Savor every spoonful as a midday meal or as a warm end to a long afternoon. Not only is winter squash tender and delicious, it's chock-full of vitamins, minerals, and fiber. Tastes good and it's good for you. Add a cup of cooked chicken or turkey to the ricotta for extra protein. For variety, substitute tofu and toasted walnuts for the ricotta and hazelnuts."

1 (1 1/2 lb) acorn squash
1 teaspoon olive oil
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon cardamom
1 pinch salt
1 cup part-skim ricotta cheese
1 tablespoon honey
1 teaspoon dried oregano
1/4 cup hazelnuts, chopped, toasted
2 tablespoons wheat germ, honey toasted
black pepper

Steps:

  • Preheat oven to 375 degrees.
  • With sharp knife, carefully cut squash in half lengthwise and scoop out seeds with a spoon.
  • Rub flesh with olive oil and sprinkle with the cinnamon, cloves, ginger, cardamom and salt.
  • Wrap each half in foil and place on a baking sheet. Bake for 30 minutes or until flesh is fork tender. Remove from oven and unwrap squash.
  • To toast nuts, place in an ungreased pie tin and bake at 400 degrees for 5-7 minutes.
  • Mix ricotta with honey, oregano, and hazelnuts.
  • Evenly fill the baked squash halves with the ricotta mixture.
  • If you want the ricotta to be warm, return to oven, on baking sheet, for 5-10 minutes. Remove from oven.
  • Sprinkle with wheatgerm and black pepper and serve. Note, squash can be cooked a day in advance and reheated with the ricotta mixture at 400 degrees for 10-15 minutes, or until heated through.

2 small acorn squash
1 tablespoon soy sauce
16 ounces ricotta cheese
1 egg
2 tablespoons onion flakes
2 tablespoons chopped chives
1 (1 ounce) package ranch dressing mix

Steps:

  • Preheat oven to 375. Bake acorn squash for 35-40 minutes, until barely tender.
  • Remove from oven and cut in half. Let cool for 10 minutes.
  • With a large spoon, scoop out seeds. Sprinkle squash cavities with soy sauce. Set cut side up in a 9 by 13 inch baking dish.
  • Meanwhile, in a medium bowl, mix ricotta with egg, onion flakes, chives and ranch dressing.
  • Mound mixture equally inside acorn squash halves.
  • Bake 15-20 minutes until filling is hot and puffy.

ROASTED ACORN SQUASH STUFFED WITH RISOTTO



Roasted Acorn Squash Stuffed with Risotto image

4 medium acorn squash
Kosher salt
2 cups whole milk
1 tablespoon olive oil
2 tablespoons olive oil
1 medium onion, diced
1 cup arborio rice
1 cup white wine
3 cups chicken or vegetable broth, plus more as needed
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • For the squash: Preheat the oven to 400 degrees F.
  • Divide 3 of the squash lengthwise and remove the seeds. Place the 6 squash halves cut-side up in a large, high-sided ovenproof skillet or pot (you may need to do this in batches or two pots). Sprinkle the cut sides all over with salt, then pour the milk into the cavities, filling halfway. Pour water into the pot until it reaches halfway up the sides of the squash. Carefully place in the oven and roast uncovered until fork-tender, 35 to 40 minutes.
  • Meanwhile, peel, seed and dice the remaining squash. Place in a roasting pan along with the olive oil and a pinch of salt. Toss and roast until fork-tender, 15 to 20 minutes.
  • For the risotto: Add the olive oil to a large skillet over medium heat. Add the onions and saute until they are translucent, about 2 minutes. Add the rice and stir to coat with the olive oil and onion mixture. Add the white wine and stir until the liquid has absorbed, about 5 minutes. Add the broth, 1/2 cup at a time, and stir until all the liquid has absorbed before adding another 1/2 cup. (This process will take approximately 25 minutes and the risotto will become creamy from the starch releasing.) When all of the liquid has been added and absorbed, stir in the Parmesan and the roasted, diced squash. Season to taste with salt and pepper. (If the risotto seems too dry, just add some more broth).
  • Stuff the roasted squash halves with the risotto and serve.

It's a great fall vegetarian meal, as it's very filling, and the rice would be great as a side dish, on it's own! **NOTE: The quantity of the filling I have listed is for 4 squash halves in the original recipe, but I use the extra filling as a side dish for a dinner the next night.

1 acorn squash, halved crosswise, seeded, and bottom trimmed to lie flat, if necessary (1 pound)
salt
fresh ground pepper
3 tablespoons olive oil, divided
1 (8 ounce) package mushrooms, sliced (and chopped, if desired)
1 medium yellow onion, chopped
3/4 teaspoon dried thyme
1 cup long-grain white rice
2 cups chicken broth
1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 450 degrees. Line a rimmed baking sheet with foil and season cut sides of squash with salt and pepper. Drizzle with 1 tablespoon oil, and turn cut sides down. Roast until tender, about 35 minutes.
  • Meanwhile, in a medium straight-sided skillet, heat remaining 2 tablespoons oil over medium-high. Add mushrooms, onion, and thyme; season with salt and pepper. Saute until mushrooms are golden, 8 minutes. Add rice and broth and bring to a boil; cover and reduce heat to low. Cook until liquid is absorbed, 20 minutes.
  • Remove squash from oven and heat broiler. Carefully scoop out 2 to 3 tablespoons flesh from each squash half and stir into rice; season with salt and pepper. Divide rice mixture among squash halves, sprinkle with Parmesan, and broil until melted, 2 minutes.

