Homemade pasta plus crumbled goat cheese make this pasta extra delicious!

Kosher salt, to taste
1 lb. mezzi rigatoni or penne
3/4 c. fresh basil leaves
3/4 c. grated parmesan cheese
3 tbsp. pine nuts
2 garlic cloves
Black pepper, to taste
1/3 c. extra-virgin olive oil, plus a little more if needed
3 c. cherry tomatoes
1/2 c. heavy cream
2 tbsp. salted butter
4 oz. goat cheese, crumbled

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  • Meanwhile, make the pesto: Add the basil to a food processor or blender. Add ½ cup of the parmesan, the pine nuts, garlic, and salt and pepper to taste. Next, turn on the machine and slowly drizzle in the olive oil to make a nice puree. Stop when it's bright green and all mixed together.
  • Halve the cherry tomatoes and toss them in a bowl with ½ teaspoon salt. Set aside.
  • Now comes the even better part: Heat the heavy cream in a saucepan and drop in the butter. Then pour the pesto right in.
  • Stir this together and simmer it slowly for a few minutes. At the end, dump in the remaining ¼ cup parmesan and half of the goat cheese and stir it together.
  • Drain the pasta and put it in a large serving bowl. Pour on the pesto cream, then throw in the tomatoes and any juices. Toss it all together. The hot pasta and sauce will heat the tomatoes just perfectly. Top with the remaining goat cheese and serve it right away.

The most elegant pasta dish that Italian cooks have ever invented is astonishingly simple to make. Here, the magical green sauce is tossed with trenette (or any long pasta you can twirl around a fork), tender slices of potato and barely blanched green beans.

2 cups packed tender young basil leaves
1/4 cup pine nuts
1 teaspoon salt
2 plump garlic cloves, peeled and crushed with flat blade of a knife
1/2 cup extra-virgin olive oil, or more to taste
1/2 cup freshly grated Parmigiano Reggiano cheese, or more to taste
Salt to taste
1/2 pound small potatoes, peeled and sliced about 1/4-inch thick
1/4 pound tender young green beans, cut into 1-inch lengths
1 pound trenette, or other long, thin pasta

Steps:

  • Make pesto: In the bowl of food processor, add basil, pine nuts, salt and garlic. Pulse until mixture is coarse and grainy. With the motor running, add oil in slow, steady stream. Add cheese; process just enough to mix well. If sauce is too dry, add a little more oil. Taste; add more cheese or salt, if desired.
  • Bring 6 quarts water to rolling boil. Add at least 2 tablespoons salt and the potato slices. Cook for about 5 minutes, or until potatoes have started to soften but are not cooked through. Add green beans, and continue boiling another 5 minutes.
  • Add pasta, and stir. Start testing pasta at 5 minutes. When it is done, and when potatoes and beans are tender, drain and turn pasta and vegetables immediately into preheated bowl. Add pesto, and mix thoroughly. Serve immediately.

1 pound mezzi rigatoni pasta
1/2 cup extra-virgin olive oil
One 15-ounce can chickpeas, rinsed and drained well on paper towels
2 cloves garlic, smashed
1/2 teaspoon chile flakes
3 tablespoons capers, rinsed
1 bunch Swiss chard (or baby spinach), stemmed, leaves chopped into 1/2-inch strips
1 3/4 cups freshly grated Parmesan
1 teaspoon grated lemon zest (from 1 lemon)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until just short of al dente, 8 minutes. Drain, reserving 1 1/4 cups of the pasta water.
  • Meanwhile, heat 1/4 cup of the olive oil in a large skillet over medium-high heat. Add the chickpeas and cook, stirring often with a wooden spoon, until golden brown and crispy, about 5 minutes. Add the garlic, chile flakes and capers and cook until fragrant, 1 minute. Stir in the Swiss chard and 1/4 teaspoon salt; cook until wilted, 3 minutes. Add 1/4 cup of the reserved pasta water and simmer for 1 minute. Add the drained pasta and sprinkle with 1 1/2 cups of the Parmesan and the lemon zest; toss well to coat. Add 1 cup more of the reserved pasta water and the remaining 1/4 cup olive oil. Simmer until the pasta is al dente, the sauce has thickened and the flavors have come together, 2 minutes. Top with the remaining 1/4 cup Parmesan and serve.

RIGATONI WITH SICILIAN PESTO (PESTO ALLA TRAPANESE)



Rigatoni with Sicilian Pesto (Pesto Alla Trapanese) image

2 cups uncooked rigatoni (200 grams)
1/2 cup blanched almonds (70 grams)
3 cloves garlic
1 lbs fresh tomatoes, such as off the vine, plum or cherry tomatoes (1/2 kilogram)
1 cup fresh basil leaves (20 grams)
1/4 cup extra virgin olive oil (60 ml)
1/2 cup grated Manchego cheese (45 grams)
pinch sea salt
dash black pepper

Steps:

  • Fill a stock pot half ways with cold water, season generously with sea salt & heat with a high heat
  • Meanwhile, heat a small fry pan with a medium heat and add in 1/2 cup raw blanched almonds, mix continuously, after 4 minutes and the almonds are lightly toasted, remove them from the heat and transfer into a bowl so they can slightly cool off
  • After a couple minutes add the almonds into a food processor, along with 3 cloves of garlic, run on a low speed for 15 to 20 seconds or until the almonds and garlic are finely chopped, then add in 1 lbs tomatoes (cut into quarters), 1 cup basil leaves and season generously with sea salt & black pepper, run the food processor on a low speed until everything is well blended, then slowly add in 1/4 cup extra virgin olive oil while still running the processor, then run for another 1 to 2 minutes, then add in 1/2 cup grated cheese and run for another 30 seconds, set aside
  • Once the water comes to a boil on the stock pot, add in 2 cups rigatoni, cook until al dente, reserve a little of the pasta water if you want to thin out your pesto sauce, then drain the pasta into a colander, add the pasta back into the stock pot (heat turned off), pour the pesto sauce over the rigatoni and mix together
  • Transfer into shallow bowls and garnish with basil leaves, serve at once, enjoy!

1 lb rigatoni pasta, uncooked
1 (7 1/2 ounce) manzanilla olives, pitted (or green)
1/2 cup almonds, toasted and sliced
1/2 cup Italian parsley
1/4 teaspoon black pepper, freshly ground
1 garlic clove
2 tablespoons water
1 teaspoon white wine vinegar
1/2 cup asiago cheese, grated

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • Drain pasta, reserving 6 tablespoons cooking liquid.
  • Place olives, sliced almonds, parsley leaves, black pepper, and garlic in a food processor; pulse 3 times or until coarsely chopped.
  • With processor on, add 2 tablespoons water and 1 teaspoon vinegar through the food chute, processing until mixture is finely chopped.
  • Combine pasta, 1/4 cup reserved cooking liquid, and olive mixture in a large bowl; toss well.
  • Add enough of remaining 2 tablespoons cooking liquid to make pasta mixture moist, tossing well to coat.
  • Sprinkle with cheese.
  • Serve hot 1 2/3 cup servings.

1 cup firmly packed drained pimiento-stuffed green olives, rinsed well and patted dry
1/3 cup pine nuts
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1 cup finely chopped fresh parsley leaves
1/4 cup extra-virgin olive oil
2 tablespoons freshly grated Parmesan

Steps:

  • In a food processor purée the olives with the pine nuts, the garlic paste, and the parsley, with the motor running add the oil in a stream and the Parmesan, and blend the mixture well. Serve the pesto with 1 pound pasta, cooked and drained, reserving 3/4 cup of the pasta liquid to thin the pesto. Or serve the pesto as a spread with crackers.
