Roast Chicken With Cumin, Honey and Orange image

An easy way to give roast chicken some character is to baste it with flavorful liquid. Contrary to conventional wisdom, this does nothing to keep the bird moist. Even a very lean bird remains moist as long as it isn't overcooked. But the liquid adds flavor to the skin and creates a ready-made sauce that can be spooned over the chicken as you serve it. If you add some sugar or other sweetener to the basting liquid, the bird gains a mahogany color that you have to see to believe. As it heats, the sugar caramelizes, becoming thicker and stickier and turning the chicken's skin crisp and gorgeous. The result is not overly sweet, because caramelized sugars have a bitter, complex component. I prefer honey to sugar and like to combine it - as I do here - with orange juice and ground cumin, which together add acidity and even more complexity. This aromatic mix creates pan juices that can be spooned over rice or sopped up with bread.

1/2 cup freshly squeezed orange juice
1/2 cup honey
1 tablespoon ground cumin
Salt and freshly ground black pepper
1 3-pound chicken, giblets and excess fat removed

Steps:

  • Preheat oven to 400 degrees. Use a nonstick roasting pan, or line a roasting pan with a double layer of aluminum foil. Combine orange juice, honey, cumin, salt and pepper in bowl, and whisk until smooth. Place chicken in pan, and spoon all but 1/4 cup of liquid over all of it.
  • Place chicken in oven, legs first, and roast for 10 minutes. Spoon accumulated juices back over chicken, reverse pan back to front, and return to oven. Repeat four times, basting every 10 minutes and switching pan position each time. If chicken browns too quickly, lower heat a bit. If juices dry up, use reserved liquid and 1 or 2 tablespoons of water or orange juice.
  • After 50 minutes of roasting, insert an instant-read thermometer into a thigh; when it reads 155 to 165 degrees, remove chicken from oven, and baste one final time. Let rest 5 minutes before serving.

6-8 skinless boneless chicken breasts, (about 1kg/2lb 4oz in total)
2 tbsp clear honey
grated zest of 2 lemons and the juice of 1
2 tbsp olive oil
1 curly lettuce , such as Batavia or Webb's

Steps:

  • Preheat the oven to 190C/gas 5/fan 170. Arrange the chicken in a shallow ovenproof dish. Mix together the honey, lemon zest and juice, oil, salt and pepper, then pour over the chicken breasts and turn them around until well coated.
  • Roast the chicken breasts for 40-45 minutes, turning them halfway through the cooking time, and basting occasionally, until they are golden brown and shiny and the marinade has almost evaporated. Leave to cool, then wrap in foil and chill until ready to eat. (The chicken may now be frozen for up to 1 month. Defrost before serving.)
  • On the day, spread the lettuce over a large platter, tearing up any large leaves. Slice the chicken breasts, keeping them together, then arrange over the lettuce.

1 chicken, 2 1/2 to 3 1/2 pounds
Fleur de sel or other medium-grained sea salt
About 1 ounce fresh mixed herbs (sage, thyme, rosemary, oregano or other), coarsely chopped
1 large or 2 small lemons, pierced all over with a fork
Olive oil
Carrots, onions, leeks, turnips or other vegetables for roasting, as desired
1/2 cup chicken stock, or as needed

Steps:

  • Working carefully to prevent tearing, loosen the skin over as much of the chicken as possible by slipping your hand under it. Rub the chicken flesh lightly with salt, and slide the herbs under the skin. (You should be able to see them through the skin.)
  • Place all the lemon in the chicken's cavity, and cover the chicken in plastic wrap or foil. Refrigerate overnight.
  • Heat oven to 400 degrees. Lightly coat the bottom of a roasting pan with olive oil. Unwrap the chicken and place it breast side up in the pan, surrounded by any vegetables to be roasted. Drizzle the vegetables with oil, turning them to coat well. Roast for 20 minutes, then baste the chicken and vegetables with pan juices. If there are no juices, add 1/4 cup water to the pan, scraping the bottom, and baste.
  • Reduce temperature to 325 degrees. Continue basting every 10 to 15 minutes until the juices run clear when the chicken is pierced at the thigh, about 20 minutes to a pound. Roast vegetables until browned and caramelized, removing when cooked to taste.
  • Transfer the chicken to a platter and keep warm. Remove the lemon from the cavity and place in the roasting pan, mashing it a bit to release the juices. Place pan on low heat and add the chicken stock, scraping the bottom of the pan. Carve the chicken, adding any juices to the pan. Pour the hot juices into a pitcher or gravy boat. Serve the chicken and vegetables, passing the juices separately.

