BABY BOK CHOY WITH BACON, ONION AND BUTTER BEANS

Baby Bok Choy with Bacon, Onion and Butter Beans image

When you see bok choy you might think stir-fry, but we here treat it like a hearty green, wilting it and softening it in bacon drippings. Then we add big, creamy butter beans and a splash of vinegar. Serve it right out of the pan or at warm room temperature. And if you have it on hand...stir fresh corn kernels in with the beans.

Provided by Food Network Kitchen

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 6

4 slices bacon, cut into 1/4-inch pieces (about 4 ounces)
1 pound baby bok choy (about 4 heads)
1/2 onion, thinly sliced
One 15-ounce can butter beans, drained and rinsed
1 tablespoon white balsamic vinegar
Kosher salt

Steps:

  • Add the bacon to a large skillet and cook over medium heat, stirring occasionally, until brown and crisp, about 6 minutes. While the bacon cooks, cut the stems from the bok choy into 1-inch pieces and the leafy tops into 3-inch pieces.
  • Add the onion to the bacon and cook, stirring, until softened slightly, 4 to 5 minutes. Toss in the beans and stir until heated through, about 2 minutes. Transfer the vegetables with a slotted spoon to a bowl, leaving the fat in the pan.
  • Add the bok choy stems to the pan, increase the heat to medium-high and cook, stirring, until slightly softened, about 2 minutes. Add the bok choy leaves and cook, stirring, until wilted, about 1 minute. Remove the pan from the heat and stir in the vinegar. Return the onion-bean mixture back to the pan and season with salt. Serve warm or at room temperature.

BABY BOK CHOY WITH OYSTER SAUCE

Baby Bok Choy with Oyster Sauce image

This recipe is an example of how simplicity can be perfection. Drizzling baby bok choy with a light, but savory sauce after it cooks adds a lovely flavor. Be sure to wash the bok choy well as dirt loves to hide between the leaves!

Provided by Food Network Kitchen

Categories     side-dish

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 9

3 tablespoons oyster sauce
2 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
Pinch of sugar
1 1/2 pounds baby bok choy (3- to 4-inch heads), bottoms trimmed
2 tablespoons vegetable oil
3 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh ginger

Steps:

  • Stir the oyster sauce, soy sauce, rice vinegar, sesame oil and sugar in a bowl until well combined; set aside. Wash the bok choy well to remove any grit and drain in a colander, leaving some water clinging to the leaves. Halve any large heads lengthwise.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add half each of the garlic and ginger and cook, stirring, until just softened, about 30 seconds. Add half of the bok choy and stir to coat. Cook until the bok choy is crisp-tender at the stem, 4 to 5 minutes; add water, 1 tablespoon at a time, to keep a bit of moisture in the skillet and prevent the garlic from burning. Remove to a platter.
  • Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining garlic, ginger and bok choy. When tender, return the first batch of bok choy to the skillet and heat through. Transfer all the bok choy to the platter and drizzle with the sauce.

BABY BOK CHOY WITH OYSTER SAUCE

Baby Bok Choy with Oyster Sauce image

We love the combination of bright green vegetables such as bok choy or broccoli and oyster sauce. Garlicky and a little spicy, this version has a sweet-acidic punch from the addition of balsamic vinegar which has similar qualities to Chinese black vinegar. Recipe developed by Food Network Kitchen.

BABY BOK CHOY - AUTHENTIC CHINESE RECIPE

Baby Bok Choy - Authentic Chinese Recipe image

My mother taught me this basic technique for several vegetables. It can be used also with broccoli and gai lan for example. The result is a crisper texture at the end. The only unauthentic part of the recipe is using garlic salt instead of fresh garlic (but you can easily substitute back!)

