My daughter wanted brownies with raspberries for her class as a treat for her birthday and since I did not want to make huge brownies for all the kids I came up with these mini desserts.

2 teaspoons butter
2 teaspoons all-purpose flour
1 cup butter
1 ½ cups white sugar
4 eggs, lightly beaten
2 teaspoons vanilla extract
1 cup all-purpose flour
⅔ cup unsweetened cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
⅓ cup heavy cream
3 ounces bittersweet chocolate, finely chopped
28 fresh raspberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12-cup mini muffin pan and an 8-inch square pan with 1 teaspoon butter and 1 teaspoon flour each.
  • Melt 1 cup butter in a large saucepan over medium heat. Remove from heat; stir in sugar, eggs, and vanilla extract until smooth. Fold in 1 cup flour, cocoa powder, baking powder, and salt gently.
  • Spoon batter into the prepared muffin cups using a small ice cream scoop, filling each 3/4 full. Pour remaining batter into the square pan.
  • Bake both pans in the preheated oven until a toothpick inserted into the center comes out with only a few crumbs attached, about 12 minutes for the mini muffins and 20 minutes for the square pan. Remove from oven and cool in the pan for 5 minutes.
  • Transfer round brownies to a wire rack to cool. Let 8-inch pan of brownies cool in the pan, about 2 hours. Cut into 16 small squares.
  • Heat cream in a small saucepan over medium heat until it almost boils, about 3 minutes.
  • Place chopped chocolate into a bowl. Pour hot cream over chocolate and whisk until smooth. Cool until thickened, about 2 hours.
  • Place a dollop of ganache onto each brownie piece. Top each with 1 raspberry.

1/2 cup butter
1/3 cup water
2 eggs
1 teaspoon vanilla
1/2 cup seedless raspberry jam
1/4 cup chocolate chips
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 13 x 9 pan and set aside.
  • Place the first 5 ingredients in a large mixing bowl.
  • Stir for about 50 strokes until batter lightens in texture.
  • Pour into prepared pan, smooth out and drop jam by teaspoonfuls onto the batter.
  • With a knife, swirl jam into the batter.
  • Scatter the chocolate chips and nuts evenly over the top.
  • Bake for about 25 minutes or until done.

When I mentioned in passing that I wanted to include another chocolate-based recipe in Oven to Table, she immediately texted me a photo of a handwritten recipe in scrolling cursive titled "My Raspberry Swirl Brownies." I promptly baked them and think you should, too. A dessert (and a friend) doesn't get any easier, or sweeter, than this.

½ cup (125 mL) butter
1 ½ cups (375 mL) semi-sweet chocolate chips, divided
3 large eggs
1 cup (250 mL) granulated sugar
1 tsp (5 mL) vanilla bean paste or pure vanilla extract
⅔ cup (170 mL) all-purpose flour
Pinch of salt
½ cup (125 mL) raspberry jam

Steps:

  • Preheat the oven to 350°F (180°C). Lightly grease an 8-inch (20 cm) square baking pan and line with parchment paper, leaving a 2-inch (5 cm) overhang on 2 sides of the pan.
  • In a medium microwave-safe mixing bowl, melt the butter and 1 cup (250 mL) chocolate chips as follows. Heat in the microwave on medium-high for 1 minute. Remove the bowl from the microwave and stir. Repeat heating at 15- to 20-second intervals, stirring in between, until the mixture is completely melted and smooth.
  • Whisk in the eggs, sugar, and vanilla until well blended. Using a rubber spatula, stir in the flour and salt. Carefully fold in the remaining ½ cup (125 mL) chocolate chips and pour into the prepared pan, spreading the mixture evenly into the corners.
  • Drop spoonfuls of jam over the brownie batter. Using a knife, swirl the jam through the batter. Bake for 35 to 40 minutes or until the top is set. Remove the pan from the oven and let cool completely on a wire rack. Using the parchment overhang, lift the brownies from the pan and cut into squares.

15 7/8 ounces pillsbury thick 'n fudgy double chocolate deluxe brownie mix
1/4 cup water
2 tablespoons butter, melted
1 egg
5 tablespoons seedless raspberry jam

Steps:

  • Heat oven to 350 degrees F.
  • Spray a 9 inch square pan with non stick cooking spray.
  • In a medium bowl combine brownie mix, contents of chocolate packet from mix, water, egg and 2 tablespoons of the spreadable mix.
  • Mix until dry ingredients are moistened.
  • Spread batter evenly in pan.
  • In a small bowl stir remaining 3 tablespoons spreadable fruit until smooth.
  • Drizzle in parallel lines over batter in pan.
  • Swirl gently with knife.