One 4-pound roasting chicken, rinsed, dried and giblets removed

1 lemon, sliced

Steps:

  • Preheat the oven to 350 degrees F and adjust the racks to the center of the oven. Fit a roasting pan with a V-rack.
  • Mix together the honey, olive oil, cinnamon, smoked paprika and some salt and pepper in a small bowl.
  • Sprinkle the cavity of the chicken with salt and pepper. Stuff the cavity with the rosemary sprigs and lemon slices. Place the chicken in the V-rack-fitted roasting pan. Sprinkle the outside of the chicken with salt and pepper. Tie the drumsticks together using butcher's twine. Brush the outside of the chicken with about half of the honey glaze.
  • Transfer the chicken to the hot oven. Roast about 30 minutes, and then brush the glaze on the chicken once more. Continue to roast the chicken until the skin is golden brown and crisp , and an instant-read thermometer reaches 165 degrees when inserted in the thickest part of the thighs, about 45 minutes longer.

Steps:

  • Preheat oven to 375°F. Line a large roasting pan with 3/4 of rosemary sprigs. Place chickens on top.
  • Whisk 1/2 cup oil, lemon juice, and honey in a small bowl to blend. Using your hands and beginning at the neck end of chicken, gently lift skin away from breast. Under skin of each chicken, rub 1/4 cup lemon mixture into meat. Drizzle remaining lemon mixture all over outside of chickens.

half a lemon
1 tbsp honey
1 tbsp dark soy sauce

Steps:

  • Put 2 chicken breasts, skin side up in a small baking dish and season.
  • Squeeze the lemon into a bowl and stir in the honey and soy sauce. Spoon the mixture over the chicken, then tuck the squeezed-out half of lemon between the pieces (this will moisten and add flavour to the chicken).
  • Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). Cook until done and richly glazed, basting with the juices at least twice. To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
  • Serve with salad and potatoes roasted with herbs and garlic.

Kosher salt and freshly ground black pepper
1 shallot, sliced
1 bunch fresh thyme
1 lemon, zested in large strips
3 tablespoons extra-virgin olive oil
1 tablespoon honey
3 tablespoons water
1 tablespoon freshly squeezed lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon honey
2 tablespoons minced shallot

Steps:

  • Preheat the oven to 425 degrees F.
  • For the chicken: Season the chicken cavity with salt and pepper, to taste. Stuff the chicken cavity with the shallot, half the thyme, and lemon zest. Set a v-rack or regular rack in a roasting pan, and brush chicken with a bit of the olive oil. Whisk the honey and remaining oil in a small bowl. Dip the remaining thyme in the mixture and use it to brush the chicken all over with the honey mixture. Season bird with salt and pepper, to taste.
  • Tuck the wings under the back, cross the legs, and tie them with kitchen string. Place the chicken breast side down on the rack and roast until the back is golden brown, about 35 to 40 minutes. Remove the pan from the oven and turn the chicken breast side up. Cut the string where it holds the legs together and open up the legs a bit. Baste the chicken with the pan drippings, using the thyme sprigs as a brush. Roast the chicken again until the breast is golden brown and a meat thermometer inserted in the thigh registers 170 degrees F., 20 to 25 minutes more. Transfer the chicken to a carving board, and let it rest 10 minutes before carving.
  • For the sauce: Remove the rack from the roasting pan. Put the pan over medium-high heat, add the water, and stir with a wooden spoon to release the brown bits that cling to the pan. Strain the pan drippings into a small bowl and spoon off the fat. Whisk in the lemon juice, olive oil, honey, shallot, thyme, salt, and pepper to taste. Carve the chicken and serve drizzled with the sauce.

