- Preheat the oven to 400°F. Trim the bottom 2-inches from the asparagus, and if desired, peel the lower 2 inches of the stalks. Place the asparagus in a baking pan. Don't worry if the stalks overlap a bit. Drizzle the tablespoon of olive oil over them and toss gently to coat the asparagus evenly. Sprinkle on the salt and pepper, toss again, and spread out in the pan.
- Roast the asparagus for 10 to 14 minutes, until just tender and slightly browned. Remember that they will continue to cook a bit after you remove them from the oven, so take them out while they're still a little firmer than you would like.
- Meanwhile, in a small bowl, whisk together the lemon juice, zest, crème fraiche, and Sriracha until smooth. Slowly pour in the ⅓ cup olive oil, whisking all the while until the dressing is thick, then season with salt and pepper.
- Let the asparagus cool slightly, and while still warm drizzle over some of the lemon sauce. Serve right away with the rest of the sauce passed on the side if desired.

- Line a Jelly Roll Pan (10x15) with foil and lightly spray with cooking spray. Add asparagus and drizzle with 1 tablespoon olive oil. Add 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon pepper. Toss until evenly coated then line asparagus in a single layer. Roast for 4-6 minutes depending on thickness.
- Meanwhile, remove tails from shrimp.
- Remove pan from oven and push asparagus to one side of the pan (keep in a single layer). Add shrimp and drizzle with 1 tablespoon olive oil. - Preheat oven at 450 degrees Fahrenheit. You will need two half or 1 full size baking sheet for roasting. Set aside.
- Trim the hard ends of asparagus. (about 1-2 inch). Place asparagus in sheet pan. Drizzle 1 tbsp of olive oil on the top. Toss asparagus to coat in oil. Season with 1/2 tsp salt and 1/2 tsp of the black pepper. Arrange half of asparagus on one side of first sheet pan, second half in second sheet pan. Set aside.
- In a bowl, add shrimp and drizzle remaining 1.5 tbsp of the olive oil on the top. Now, add paprika, minced garlic, oregano, 1/2 tsp of salt and black pepper. Toss to coat shrimp in oil and seasonings. Transfer seasoned shrimp into prepared baking sheets. Equally divide in two sheets and place on the other side of the asparagus.
- Add cherry tomatoes in now empty bowl that had shrimp. Coat tomatoes in any remaining oil and seasoning from the bowl. Scatter tomatoes on sheet pan or place between asparagus and shrimp in single layer.
- Roast at 450 degrees Fahrenheit preheated oven for 8-9 minutes. Once roasted, take out of the oven. Let rest for 5 minutes.
- After 5 minutes, transfer shrimp, asparagus and tomatoes to a serving platter. Add 1 tbsp of lemon juice in each empty sheet pan. - Heat oven to 220C/200C fan/gas 7. Toss the onions in 1 tsp rapeseed oil and roast on a baking sheet for 10 mins. Coat the asparagus with the remaining oil and spread over another sheet. After 10 mins, add the asparagus to roast with the onions for 5 mins. Add the tomatoes and sunflower seeds and roast for 5 mins. The onions should be charred, the asparagus tender, the seeds toasted and the whole tomatoes near bursting.

ROASTED ASPARAGUS SALAD WITH TANGERINE DRESSING
Steps:
- Preheat oven to 450°F. Place asparagus in medium bowl. Pour enough cold water over asparagus to cover; let stand 15 minutes. Drain. Spread asparagus in 13 x 9 x 2-inch baking pan; drizzle with oil. Roast asparagus until crisp-tender, turning occasionally, about 10 minutes. Transfer asparagus to platter; cool.
- Using sharp knife, cut peel and white pith from tangerines. Cut between membranes to release segments. Arrange tangerine segments atop asparagus. Whisk tangerine juice, vinegar, sesame oil, peel, garlic and ginger in small bowl to blend. Season dressing to taste with salt and pepper. Drizzle over asparagus. Sprinkle with green onion tops and peanuts and serve.