2 acorn squash, halved and seeded
3 tablespoons olive oil
salt and pepper
1 cup couscous
1/2 cup golden raisin
1 cup boiling water
1 onion, minced
4 garlic cloves, minced
6 cups Baby Spinach
1/2 cup pine nuts, toasted
3/4 cup pecorino romano cheese

Steps:

  • 1. Heat broiler and place oven rack about 8 inches from element. Coat flesh sides of acorns with olive oil, salt and pepper. Place flesh side down on large plate and microwave about 12-16 minutes.
  • 2. Combine couscous, raisins and 1 teaspoons salt in medium bowl. Pour boiling water over couscous, add 1 T. Oil and stir to combine. Cover tightly with plastic wrap and let sit about 5 minutes, fluff with a fork and set aside.
  • 3. Heat remaining 1 T. oil in 12-inch skillet. Add onion and cook til softened, about 5 minutes. Add garlic and cook for thirty seconds. Add spinach and cook until wilted. Off heat, stir in couscous, pine nuts and 1/2 Celsius Cheese. Season with salt and pepper.
  • 4. Transfer squash, cut side up, to rimmed baking sheet. Mound couscous mixture into squash halves and pack down lightly with palm. Top with remaining cheese and broil until slightly borwned, about 4-5 minutes.

1 large acorn squash
2 tablespoons butter
2 tablespoons onions, chopped
1/2 cup broccoli floret, chopped
1/4 cup mushroom, chopped
2 tablespoons celery, chopped
2 tablespoons walnuts, chopped
1/2 teaspoon brown sugar
1/2 teaspoon soy sauce
1 tablespoon fresh basil, chopped
1/4 cup muenster cheese, grated

Steps:

  • Heat oven to 400°F.
  • Cut squash in half and remove the seeds.
  • Rub the cut flesh with salt and place flesh side down in a baking dish and bake for about 35 minutes.
  • While the squash is baking, sauté onion in butter until clear and add chopped broccoli florets, mushrooms and celery.
  • Sauté about 4 minutes.
  • Stir in walnuts and fresh basil, then sprinkle with brown sugar and soy sauce, adjust seasoning to taste. Toss to mix well.
  • Check baking squash with a fork to see if it glides through the flesh.
  • Stuff with vegetable mixture, top with equal amounts of grated cheese and return to oven for about 5 minutes.

2 acorn squash (1-1/4 - 1-1/2 lb. each)
2 tablespoons salted butter
1 tablespoon olive oil
1/4 teaspoon cinnamon
1 pinch ground cardamom
1 1/3 cups water
2/3 cup red quinoa
3 tablespoons toasted salted cashew pieces
2 tablespoons diced dried apricots
4 teaspoons chopped of fresh mint (can sub thin sliced green onions for a different flavor)

Steps:

  • Preheat the oven to 400°F.
  • Cut the acorn squash in half lengthwise and remove the seeds and strings. Place squash cut side down in a shallow baking dish and fill with 1/4" of water. Bake for 30-35 minutes, until the flesh is easily pierced with a fork.
  • In the meanwhile, melt the butter in a small saucepan on medium heat, whisking constantly. Watch closely as brown flecks begin to appear. As soon as the butter turns a caramel brown color and has a nutty fragrance (this should take between 4-6 minutes; do not allow the butter to turn black), remove from the heat and transfer to a medium bowl. Stir in the olive oil, cinnamon and cardamom. Note: Can add additional spices, like ground coriander, ground cumin, red or black pepper.
  • Add the 1 1/3 cup water and quinoa to the same saucepan. Bring to a boil, reduce to a simmer, cover and cook for 17 minutes. Remove from the heat and fluff with a fork.
  • Toss 2 cups of the quinoa with the seasoned brown butter, cashews, apricots and mint. Cover the quinoa mixture to keep it warm if the squash needs more time to finish baking.
  • Equally divide the quinoa filling among the four squash halves. Serve immediately. Refrigerate leftovers for up to 2 days.

3 green onions, chopped
1 tablespoon vegetable oil
1 package (10 ounces) fresh spinach, chopped

2 tablespoons chopped pecans
1 tablespoon butter

Steps:

  • Cut squash in half; discard seeds. Place squash, cut side down, in an ungreased 15x10x1-in. baking pan. Fill pan with hot water to a depth of 1/2 in. Bake, uncovered, at 350° for 40 minutes., Meanwhile, in a skillet, saute celery and onions in oil until tender. Add the spinach and 1/4 teaspoon salt; cook and stir until spinach is wilted. , In a bowl, combine the bread crumbs, pecans and remaining salt. Drain water from baking pan. Turn squash cut side up. Stuff with spinach mixture; sprinkle crumb mixture over top. Dot with butter. Bake 15 minutes longer or until the squash is tender.
