2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon Dijon mustard
1/2 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
CRAB CAKES:
1 large egg, lightly beaten
1/2 cup soft bread crumbs
1/4 cup mayonnaise
1 teaspoon grated onion
1/2 teaspoon minced fresh parsley
1/2 teaspoon Worcestershire sauce
1/8 teaspoon seafood seasoning
1/8 teaspoon ground mustard
Dash pepper
Dash hot pepper sauce
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1 tablespoon canola oil

Steps:

  • In a small bowl, combine the first 5 ingredients. Cover and refrigerate., In another bowl, combine the first 10 crab cake ingredients. Fold in crab. Refrigerate for 30 minutes., In a large skillet, heat oil over medium heat. Drop crab mixture by 1/4 cupfuls into the pan; cook until golden brown, 3-5 minutes on each side. Serve with sauce.

Steps:

  • Add boiling water to stuffing mix in large bowl; stir just until moistened. Let stand 5 min.
  • Add crabmeat and eggs; mix lightly. Shape into 6 patties.
  • Melt butter in large skillet on medium heat. Add crab patties; cook 5 min. on each side or until heated through and lightly browned on both sides. Serve with lemon wedges.

1 1/2 pounds crab meat, de-shelled
16 soda crackers, finely crumbled
1 teaspoon mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon Dijon mustard
Zest of 1 lemon
1 egg
2 tablespoons canola oil
Salt and freshly ground pepper
1 egg
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
2 cups canola oil
1 teaspoon Sriracha
1 teaspoon salt
Freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crab cakes: In a large bowl, combine the crab, crackers, mayonnaise, chives, mustard, lemon zest and egg. Mix together well. Form palm-sized cakes and place them on a baking tray covered with parchment paper. In a pan, heat the olive oil over medium-high heat and cook the crab cakes in batches, about 2 minutes on each side. Put them back on the baking tray and in the oven for 10 minutes.
  • For the spicy mayo: Using a blender or food processor, beat the egg with the Dijon mustard and red wine vinegar. Slowly add the canola oil until the mixture starts to emulsify and becomes very creamy in texture. Add water if necessary to make a thinner texture. Add the sriracha sauce. Continue to process for 1 minute. Season with salt and pepper.
  • When ready to serve, garnish the crab cakes with a dollop of spicy mayo.

½ (4 ounce) packet saltine crackers, crushed
1 medium bell pepper, minced
2 stalks green onions, white parts only, minced
1 large egg, lightly beaten
3 tablespoons mayonnaise, or more to taste
1 teaspoon Dijon mustard, or more to taste
2 pounds cooked blue crabmeat, drained
2 tablespoons seafood seasoning (such as Old Bay®)
1 teaspoon ground black pepper
1 cup Italian-seasoned bread crumbs, or more as needed
2 tablespoons canola oil, or more as needed

Steps:

  • Mix crushed crackers, bell pepper, green onions, egg, mayonnaise, and Dijon together in a large bowl. Gently fold in crabmeat, seafood seasoning, and black pepper using a wooden spoon or spatula. Form crabmeat mixture into 1/2-inch-thick patties, 2 to 3 inches in diameter.
  • Put bread crumbs on a plate. Coat patties with bread crumbs.

Place log on a tray or plate and transfer to the freezer until lightly stiff, 20 to 25 minutes. Remove the log from the freezer and using a sharp chef's knife, slice off one of the twisted ends. Remove crab mixture from inside twisted end and reserve. Slice log into 4 or 6 individual disks, about 1 1/2-inch thick each.
