Roasted Beets with Goat Cheese image

These roasted beets with goat cheese are heaven! Earthy, tender beets paired with creamy goat cheese and topped with fresh chives? Perfection.

4 beets (you can roast up to 8 beets at a time; use 4 for serving)
Olive oil
Kosher salt
2 ounces soft goat cheese (optional)
Thinly sliced chives, for garnish

Steps:

  • Preheat the oven to 425 degrees Fahrenheit.*
  • Wash the beets. Trim off all but about 1 inch of the beet greens (you can save them for later and use them in salads). Leaving on the stem helps keep the beets from "bleeding" out red juice in the oven.
  • Rub the beets lightly with olive oil. Place the beets in a covered oven proof dish. (You also can wrap each beet individually in aluminum foil and place them on the oven grates).
  • Roast the beets for 45 minutes to 1 1/2 hours, depending on the size and freshness, until tender when pierced with a fork. Check every 10 minutes until tender; we've found medium sized beets take about 1 hour.
  • Allow them to cool for a few minutes. Then place them under cool water and rub off the skins with your fingers. You can serve immediately, or refrigerate the whole beets until serving and serve them cold.
  • To serve, slice the beets into rounds and arrange them on a plate. Drizzle the top with olive oil and sprinkle with 1 pinch kosher salt. Top with goat cheese dollops and thinly sliced chives.

I enjoyed this beet treat at my son's. Come taste it. This adaptation comes from Weber's Charcoal Grilling. If you use red beets, red wine vinegar vinegar is fine. The original recipe specifies golden beets but I cannot buy golden beets in northern Wisconsin so used red. The beet mixture and goat cheese mixture could be made ahead and then refrigerated. And if you cannot buy fresh beets, you could work with canned it seems.

3 medium beets, about 6 ounces each
2 tablespoons olive oil, divided
2 green onions, thinly sliced
2 teaspoons white wine vinegar
1 teaspoon fresh thyme, finely chopped
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
4 ounces goat cheese
2 tablespoons water
12 slices Italian bread, each about 1/3 inch thick
1 large garlic clove

Steps:

  • Preheat your oven to 400 degrees.
  • Rub dirt off beets with paper towel, and put beets in tightly sealed casserole, and bake for 60 to 90 minutes until tender.
  • Cool beets, peel them, cut off stem and roots, and cut into small cubes (about 1/4 inch).
  • Put beets into medium bowl, add 1 tablespoon of olive oil, green onion, vinegar, thyme, salt, and black pepper.
  • In a small bowl, mix together goat cheese and water.
  • Preheat broiler.
  • Put bread onto a cookie sheet, lightly brush more olive oil onto fronts and backs of bread, and toast both sides under your broiler.
  • Cut open your garlic clove and smear some garlic onto one side of bread.
  • Spread goat cheese onto the garlic side, top with beet mixture, and serve at room temperature.

3 medium fresh golden beets (about 1 pound)
3 medium fresh beets (about 1 pound)
2 tablespoons lime juice
2 tablespoons orange juice
1/2 teaspoon fine sea salt
1 tablespoon minced fresh parsley
1 tablespoon minced fresh sage
1 garlic clove, minced
1 teaspoon grated orange zest
3 tablespoons crumbled goat cheese
2 tablespoons sunflower kernels

Steps:

  • Preheat oven to 400°. Scrub beets and trim tops by 1 in. Place beets on a double thickness of heavy-duty foil (about 24x12 in.). Fold foil around beets, sealing tightly. Place on a baking sheet. Roast until tender, 55-65 minutes. Open foil carefully to allow steam to escape., When cool enough to handle, peel, halve and slice beets; place in a serving bowl. Add lime juice, orange juice and salt; toss to coat. Combine parsley, sage, garlic and orange zest; sprinkle over beets. Top with goat cheese and sunflower kernels. Serve warm or chilled.

