Frankly if you served a shoe over polenta I would be happy. But this salmon is so much better.

1 ½ cups chicken broth
2 ½ cups whole milk
1 cup cornmeal or polenta
Kosher salt and freshly ground pepper (to taste)
3 tablespoons olive oil (divided)
4 6- to 8-ounce salmon filets (with skin if desired)
1 shallot (chopped)
1 pint multi-colored cherry tomatoes (halved)
1 tablespoon chopped fresh oregano leaves
1 tablespoon sherry or red wine vinegar
¼ cup freshly grated Parmesan cheese
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 450°F. In a heavy Dutch oven or large (4-quart) saucepan bring the broth and milk to a simmer over medium-high heat.
  • Reduce the heat, sprinkle in the polenta, whisking all the while, and keep adjusting the heat so that the mixture stays at a gentle simmer. Season with salt and pepper. Continue to simmer and whisk semi-frequently until the mixture has thickened and become creamy, about 20 minutes.
  • While the polenta is cooking, heat 2 tablespoons of the oil in a large skillet, preferably nonstick, over medium heat. Add the shallot and sauté for 2 minutes, then add the tomatoes and oregano and sauté for another 4 minutes or so, until the tomatoes have collapsed slightly. Transfer the tomatoes to a bowl, stir in the vinegar, and tent with foil to keep warm.
  • Return the pan to medium high heat and heat the remaining tablespoon of oil. Season the salmon with salt and pepper. Place the salmon skin side down (if applicable) in the hot pan and sear for 4 minutes. Transfer the pan to the oven and roast the fish for about 5 minutes, until cooked to your liking.
  • Meanwhile, when the polenta has finished cooking, remove it from the heat and whisk in the Parmesan and the butter. Taste and add pepper and additional salt, if needed. Divide the polenta among 4 plates. Use a metal spatula to transfer the salmon filets on top of the polenta, and spoon over some of the tomato vinaigrette. Serve hot.

Good olive oil
1 cup chopped sweet onion, such as Vidalia
2 teaspoons minced garlic (2 cloves)
2 cups (1 pint) cherry or grape tomatoes, halved through the stem
Kosher salt and freshly ground black pepper
1 1/2 tablespoons good balsamic vinegar
1 1/2 tablespoons julienned fresh basil leaves
1 (2-pound) salmon fillet, cut crosswise into 4 pieces

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat 3 tablespoons of the olive oil in a medium (10-inch) saute pan. Add the onion and saute over medium-low heat for 5 minutes, stirring occasionally, until very tender but not browned. Add the garlic and saute for 1 more minute. Stir in the tomatoes, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, stirring occasionally, until the liquid evaporates and the tomato sauce thickens slightly. Off the heat, stir in the vinegar and basil.
  • Meanwhile, place a large (12-inch) cast-iron pan over high heat for 5 minutes. Brush the salmon all over with olive oil, sprinkle liberally with salt and pepper, and place it skin side up in the pan. Cook the fish for 3 to 4 minutes without moving them, until browned. Turn the salmon skin side down with a small metal spatula and transfer the pan to the oven for 8 minutes. (The salmon will not be completely cooked through.) Remove the fish to a serving platter, cover with aluminum foil, and allow to rest for 5 minutes.
  • Reheat the tomatoes, season to taste, and serve hot, warm, or at room temperature along with the salmon.

3 cups grape tomatoes
2 tablespoons extra-virgin olive oil, plus more for the grill
3 cloves garlic, finely grated
Kosher salt and freshly ground pepper
1/2 teaspoon chopped fresh thyme, plus 3 sprigs
1/4 cup dry white wine
1 17- to 18-ounce tube polenta, cut into 12 rounds
4 6-ounce skin-on center-cut salmon fillets, preferably wild
1 tablespoon chopped fresh chives

Steps:

  • Preheat a grill to medium high. Toss the tomatoes with 1 tablespoon olive oil, the garlic, 3/4 teaspoon salt and a few grinds of pepper on a large piece of foil. Add the thyme sprigs and bring up the edges of the foil slightly. Pour in the wine and fold the edges together to form a packet; set aside.
  • Brush both sides of the polenta rounds with the remaining 1 tablespoon olive oil; season with salt and pepper. Season the salmon with the chopped thyme, salt and pepper.
  • Oil the grill grates. Grill the foil packet until the tomatoes are soft, 10 to 12 minutes. Meanwhile, grill the polenta and the salmon skin-side down, 3 to 4 minutes; flip and grill until well marked and the salmon is just cooked through, 3 to 4 more minutes.
  • Divide the salmon and polenta among plates. Spoon the tomatoes and juices over the top. Sprinkle with the chives.

1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
1/2 cup pitted nicoise olives
1/4 teaspoon chile de arbol powder or cayenne pepper
2 cloves garlic, chopped
1 tablespoon dijon mustard
1 tablespoon honey
Kosher salt and freshly ground black pepper
4 6-ounce salmon fillets

Steps:

  • Combine the olive oil, vinegar, olives, chile de arbol powder, garlic, mustard and honey in a blender until smooth. Season with salt and black pepper.
  • Place the salmon in a small baking dish; pour 1/2 cup of the olive vinaigrette on top and marinate 15 minutes. Preheat a grill to high or place a grill pan over high heat.
  • Remove the salmon from the marinade; season with salt and black pepper. Grill 3 to 4 minutes per side, brushing with the remaining vinaigrette every 2 minutes.

