DIALYSIS PEACH BLUEBERRY CRISP
My friend is very close to having to start kidney dialysis, which will eventually lead to a kidney transplant. We made this recipe for her because her food choices are very limited and do not allow for dairy, much protein, much fresh fruit or whole grains. This is great because it uses canned peaches, which she is allowed to eat! The recipe comes from DaVita, but has been adapted to suit my friend.

Steps:
- Preheat oven to 375 degrees.
- Pit and slice peaches into 3/4-inch slices.
- Spray 8 x 8 baking dish with cooking spray.
- Arrange peach slices and blueberries in dish.
- Sprinkle sugar and lemon juice over the fruit.
- Mix the flour, cinnamon, and brown sugar in a bowl.
- Using two knives or a pastry blender, cut the butter into the flour and sugar mixture until it is crumbly.
- Sprinkle crumbs over the fruit.
- Bake for 45 minutes or longer until the fruit is soft and crumbs are browned.
- Serve warm or at room temperature.

AUNT RAFFY'S PEACH AND BLUEBERRY CRISP

- Preheat the oven to 400 degrees F.
- For the filling: Butter a 7-by-3-inch round baking dish and set aside. In a large bowl, toss together the sliced peaches, blueberries, lemon juice, sugar, arrowroot, vanilla and salt. Pour the mixture into the prepared baking dish.
- For the topping: In a separate bowl, mix together the oats, flour, sugar, cinnamon and salt. Using your hands, work the butter into the flour mixture until there are no longer any powdery ingredients at the bottom of the bowl. Break apart large pieces of the topping mixture and place on top of the fruit until the fruit mixture is almost entirely covered. Bake until the topping is golden brown and crispy and the fruit mixture is bubbling, about 40 minutes. Let cool for at least 20 minutes. Serve with the ice cream.
BLUEBERRY CRISP
A fabulous dessert at any occasion. I have been making this recipe for over 25 years. I am not too sure where it came from. We have an abundance of blueberries in our area and I freeze them in separate packages to use when necessary.

- In a mixing bowl, mix together brown sugar with cornstarch.
- Add blueberries to sugar mixture and stir until well coated.
- Spoon blueberry mixture into a 9 inch x 9 inch microwave safe dish.
- Microwave on HIGH (full power) uncovered for 3 1/2 minutes for fresh blue berries or 6 minutes if using frozen blueberries.
- Blueberry sauce should be thick and bubbly.
- Stir once half way through cooking.
- TOPPING-----------.
- In a mixing bowl, combine flour, brown sugar, rolled oats and butter and rub together with fingers until evenly mixed.
- Spread evenly in a separate microwave safe dish and microwave on HIGH (full power) for 4 minutes or until golden and crumbly; stirring once.
- Spoon cooked topping evenly over blueberry base.
- Serve hot with icecream or whipping cream.

EASY PEACH BLUEBERRY CRISP
I don't like oats on my fruit crisps, but like the crunchy, caramel topping. A friend in Sacramento gave me this recipe, & have been making it for years. I've looked for others, but haven't found one as easy or as good! I have tried it with just peaches, just blueberries, and mixed berries, and all worked well!

- Preheat oven to 375°F.
- Butter a 9-inch deep dish pie plate or other casserole.
- In a large bowl, mix fruit and cinnamon.
- Pour fruit into pie plate or casserole.
- Put flour & sugar into a food processor & pulse to mix.
- Turn on food processor and SLOWLY add beaten egg through feed tube.
- Mix just until the consistency of damp sand.
- If over processed, a dough will form.
- You DO NOT want this!
- Sprinkle flour, sugar, egg mixture over fruit.
- Jiggle pan slightly to settle topping, but do not pack down.
- Slowly drizzle melted butter over topping.
- Bake crisp on a foil lined baking sheet for 30- 45 minutes.
- Crisp should be bubbly & deep golden brown.
- Check after 30 minutes.
- If not browned continued to check every 5-10 minutes until desired doneness & color.
- Serve warm, either plain or with vanilla ice cream.

- In a small bowl, combine sugar, flour and cinnamon.
- Add this mixture to the casserole.