4 medium (1 pound) unpeeled beets, scrubbed
1 tablespoon olive oil
1 1/2 cups softened goat cheese
2 tablespoons chopped fresh tarragon, blanched in boiling water for 10 seconds, drained and rinsed under cold water
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
1 teaspoon chopped fresh thyme
Fine sea salt and freshly ground black pepper, to taste
3 cups mesclun greens
Walnut Dressing, as needed
1 small beet, scrubbed and cut into julienne, for garnish
1/2 cup walnut halves, lightly toasted, for garnish (see Note)

Steps:

  • Preheat the oven to 350 degrees F. Place the beets on a jelly roll pan, toss with the oil, and cover tightly with aluminum foil. Bake until the beets are tender when pierced with a sharp knife, about 2 hours. Refrigerate until chilled. Peel the beets and slice into 1/16th-inch rounds. On 6 dinner plates, arrange overlapping beet slices in a wide circle. Cover tightly with plastic wrap and refrigerate until ready to serve.
  • In a small bowl, mix the goat cheese, blanched tarragon, parsley, chives, and thyme. Cover with plastic wrap and refrigerate until ready to serve.
  • To serve, uncover the plates and season the beets with salt and pepper. In a large bowl, toss the mesclun greens with the walnut vinaigrette to taste. Place the greens in the center each plate. Top with equal portions of the goat cheese. Garnish with the julienned beet and walnut halves. Drizzle and few spoonfuls of walnut vinaigrette around the inside of each plate, and serve immediately

½ cup chopped walnuts
1 large beet, top and bottom trimmed and beet greens retained
1 tablespoon walnut oil, or more to taste
2 ounces soft goat cheese
kosher salt and freshly ground black pepper to taste
2 tablespoons champagne vinegar
1 cup reserved beet greens, cut into very thin slivers
2 teaspoons chopped fresh chives

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Spread walnuts onto a baking sheet and toast in the preheated oven until the nuts turn golden brown and become fragrant, about 45 minutes. Watch the nuts carefully because they burn quickly. Set walnuts aside to cool to room temperature.
  • Turn oven up to 375 degrees F (190 degrees C). Crinkle up a piece of aluminum foil and place it into an oven-safe dish (such as a pie dish) to act as a disposable rack. Place beet onto foil.
  • Bake in the preheated oven until the beet just starts to turn tender, about 45 minutes. Wrap beet in aluminum foil and let cool to room temperature.
  • Turn oven temperature up to 400 degrees F (205 degrees C).
  • Peel beet with a sharp paring knife; peel skin from beet. Cut beet in half and cut halves into thick half-moon-shaped slices.
  • Drizzle walnut oil in a baking dish and brush oil over the bottom of the dish; arrange beet slices in the dish in a single layer. Crumble goat cheese into the empty spaces and over beets. Sprinkle with kosher salt and black pepper.
  • Bake beet and cheese in oven until beet pieces are sizzling and the edges of the cheese are slightly browned, about 15 minutes. Cool slightly, about 10 minutes.
  • Drizzle warm beet and cheese with vinegar and top with roasted walnuts, beet greens, and chives. Serve warm.

¾ pound beets - trimmed, peeled and cut into 1/2-inch cubes
2 tablespoons olive oil
½ teaspoon salt
⅛ teaspoon pepper
1 (8 ounce) package goat cheese, softened
1 (4 ounce) package cream cheese, softened
2 teaspoons fresh thyme
1 clove garlic, minced
1 teaspoon lemon juice
1 tablespoon coarsely crushed pine nuts
1 tablespoon balsamic glaze

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a roasting pan with aluminum foil.
  • Place beets into a bowl, drizzle with olive oil, and season with salt and pepper. Toss to coat and place in the roasting pan.
  • Roast in the preheated oven until soft for 20 minutes, stirring halfway through. Remove from oven and fold foil over beets to keep warm. Reduce oven temperature to 400 degrees F (200 degrees C).

I just discovered this fabulous recipe. It's suggested to roast the beets (hence the name - smile) but on a hot Summer day I chose to boil them using my recipe for Recipe#303917. I think this would also be great with sugared pecans (or whatever sugared nuts you prefer) in place of the toasted pecans.

3 large golden beets (about 1 1/2 pounds)
3 tablespoons olive oil
4 ounces baby arugula leaves, washed (about 2 large handfuls)
1/2 cup chopped toasted pecans
1/4 cup rice vinegar
2 tablespoons sherry wine vinegar
2 ounces goat cheese
salt & freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Wash the beets and coat with 1 tbsp of the oil.
  • Wrap in several layers of foil and bake for 1 hour or until tender.
  • Let cool to room temp or refrigerate.
  • This may be done in advance.
  • With a knife, scrap off the beet skin, and cut in 1-inch cubes.
  • Add to a mixing bowl, and add the rest of the ingredients, except the goat cheese.
  • Toss well to combine, and divide on to 4 plates.
  • Crumble over the cheese, and serve.