2 celery ribs, chopped
1 medium onion, chopped
2 tablespoons olive oil, divided
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1/4 cup minced fresh parsley
1-1/2 teaspoons salt, divided
1 teaspoon Italian seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon pepper
6 cups water
2 cups cornmeal
1/4 cup all-purpose flour
6 salmon fillets (6 ounces each)

Steps:

  • In a Dutch oven, saute celery and onion in 1 tablespoon oil until tender. Add the tomatoes, tomato sauce, parsley, 1/2 teaspoon salt, Italian seasoning, thyme, basil and pepper. Cover and simmer for 1 hour, stirring occasionally., In a large heavy saucepan, bring water and remaining salt to a boil. Reduce heat to a gentle boil; slowly whisk in cornmeal. Cook and stir with a wooden spoon for 15-20 minutes or until polenta is thickened and pulls away cleanly from the sides of the pan., Place flour in a large shallow bowl; coat salmon on both sides. 2 cups milk
1 cup polenta
2 tablespoons lemon zest
2 tablespoons grated Parmesan
1 bunch fresh lemon thyme, picked
Olive oil, as needed
2 pounds wild Pacific king salmon
10 to 12 yellow pattypan squash, quartered
1 large green zucchini, diced
1 tablespoon minced shallots
1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 shallot, minced
1/2 teaspoon fresh minced thyme
2 teaspoons sherry vinegar
1/4 cup demi-glace
1 tablespoon tomato concasse* (See Cook's Note)

Steps:

  • For the polenta cake:
  • Bring water and milk to a boil. Whisk in polenta, turn down heat to low and stir often with wooden spoon, cooking until polenta is soft, approximately 20 minutes. Look for polenta to firm up and start coming away from the sides of the saucepan. When desired texture is reached, remove saucepan from heat and fold in lemon zest, Parmesan, and thyme. On a cookie sheet evenly spread out polenta mixture to 3/4-inch thickness and place in refrigerator to cool. Remove polenta from the refrigerator and cut out cakes of about 4-inch circumference.** (See Cook's Note)
  • For the salmon:
  • Place small amount of oil in a large cast iron or heavy-bottomed pan on high heat. Sear both sides of salmon being careful not to cook beyond medium for best results.
  • For the vegetables:
  • Saute pattypan squash and zucchini in saute pan with shallots and extra-virgin olive oil. Do not overcook, leaving a nice crunch to the vegetable For the sauce: Make the sauce by browning butter over medium heat until light brown. Add shallots, thyme, sherry vinegar and reduce by a quarter. Add demi-glace and bring to a quick boil. Remove and finish with tomato concasse.
  • To finish:
  • Sear both sides of the polenta cakes over medium heat, allowing them to warm through, as well as, achieve a golden crust. Serve with vegetables and salmon pouring the sauce over the salmon.

4 cups vegetable broth
1 cup crumbled feta
2/3 cup freshly shredded parmesan cheese
2/3 cup chopped sun-dried tomato
1/3 cup sliced kalamata olive
1/2 cup sliced fresh basil

1/2 cup flour

Steps:

  • boil the vegetable broth; once boiling, stir in the polenta - let it simmer on low heat while stirring frequently for 15 minutes.
  • Remove from the heating element; stir in the crumbled feta, shredded parmesan, chopped sundried tomatoes, chopped up basil, and sliced olives.
  • once stirred in evenly, put the mixture in a GREASED cake pan (or any circular or square shaped container of similar diameter) and spread/press down evenly.

2 tablespoons finely chopped fresh parsley
2 -3 garlic cloves, very finely chopped
100 g polenta or 100 g fine semolina
1 -2 large egg
4 tablespoons olive oil

225 g tomatoes, skinned, de-seeded and chopped small
75 g pitted black olives, chopped small
1 garlic clove, crushed
1 teaspoon whole grain mustard
1 tablespoon balsamic vinegar

Steps:

  • To make the vinaigrette, in a bowl add the crushed garlic, mustard, vinegar, lemon juice, olive oil and a good seasoning of salt and black pepper, and whisk thoroughly.
  • Half an hour before serving, add the tomatoes, olives and chopped parsley.
  • For the crust, just combine chopped parsley, garlic and polenta or semolina on a plate, season with salt and pepper and give it a good mix.
  • Beat the eggs in a shallow dish.
  • Wipe dry the the salmon fillets with kitchen paper.
  • Dip the fillets first in the egg and then coat them with the polenta mixture, pressing it on well.
  • In a very large frying pan, heat the oil over a high heat.
  • When hot add the fish, then turn the heat down to medium and cook the fish for about 3-4 minutes on each side, depending on the thickness of the fish fillets.
  • Drain on absorbent kitchen paper.
  • To serve, spoon a small portion of vinaigrette onto a plate and place the fillet on top and serve the rest of the vinaigrette separately.