12 medium red potatoes, trimmed around center
12 asparagus spears, trimmed, halved crosswise
3 carrots, cut into sticks
olive oil
paprika, to taste

pepper, to taste
1/4 cup fresh lemon juice
1 tablespoon honey
2 tablespoons unsalted butter, divided
1/4 cup shallot, sliced
1 tablespoon fresh ginger, minced
1 1/4 cups chicken broth
1/4 cup dry white wine
3 tablespoons fresh lemon juice
3 tablespoons honey
1/4 cup heavy cream
1 teaspoon all-purpose flour
1 lemon, zest of, minced
fresh chives, minced
salt, to taste
cayenne, to taste

Steps:

  • Preheat oven to 425°F with rack in lower third of oven so vertical chicken will not touch top of oven.
  • Place removable insert from angel food cake pan (or use commercial roasting stand) in a 10" shallow pan (like a deep dish pie plate).
  • Prepare chicken, trimming off all fat.
  • Rub the chicken with oil, season with paprika, salt and pepper inside and out.
  • Prop chicken, with legs down, on the tube of the cake pan insert, or vertical roaster.
  • Toss prepared vegetables with oil, salt and pepper; keeping asparagus separate from potatoes and carrots.
  • Arrange potatoes and carrots around the base of the chicken, then roast for 30 minutes.
  • For the basting liquid, combine honey and lemon juice.
  • After the chicken has roasted 30 minutes, brush it with some of the mixture.
  • Add asparagus to pan, then roast 15 more minutes.
  • Baste a second time, then roast chicken until it reached an internal temperature of 170 degrees in the thigh, about 15 more minutes.
  • Allow chicken to rest 15 minutes before carving.
  • While chicken is resting, prepare the sauce.
  • In a saucepan over medium heat, sauté shallots and ginger in 1 TBS unsalted butter, cooking till soft.
  • Add broth, wine, lemon juice, and honey.
  • Simmer 15 minutes, or until reduced by half.
  • Strain into a clean saucepan.
  • Whisk in cream; bring to a boil.
  • Mash 1 TBS unsalted butter and flour together.
  • Add butter and flour mixture to finish the sauce and cook until slightly thickened.
  • Stir in lemon zest, chives, and seasoning just before serving.
  • Serve sauce over chicken and veggies.

1 (3 1/2-lb) chicken, rinsed and patted dry
1 head garlic, left unpeeled and halved horizontally
1/4 cup mild honey
1 tablespoon olive oil

kitchen string; an instant-read thermometer

Steps:

  • Put oven rack in middle position and preheat to 425°F.
  • Finely grate enough zest from 1 lemon to measure 1 tablespoon, then squeeze enough juice from same lemon to measure 2 tablespoons.
  • Stir together butter, tarragon, zest, 1/2 teaspoon salt, and pepper.
  • Put chicken, breast side up, in a small roasting pan. Starting from neck cavity, work your fingers gently between skin and flesh of breast to loosen skin all the way to thighs without tearing. Put one fourth of tarragon butter under skin of each breast, then rub skin from outside to spread evenly.
  • Starting from large cavity, loosen skin on both sides of cavity with a paring knife (to provide access to thighs), then work your fingers gently between skin and flesh of thighs and drumsticks. Divide remaining tarragon butter among thighs and drumsticks, rubbing skin from outside to spread evenly. Season cavity and skin with salt and pepper, then halve remaining lemon and put inside cavity along with garlic. Tie drumsticks together with kitchen string.
  • Whisk together honey, lemon juice, oil, and remaining 1/4 teaspoon salt. Roast chicken 30 minutes, then brush pan juices and half of honey mixture over chicken and roast 10 minutes more. Brush chicken again with pan juices and remaining honey mixture and continue to roast until thermometer inserted in fleshy part of a thigh (do not touch bone) registers 170°F, about 20 minutes more.
  • Transfer chicken to a cutting board and let stand 10 to 15 minutes before carving. Skim fat from pan juices and serve juices with chicken.

