2 tablespoons olive oil
1 tablespoon butter
1 onion (finely chopped)
2 garlic cloves (crushed)
1 x 400g (14oz can chopped tomatoes)
½ cup water
pinch of sugar (optional)
½ cup whipping/heavy cream
salt & pepper to taste
500 g 1lb rigatoni, cooked (reserve 1 cup of cooking water)
Parmesan and basil to serve

Steps:

  • Melt together the olive oil and butter and saute the onions until soft and translucent.
  • Add the garlic and saute for another 30 seconds before adding the chopped tomatoes.
  • Pour ½ cup water into the tomato can and pour into the pot.
  • Season with sugar, salt and pepper then allow to simmer for 5 minutes.
  • Pour in the cream and allow to simmer for another 5 minutes before blending until smooth (optional).
  • Add the cooked rigatoni to the pasta sauce and stir to coat. Add some of the reserved cooking water to thin out the sauce and make it even silkier.
  • Serve topped with grated Parmesan and fresh basil leaves.

1 tablespoon olive oil
1 small white onion, minced
2-3 garlic cloves, minced
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1 teaspoon kosher salt plus more to taste
1/4 teaspoon black pepper plus more to taste
1-28 ounce can crushed tomatoes
Parmesan rind, optional
12 ounces dried rigatoni
Grated Parmesan and chopped parsley for serving

Steps:

  • In a large skillet or saute pan, heat the oil over medium heat. Add the onions and sauté until they start to soften and turn translucent, about 5 minutes.
  • Add the garlic, oregano, red pepper flakes, salt and pepper and continue cooking until fragrant, about 1 minute.
  • Pour in the tomatoes and add the Parmesan rind, if using. Simmer for 10-15 minutes until the sauce has thickened.
  • While the sauce simmers, bring a large pot of salted water to a boil. Cook the rigatoni until al dente according to package instructions. Reserve 1 cup of the pasta cooking water. Drain the pasta.
  • Remove the Parmesan rind. Stir the rigatoni into the sauce with 1/4 cup of the reserved pasta water. You can add more as necessary to thin out the sauce.
  • Season to taste with additional salt and pepper as needed.
  • Top with grated Parmesan and parsley before serving.

4 tablespoons olive oil
3/4 cup diced white onion
1 teaspoon salt
1 teaspoon minced garlic
1 pinch red pepper flakes
28 ounces Italian tomatoes ((blended until smooth))
8 ounces uncooked rigatoni pasta
1/2 cup fresh basil leaves ((snipped))
4 tablespoons salted butter ((cubed))
1 cup freshly grated Parmesan cheese ((plus additional for topping))

Steps:

  • Heat the oil in a saucepan over medium heat. Add onions and salt. Stir until the onions are translucent (about 5 minutes).
  • Add the garlic. Cook and stir for an additional 1 minute.
  • Add the red pepper flakes and blended Italian tomatoes.
  • Bring the mixture to a simmer, then turn the heat to medium-low. Simmer for 45 minutes, stirring often as the sauce cooks to prevent scorching.
  • While the sauce is cooking, boil the rigatoni according to package directions, but pull it off the heat once it starts to soften (after about 8 minutes). It will cook the rest of the way in the sauce.
  • Add about 1/3 cup of the freshly snipped basil to the tomato sauce. Then stir in the butter.
  • Add the cheese, 1/4 cup at at time, to the tomato sauce, stirring between each addition and giving it time to melt.
  • Drain the pasta and add it to the tomato sauce. Stir well to coat the rigatoni.
  • Serve with a sprinkling of fresh basil and parmesan cheese.

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

4 tablespoons olive oil
1 cup diced onion
1 teaspoon salt, plus more to taste
2 cloves garlic, crushed (or more to taste)
1 pinch red pepper flakes
1 (28 ounce) can San Marzano (Italian) tomatoes, blended smooth
½ cup water (to rinse out can of tomatoes)
1 (8 ounce) package uncooked rigatoni pasta
½ cup fresh basil leaves, thinly sliced
4 tablespoons cold butter, cubed
1 cup grated Parmigiano-Reggiano cheese, plus more for serving

Steps:

  • Heat olive oil in saucepan over medium-high heat. Add onions, salt. Cook until no longer white and starting to turn translucent, about 5 minutes. Stir in garlic; cook about 1 minute. Add chili flakes and blended tomato sauce. Bring to a simmer; adjust heat to medium to medium-low. Simmer gently, stirring occasionally, for 45 to 60 minutes. Reduce heat to low.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes (5 minutes from doneness).
  • Add about 2/3 of the basil to the sauce. Stir in butter. When butter melts, add cheese in 3 increments.
  • Drain pasta; transfer to sauce. Stir until rigatoni are evenly coated with sauce. Serve sprinkled with the remaining basil and a dusting of grated cheese.

