly ground black pepper
2 heaping tablespoons tomato paste
1 heaping tablespoon taco seasoning
One 15-ounce can black beans, undrained
One 15-ounce can fire-roasted corn, undrained
One 15-ounce can tomatoes with green chiles
2 cups vegetable stock
Hot sauce, to taste
1 cup shredded Cheddar
1 cup sour cream
1/4 cup fresh cilantro leaves
Yellow corn chips

Steps:

  • Heat the olive oil in a large Dutch oven over medium heat. When the oil is hot, add the onion and garlic and cook until they have started to soften, about 1 minute. Add the beef and sprinkle with a pinch of salt and pepper. Cook the beef, breaking it up with a spatula, until it is cooked through and browned, about 8 minutes. Add the tomato paste and taco seasoning, then stir to combine.
  • Stir in the black beans, corn, tomatoes with green chiles and vegetable stock. Add a few dashes of hot sauce, then stir well and bring to a simmer. Simmer to allow the flavors to come together and the liquid to slightly thicken, 10 to 15 minutes. Taste and adjust the seasoning as needed.
  • Serve in bowls, garnished with the Cheddar, sour cream, cilantro and more hot sauce to taste. Crumble over the corn chips.

This is an easy soup that is very, very low in calories and low in fat. I am following weight watchers and this soup is zero points (I think). You can add any veggies you want. I have made several variations of this. Basically, whatever I have on hand.

1 (28 ounce) can tomatoes (preferably diced)

1 cup frozen green beans

Steps:

  • Saute celery and onion using cooking spray.
  • Add tomatoes, soups and water.
  • Add taco mix and garlic.
  • Let simmer partially covered for about 1 hour.
  • Add the green beans and simmer another 15 minutes.
  • Top with parmesan, or low-fat cheese then put a dollop of fat-free sour cream on top.