1 (19 ounce) box Betty Crocker fudge brownie mix
1/4 cup water
1/2 cup vegetable oil
2 eggs
1 (8 ounce) package cream cheese, softened
1/2 cup powdered sugar
1/2 cup raspberry preserves (I used seedless)
1 ounce semisweet baking chocolate
1 tablespoon butter

Steps:

  • Heat oven to 350º F.
  • Grease the bottom only of a 13x9x2-inch pan.
  • Stir together brownie mix, water, oil, and eggs in a medium bowl until well blended. Spread into pan.
  • Bake for 28-30 min or until toothpick inserted 2" from side of pan comes out clean or almost clean.
  • Cool completely in pan on wire rack, about 1 hour.
  • Beat cream cheese, powdered sugar and preserves in a small bowl with electric mixer on medium speed until smooth.
  • Spread over brownies and chill for 15 minute.
  • Melt chocolate and butter in a small microwavable bowl, stiring every 30 sec, until mixture can be stirred smooth. Drizzle over brownies. Chill about 1 hour or until chocolate is firm.

4 ounces unsweetened chocolate, chopped
4 eggs
1 1/2 cups sugar
1 teaspoon vanilla
2 tablespoons raspberry liqueur
1/2 teaspoon salt
1 cup all-purpose flour
1 1/2 cups shelled walnuts, coarsely chopped
1/2 cup mini semisweet chocolate chips
1 cup raspberry preserves
Confectioners' sugar, for dusting, optional

Steps:

  • Preheat oven to 350 degrees F.
  • Coat a 13 by 9 by 2-inch baking pan with nonstick cooking spray.
  • Melt together butter and chocolate in bowl set over simmering water in saucepan. Stir until smooth. Set aside to cool.
  • Beat eggs and sugar in large bowl until well combined, about 1 minute. Beat in vanilla, 1 tablespoon liqueur and the salt. Stir in flour in 3 additions. Fold in walnuts and chocolate chips. Spread half of batter over bottom of prepared pan.
  • Mix together preserves and remaining liqueur in small bowl. Spread over batter in pan. Place in freezer for about for about 20 minutes or until preserves are set. Spread remaining batter over top of preserves.
  • Bake for 45 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 15 minutes. Cut into 32 brownies. Let cool completely.
  • To serve, dust with confectioners' sugar, if desired.

Steps:

This recipe couldn't be simpler-just measure everything into 1 bowl, mix, add raspberries and bake! No doubt these will be one of the best desserts you have EVER made! I use fresh raspberries out of my garden. I am sure you could use frozen, but perhaps you would need to drain off some of the liquid as to not screw with the proportions of the recipe. 1 cup butter
4 (1 ounce) unsweetened chocolate squares
2 cups sugar
4 eggs
1 teaspoon vanilla

1/2 cup seedless raspberry jam
1/4 cup heavy whipping cream
4 (1 ounce) semi-sweet chocolate baking squares

Steps:

  • Heat oven to 350°F Place butter and unsweetened chocolate in medium microwave-safe bowl. Microwave on HIGH (100% power) for 1 minute; stir. Microwave 30 seconds; stir until smooth; set aside.
  • Combine sugar, eggs and vanilla extract in large bowl. Beat at medium speed, until well mixed. Add melted chocolate mixture; continue beating until well mixed. Reduce speed to low; add flour and salt. Beat just until mixed. Spread batter into greased 13x9-inch baking pan.

  • For easy pan removal and cutting, line baking pan with aluminum foil, leaving 1-inch overhang on ends; lightly grease foil. Once brownies are cooled and frosted, remove brownies by lifting foil at edges. Cut into bars.

100g milk chocolate, broken into chunks
250g pack salted butter
400g soft light brown sugar
4 large eggs
140g plain flour
50g cocoa powder
200g raspberries

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray tin with baking parchment. Put the chocolate, butter and sugar in a pan and gently melt, stirring occasionally with a wooden spoon. Remove from the heat.
  • Stir the eggs, one by one, into the melted chocolate mixture. Sieve over the flour and cocoa, and stir in. Stir in half the raspberries, scrape into the tray, then scatter over the remaining raspberries. Bake on the middle shelf for 30 mins or, if you prefer a firmer texture, for 5 mins more. Cool before slicing into squares. Store in an airtight container for up to 3 days.