1/4 lb mild Italian sausage
2 tablespoons butter
1 small onion, finely chopped
1 garlic clove, minced
2 medium tomatoes, peeled seeded and chopped
1/2 cup canned tomato sauce
1/2 dry white wine
1/2 teaspoon salt
1/2 lb rigatoni pasta (about 2 1/2 cups) or 1/2 lb mostaccioli pasta (about 2 1/2 cups)
1/2 cup peas (fresh or frozen)
1/2 cup whipping cream
parmesan cheese, grated

Steps:

  • Remove casings from sausages and crumble meat.
  • in a deep, heavy frying pan and over medium low melt the butter.
  • Add sausage and onion and cook slowly, stirring until lightly browned.
  • Add in garlic, tomatoes, tomato sauce, wine and salt.
  • Increase heat to medium and bring to a boil.
  • Cover, reduce heat and simmer 15 minutes.
  • Cook rigatoni in salted water according to directions, drain and keep warm.
  • Mix peas and cream into sausage sauce.
  • Increase heat to medium high and cook stirring until sauce boils all over in large shiny bubbles and has thickened slightly.
  • Spoon over rigatoni and mix lightly.
  • Top with parmesan cheese.

1 tablespoon extra virgin olive oil
2 cloves garlic, minced
1 tablespoon fine grated lemon, rind of
1 cup heavy cream
1 ripe tomatoes, chopped
1/4 cup grated good quality parmesan cheese
1/4 cup chopped flat leaf parsley
salt and pepper
1 lemon, juice of

Steps:

  • Cook pasta according to directions; drain, rinse and set aside.
  • Heat oil in large saucepan over low heat, add garlic and saute 30 seconds; do not brown.
  • Add lemon peel and cream, bring to a simmer and cook 6 to 8 minutes until sauce thickens slightly.
  • Add tomatoes, parmesan cheese, parsley and cooked pasta.
  • Stir well and season with salt& pepper.
  • Squeeze lemon juice over all and mix well.

1 1/2 lbs Italian sausage, casings removed
1 onion, chopped
3 garlic cloves, minced
1/3 cup dry white wine
1 1/2 cups canned crushed tomatoes in puree (from a 15-ounce can)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 cup chopped fresh parsley
1 cup light cream
1 lb rigatoni pasta
grated parmesan cheese, for serving

Steps:

  • In a large frying pan, heat the oil over moderate heat. Add the sausage and cook, breaking up the meat with a fork, until it is no longer pink, about 5 minutes.
  • With a slotted spoon, remove the sausage from the pan. Discard all but 1 tablespoon fat.
  • Reduce the heat to moderately low. Add the onion and garlic and cook, stirring occasionally, until the onion is translucent, about 5 minutes.
  • Add the wine and cook until it almost evaporates, about 5 minutes. Stir in the sausage,tomatoes, and salt. Simmer, covered, for 10 minutes.
  • Add the pepper, parsley, and cream.
  • In a large pot of boiling, salted water, cook the rigatoni until just done, about 14 minutes.

2 lbs fresh hot Italian sausages, casings removed
1/2 cup dry red wine
1 (28 ounce) can tomatoes with juice
1 (28 ounce) can crushed tomatoes in puree
8 ounces rigatoni pasta
2 cups fresh arugula, stemmed and packed
1/2 cup thinly sliced fresh basil leaf
1 tablespoon chopped fresh oregano
1/2 cup freshly grated parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium heat. Add onion; saute until translucent, about 4 minutes.
  • Add garlic; stir 1 minute.
  • Add sausage; cook until browned, breaking up with back of spoon, about 5 minutes.
  • Drain drippings from pot.
  • Add wine, diced tomatoes with juice, and crushed tomatoes. Increase heat and bring to a boil.
  • Reduce heat to low and simmer 30 minutes to blend flavors, stirring occasionally.
  • Can be made one day ahead up to this point: Cool and refrigerate, then reheat over medium heat before continuing.
  • Cook pasta until al dente, drain.
  • Stir pasta, arugula, basil and oregano into tomato sauce. Simmer until the arugula wilts, stirring often, about 2 minutes.
  • Season with salt and pepper to taste.
  • Transfer to serving bowl or dinner plates and sprinkle with parmesan.