HONEY AND MUSTARD ROASTED QUAIL RECIPE

Cailles rôties au miel et à la moutarde translates in English to honey and mustard roasted quails. This dish is ''uber'' easy to make, as the girls (they're teenagers) would say. I halved the quails lengthwise for faster cooking time, then glazed the meat with a honey and mustard mixture. The sweetness and subtle heat from the sauce make the perfect sophisticated dish. I couldn't resist serving the quails with quenelles of mashed potatoes. Don't get me wrong, I'm still trying as hard as I can to shed the last few pounds I gained during my pregnancy. I work out very hard daily but even though I watch my diet, I don't deprive myself of delicious foods. It's all about portion control. Quails are delicious and smaller sized than chicken. One quail was sufficient for my appetite and I felt full afterwards. I probably would eat two on a regular basis but that would only be out of sheer greediness!

6 quails
3 tablespoons olive oil
1 tablespoon papaya paste (see tips)
2 cloves garlic, finely minced
4 tablespoons leeks (green part only), sliced
1½ teaspoons black peppercorns
⅓ cup mustard
4½ tablespoons honey
3 tablespoons salted butter
16 sprigs chives
juice of half a lemon, freshly squeezed

Steps:

  • In a mortar and pestle, grind ¾ teaspoon peppercorns. Add baking powder, papaya paste, ¾ teaspoon black pepper, 1 tablespoon lemon juice and 1 tablespoon oil. Mix until well combined.
  • Clean the quails and pat them dry with paper towels. Cut them in half vertically using sharp poultry shears. Coat them with the contents from the mortar and pestle. Let marinate for at least 1 hour in the refrigerator.
  • Preheat the oven to 375°F.
  • Remove the quails from the refrigerator at least 15 minutes ahead of time to bring them back to room temperature before cooking.
  • In a heatproof, non-stick pan, heat the rest of the oil. Add the leeks and cook until softened and lightly golden. Transfer to a plate, leaving as much oil as possible in the pan. Place the quails skin side down (with as little marinade as possible); add the remaining garlic. Brown the skin for 2 minutes. Season with salt and pepper. Lower to medium-high heat, cook the quails on the other side for another 2 minutes. Flip again. Season the other side. Transfer to a plate.
  • Melt 2 tablespoons butter in the pan. Add 3½ tablespoons honey and ¼ cup water, then bring to a boil. Cook for 2-3 minutes. Add the remaining lemon juice and mustard. Return and cook the quails for about 2 minutes in the pan (they will finish cooking in the oven). Baste the quails with the juice from the bottom of the pan. Return the leeks and add 2 snipped sprigs chives to the pan, cover and cook for another 2 minutes.
  • DPrinkle the birds with the remaining balck pepper. Add ¼ cup water to the bottom of the pan and transfer to the oven. Roast for 15 min.
  • In the microwave, melt 1 tablespoon butter. Add 1 tablespoon honey. Baste the birds with the butter mix using a silicone brush. Increase the temperature to 400°F and roast for 5 more minutes to brown the top.
  • Tie the tips of 2 halved quails with chives. Serve with mashed potatoes and a green salad.