Provided by MyraMedstudent

Categories     Vegetable

Time 6m

Yield 2 serving(s)

Number Of Ingredients 4

10 bunches baby bok choy
1 tablespoon oil (I prefer sesame)
1/2 teaspoon garlic salt
1/4 cup chicken broth

Steps:

  • Clean baby bok choy in cold water several times to get out the sand/dirt. You can slice the vegetable in half length-wise if you like.
  • heat oil over medium heat in skillet. (very briefly if using sesame oil since this burns quickly).
  • If you are using fresh garlic instead of garlic salt, add to oil now.
  • Add baby bok choy to skillet, stirring constantly, about 1 min until leaves are coated with oil and beginning to wilt.
  • Add chicken broth and cover pan.
  • Simmer for 2-3 minutes. Test for doneness with a fork - if it can pierce the white thick part of the stalk without much resistance it is ready.
  • Remove from heat, add garlic salt.
  • When transferring to serving dish, you can move some of the broth but don't take the bottom bits since this may have residual sand.

BABY BOK CHOY IN THE WOK

Baby Bok Choy in the Wok image

This is a fast and easy recipe for cooking bok choy or baby bok choy. You can adjust the amount of flavor by adding more or less sake/soy sauce mixture (use equal amounts). We've found that adding the sesame oil at the end gives it more sesame flavor, but you could also just cook the bok choy in a mixture of vegetable and sesame oil. When in doubt, it's best to slightly undercook the bok choy.

Provided by Stovepipe

Categories     Greens

Time 19m

Yield 2-3 serving(s)

Number Of Ingredients 7

4 baby bok choy (halved or quartered, depending on size)
2 garlic cloves, minced
1/2 carrot, thinly sliced (optional)
2 tablespoons sake or 2 tablespoons rice wine
2 tablespoons soy sauce
2 tablespoons vegetable oil
1 teaspoon sesame oil (optional)

Steps:

  • Wash and slice all vegetables first.
  • Combine sake and soy sauce in equal amounts in a small bowl.
  • Heat up vegetable oil in a wok over high heat. Add garlic and stir fry briefly but don't brown. Add carrot next, if using. Stir fry briefly; then add all bok choy pieces at once and continue stir frying over high heat until halfway done.
  • Add sake/soy sauce mixture and continue cooking until the bok choy is just done. Turn off heat and stir in sesame oil, if using; serve.

BABY BOK CHOY SAUTE

Baby Bok Choy Saute image

If you can buy baby bok choy, please do give a try. We much prefer the flavor of baby bok choy to standard boy choy which to our palates at least is quite bitter and too strong tasting. Omit the Thai pepper and replace with milder chile or freshly ground black pepper for less spicy version. A CG Original.

Provided by COOKGIRl

Categories     Greens

Time 25m

Yield 3-4 serving(s)

Number Of Ingredients 9

6 -8 heads baby bok choy, chopped coarsely
1 small Thai peppers, cut into thin slivers (optional)
1 garlic clove, finely minced
1/4 cup green onion, sliced
1 -2 teaspoon fresh galangal, grated (NOT dried)
salt
1 teaspoon regular sesame oil
1/2 teaspoon toasted sesame oil
fresh lime juice, for garnish

Steps:

  • In large saute pan, heat the oil on medium heat.
  • Lightly saute the garlic for 30-45 seconds then increase the heat to medium-high and add the baby bok choy and Thai pepper.
  • Saute another 2-3 minutes, being careful not to burn; adding more oil and/or reducing heat if necessary. The bok choy should be cooked through and wilted slightly, NOT slimey or dark colored.
  • Add the galangal and the green onions. Saute another 45 seconds, stirring constantly. Season with salt and drizzle with lime juice.
  • Serve as a side dish or over steamed brown rice or soba noodles.

  • Cut the baby bok choy in half lengthwise and trim the dry ends if needed (the white part). Place the baby bok choy on the baking sheet. Pour olive oil on both sides of each piece of bok choy (and rub it in), then grind some pepper on each piece too. I like to roast it face-down first. Place the baking sheet in the oven and roast for 5 minutes/side (it will be tender-crisp with some crispy leaves). If you want it done more, roast it a little longer.
  • Meanwhile, whisk the soy sauce, lemon juice, garlic powder, and red pepper flakes together in a small bowl.
  • Once the baby bok choy is done to your liking, drizzle the sauce on each piece. Serve immediately.
