CLASSIC FRENCH PORK RILLETTES



Classic French Pork Rillettes image

Classic French rillettes is not a pork pâté, instead, but soft melting meat created by long slow-cooking. They are delicious on a baguette.

1 1/2 pounds lean pork, cut into 1-inch cubes
3/4 pound pork fatback
1/2 pound duck legs, kept whole
3/4 cup water
1 1/2 teaspoons chopped fresh thyme
1 1/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 dried bay leaf

Steps:

  • Gather the ingredients.
  • Preheat oven to 325 F. In a large ovenproof baking dish, mix all the ingredients.
  • Tightly cover the dish with foil or a well-fitting lid.
  • Cook in the center of the oven for 3 hours, until the meat is falling apart. It is imperative to keep checking the dish to make sure the meat is not drying out as it cooks; add more water if needed. Once cooked, remove the dish from the heat, leave the foil or lid in place and allow the meat to cool in the dish for 30 to 45 minutes until it is warm.
  • Remove the lid and discard the bay leaf and duck bones and any little pieces of meat which may have dried too far.
  • Shred and stir the meat and fat with a large fork until it resembles a chunky, creamy spread, if correctly cooked this will be very easy to do.
  • Place the rillettes in a beautiful serving pot and level with the back of a spoon.
  • Pour any remaining fat in the cooking dish over the surface to help keep the rillettes moist.
  • Chill for at least 24 hours before serving.

1 pound bluefish fillets
1/3 cup white vinegar
1 1/3 cups dry white wine
2 tablespoons grainy mustard
Juice of 1/2 lemon
2 tablespoons soft unsalted butter
2 tablespoons minced chives
2 teaspoons minced cilantro leaves
Salt and freshly ground white pepper
Scant teaspoon wasabi paste
2 tablespoons flying fish roe (tobiko), optional
Toasted slices of baguette

Steps:

  • Place fish in a sauté pan or a skillet. Pour vinegar and wine over, bring to a simmer and remove from heat. Allow to cool to room temperature.
  • When fish is cooled, remove to a cutting board and peel off skin. Discard liquid. Place fish in a bowl, breaking it up with a fork. Add mustard, lemon juice and butter and mix. Add chives, cilantro and salt and pepper. Fold in wasabi.
  • To serve, pile rillettes in a serving dish and, if desired, spread tobiko over the top. Or fashion mounds on plates. Garnish with toast. Serve as an hors d'oeuvre or a first course.

1 cup mayonnaise
1/2 lemon, juiced
1 tablespoon Dijon mustard
Dash extra-virgin olive oil
Dash Worcestershire sauce
Dash hot pepper sauce (recommended: Tabasco)
1 1/2 teaspoons capers, chopped
1 1/2 teaspoons caper juice (liquid from a jar of capers)
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
3 tablespoons fresh chives, minced
8 ounces salmon fillet, skinless, about 3/4 inch thick
1 teaspoon finely ground sea salt
1/2 teaspoon freshly ground black pepper
1 cup cold water
1 tablespoon fresh lemon juice
4 ounces smoked salmon, cut into strips about 1-inch long and 1/4-inch wide
Lemon zest, julienned, for garnish

Steps:

  • In a bowl, whisk the mayonnaise, lemon juice, Dijon mustard, olive oil, Worcestershire, hot pepper sauce, capers, caper juice, salt, and black pepper. Whisk in 2 tablespoons chives and taste for seasoning. Cover and refrigerate until needed. Will keep for 2 to 3 days refrigerated. Makes about 1 cup.
  • Preheat an 8-inch skillet over high heat. Add the water and lemon juice, the liquid should be about 3/4 inches deep. Generously season the salmon fillet on both sides with salt and pepper. Put the salmon in skillet, and bring the water to a simmer (about 180 degrees). Reduce the heat to very low, tightly cover the pan, and poach the salmon until medium rare, 5 to 6 minutes. Remove the salmon to a plate and place it in the refrigerator to cool.
  • Remove any pin bones from the salmon and break the fish up into the mayonnaise. Add the smoked salmon and fold together. Garnish with lemon zest and remaining tablespoon of chives. Store tightly covered in the refrigerator. Serve cool but not cold.
  • Cooking Notes: For the most luscious texture, poach the salmon on your stovetop's lowest possible setting, with the water just gently steaming the fish.
  • Wine Notes: Chardonnay is wonderful with this dish, but please ask your wine merchant for one with little or no oak, so it does not clash with the woody flavor of the smoked salmon.

4 ounces mascarpone cheese
2 tablespoons lemon juice
1 tablespoon prepared horseradish
1 teaspoon prepared Dijon-style mustard
1 pinch ground cayenne pepper
2 tablespoons finely chopped red onion
salt to taste

Steps:

  • Crumble the smoked bluefish. Place bluefish and mascarpone cheese into a food processor. Blend well using the pulse setting.
  • Transfer bluefish mixture to a medium bowl. Mix in the lemon juice, horseradish, Dijon-style mustard, cayenne pepper, red onion and salt.

Steps:

  • Stir together shallot, lemon juice, and 1/4 teaspoon salt, then beat in cream cheese, bluefish, and 1/2 teaspoon pepper with a spoon until combined well. Stir in chives.
