Steps:
- Pour boiling water over gelatine in heatproof bowl.
- Stir till dissolved.
- Put coffee and cocoa in saucepan.
- Add sugar and milk.
- Stir over low heat till coffee is dissolved and mixture is hot but not boiling.
- Remove pan from heat, coll till lukewarm.
- Stir in gelatine mixture and vanilla.
- Pour mixture into 4 cup oiled mould.
- Refrigerate for at least 4 hours till firm.
- When ready to serve, dip base of mould intohot water then invert onto plate.

A refreshing Japanese summertime treat! My favorite way to serve it is with frozen whipped cream and chocolate sauce, although it's also delicious with ice cream, regular whipped cream, or flavored coffee cream! It can be served solid in glasses, or cubed in bowls.

- Dissolve gelatin in the hot water in a small bowl. Pour gelatin mixture, coffee, and sugar in a saucepan and bring to a boil over high heat. Pour coffee mixture into glasses for individual servings or a large pan for cubing. Chill in the refrigerator until solidified, 6 to 7 hours.

Steps:
- Make around 35ml espresso using your coffee machine and pour it into the base of your cup.
- Steam the milk with the steamer attachment so that it has around 2-3cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming to pour into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.

- Heat milk in a saucepan set over medium-low heat. Whisk briskly with a wire whisk to create foam. Brew espresso and pour into 4 cups. Pour in milk, holding back the foam with a spoon. Spoon foam over the top.

- Make the coffee jelly: place gelatin and 1/4 cup cold water in a small bowl. Mix until gelatin is dissolved. Allow to bloom, about 3 minutes. Heat coffee and sugar in a saucepan; mix until sugar is dissolved. Add gelatin; mix until gelatin is dissolved. Pour into a rectangular mold or container. Refrigerate until set.
- Place espresso, milk, sugar syrup, vanilla ice cream, and crushed ice in a blender. Blend until smooth and ice is crushed, about 20 to 30 seconds.
- Divide cubed coffee jelly between 2 (16-ounce) glasses (about 1 cup per glass) and pour shake over. Garnish with whipped cream and ground espresso or coffee powder.
