- In a large skillet, heat butter over medium-high heat. Brown pork on all sides. Sprinkle with the salt, pepper and ginger., Place on a rack in a shallow roasting pan. Bake at 350° for 1 to 1-1/2 hours or until a thermometer reads 145°. Remove roast from oven; tent with foil. Let stand for 10 minutes before slicing., Meanwhile, in a large saucepan, combine all chutney ingredients. Cook, uncovered, over medium heat for 8-10 minutes to allow flavors to blend, stirring occasionally. Serve with pork.

MANGO GLAZED PORK LOIN
Glazed pork loin is one of the most favorable entrees that I make for my friends. Tender, sweet and sour, moist and delicious. And if there is left-overs, which isn't often, you can easily put together a sandwich on a Kaiser roll, or maybe on some Hawaiian bread.

- 1. For the glaze, combine all ingredients together in a medium sauce pan over medium-low heat. Bring to a simmer and cook for about 15 minutes. When done, pour about 1/3 of the sauce into a bowl for glazing use.
- 2. Rub the pork loin with olive oil and season with salt and pepper. Set aside.
- 3. Heat grill to medium-low. Cook pork loin for approximately 30 minutes, turning and glazing every 5 minutes.
- 4. When done, remove and let sit for 10 minutes before serving. Serve with remaining glaze. Goes great with my Brown Rice Medley recipe.
SMOKED PORK LOIN WITH RASBERRY CHIPOTLE GLAZE

- Preheat stovetop or outdoor smoker to approximately 230 degrees F.
- Trim the white "silver skin" from the pork loin and lightly coat the entire loin with olive oil. Sprinkle the rub liberally on all sides of the loin.
- Place pork in the smoker and smoke until internal temperature or pork reaches 150 degrees F, about 1 1/2 to 2 hours. Remove pork from smoker and wrap lightly in aluminum foil.
- Meanwhile, preheat broiler.
- Place the jam in a medium bowl and stir in about 1/3 of the chipotle sauce. Mix well, adding more chipotle sauce until the heat and taste reach your personal preference.
- Unwrap the pork and cover with the glaze. Place on a broiler pan and broil until glaze is bubbling, about 3 minutes. Slice pork against the grain and serve.
ROASTED PORK LOIN WITH PINEAPPLE GLAZE

- For the brine: Combine the salt, brown sugar, peppercorns, coriander seeds, and 2 cups warm water in a large bowl. Stir until the salt dissolves. Add 6 cups cold water. Add the pork, cover, and refrigerate overnight (the pork should be submerged in the liquid).
- Preheat the oven to 400 degrees F.
- For the herb rub: Mix the garlic, olive oil, salt, pepper, thyme, and rosemary in a small bowl. Remove the pork from the brine and pat it dry (discard the brine). Spread the herb mixture over the pork loin, making sure you coat all sides of the loin.
- For the pork: Heat the olive oil in a medium, heavy saute pan over high heat. Add the pork and sear until browned, 4 minutes. Carefully turn the pork over and sear until browned, another 4 minutes. Meanwhile, add the prunes and pearl onions to a 10 by 7 by 2-inch glass baking dish, creating a bed for the loin. Transfer the seared pork loin to the baking dish (making sure the loin fits in the baking dish, leaving a 1-inch border on every side).
- Add the wine to the same saute pan used to sear the pork and cook, scraping the bottom of the pan to remove the browned bits, until almost evaporated, about1 minute. Stir in the pineapple juice and remove from the heat. Season with salt and pepper. Pour the mixture over the pork. Season the prunes and onions with salt and pepper.
- Place the pork in the oven and roast until a thermometer inserted into the center registers 160 degrees F, about 1 hour, basting with the pan juices every 20 minutes. Transfer the pork to a cutting board, tent with foil, and let it stand for 10 minutes. Slice the pork into 1/4 to 1/2-inch thick slices and arrange on a platter. Top the pork slices with the pearl onions, prunes, and sauce.
- Cook's Note: In place of a 3 1/2-pound pork loin, you can use 2 (1 1/4-pound) pork tenderloins. The total cooking time will be about 1 hour.

- Preheat oven to 375 degrees F.
- Season pork loin with garlic powder, salt and pepper. Heat grapeseed oil over medium-high heat in a large skillet. When the oil begins to shimmer, sear the pork on all sides. Transfer the meat to the oven, cover and let roast until fork tender and to an internal temperature of 162 degrees F on an instant-read thermometer, about 40 minutes. In last 10 minutes of roasting time increase heat to 425 degrees F and remove cover. Remove from oven to let carryover cook to 170 degrees F. Slice after meat has rested.
MANGO GLAZE FOR FISH, CHICKEN, OR PORK

- Heat the vinegar in a saucepan over medium heat. Add the sugar and cook until thickened slightly. Add jalapeno, ginger, and mango and continue cooking until softened. Add the lime juice. Transfer to a food processor and puree until smooth. Strain, if necessary. Consistency will be thick and jam-like, but can be thinned to more of a glaze consistency with honey or water.

- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with foil and spray with cooking spray.
- Combine garlic, sage, salt, and pepper in a small bowl and mix well. Rub mixture over all surfaces of the pork. Place pork on the prepared baking sheet.
- Roast in the preheated oven until browned on top, 20 to 25 minutes.
- While the pork is cooking, whisk together vinegar, water, soy sauce, brown sugar, mustard, and cornstarch in a small bowl.
- When pork is browned on top, remove from the oven and reduce oven temperature to 325 degrees F (165 degrees C).

- Place the preserves in a small saucepan over medium-low heat, and cook 10 minutes or until melted.
- Keep warm over low heat.