  • Baste and truss. Place the chicken in the pan, on top of the butter, breast side up. Rub 2 more tablespoons of the butter mixture under the skin. (This should include the breasts and legs.) Work your way under as much of the skin as possible -- if you're very gentle, it won't tear.Now truss the chicken with butcher's twine. (Here's How to Truss a Chicken.) (It's also okay to just tie the ends of the legs together if trussing it becomes tricky.) Rub the remaining blackberry-thyme butter mixture on top -- all over the skin of the chicken.
  • Roast. Place the pan in the preheated 500°F oven and roast until the surface of the chicken is golden brown, about 20 minutes. Remove the chicken from the oven and reduce the heat to 350 F degrees.
  • Flip. Very carefully, using tongs, placing one part inside the cavity and one gently on the top of the breast side, flip the chicken over so it's breast side down. Coat the back of the chicken with the remaining butter mixture and then return the chicken to the oven.
  • Continue to roast. Once the oven has cooled to 350°F, continue to roast the chicken until internal temperature is 155°F -- this should take about an hour, but focus only on the temperature and not the time. (For an accurate reading of the temperature, place the thermometer deep into the flesh, away from bones.) During the roasting process, every 15 or so, use a spoon to baste the chicken with the butter and juices from the bottom of the pan.The final internal temperature will be about 165°F, as the chicken will continue to cook for several minutes outside of the oven. It should be nicely browned, the juices should run clear and the legs should move easily when it's done. (If you think it's getting too brown before the chicken is cooked, lightly cover it with foil in the oven.)
  • Let the chicken rest. Once you remove the chicken from the oven, crumple up a few sheets of foil and place it under the chicken, beneath the legs. This will let all of the juices flow into the breasts while it rests for about 15 minutes.

Whole tangerines, peel and all, roast alongside chicken in a sweetened soy sauce that thickens into a glaze and lacquers the bird. The fruit wedges soften in the syrupy sauce while infusing it with their floral bittersweetness. Reminiscent of savory Cantonese soy sauce chicken and tangy American Chinese orange chicken, this dish also combines the warmth of ginger with the bit of heat from ground hot chiles. You can eat the tangerine wedges along with the chicken, which is delicious with its sauce over steamed rice or boiled noodles. Serve with stir-fried brussels sprouts or bok choy.

5 small tangerines or clementines
1/2 packed cup dark brown sugar
1/4 cup soy sauce
1 1/2 teaspoons rice vinegar or distilled white vinegar
1 teaspoon ground cayenne or other hot red ground chile
1 (4-pound) whole chicken
Salt and black pepper
8 slices peeled fresh ginger

Steps:

  • Heat oven to 400 degrees.
  • Squeeze 1/4 cup juice from 2 to 3 tangerines into a small bowl; reserve the spent peels. Cut the remaining tangerines into wedges with their peels intact, and set aside. Add the brown sugar, soy sauce, vinegar and cayenne to the tangerine juice and whisk until the sugar dissolves.
  • Generously season the chicken inside and out with salt and pepper. Tuck the wingtips behind the body. Stuff the tangerine peels and 6 ginger slices into the cavity, then tie the legs together using kitchen twine. Place in a large ovenproof skillet, and scatter the tangerine wedges and remaining 2 slices ginger around the chicken.
  • Slowly pour the juice mixture all over the chicken, then slide the skillet into the oven. Roast for 30 minutes.
  • Using a large spoon or baster, quickly and carefully coat the chicken with the pan sauce. Continue roasting, basting every 10 minutes, until the chicken is browned and cooked through, 20 to 30 minutes longer. An instant-read thermometer inserted in the thickest part of the breast should register 155 degrees and, in the leg, 170 degrees. The chicken will continue to cook while it rests.
  • Transfer the chicken to a cutting board and let rest for about 5 minutes. If the pan sauce isn't already syrupy, bring it to a boil over medium-high heat on the stovetop. Be sure to wear oven mitts or use a kitchen towel to hold the skillet (the handle is hot). Cook, stirring occasionally, until the bubbles grow larger and paler brown, and the sauce is the consistency of syrup, about 5 minutes. Discard the ginger.
  • Serve the chicken whole or carved with the glaze poured all over the meat. Arrange the tangerine wedges from the pan around the bird. You can eat them, if you'd like.
