1 slice crusty white bread
1/4 medium apple, thinly sliced
1 tablespoon golden raisins
Ground cinnamon

Steps:

  • Spread peanut butter over bread. Top with apple and raisins; sprinkle with cinnamon.

1/2 cup raisins
4 teaspoons sugar
2 tablespoons finely chopped walnuts
1/3 cup creamy peanut butter
1/4 teaspoon coconut extract

Steps:

  • In a bowl, combine the first four ingredients; beat well. Add peanut butter and extract. Refrigerate for 30 minutes or until easy to handle. Shape into 3/4-in. balls.

½ cup peanut butter
2 tablespoons honey
1 teaspoon ground cinnamon, or to taste
4 tablespoons raisins
8 slices whole-grain bread

Steps:

  • In a small bowl, mix together peanut butter, honey, and cinnamon.
  • Spread about 2 tablespoons of the peanut butter spread over one side of one slice of bread. Sprinkle 1 tablespoon raisins evenly over peanut butter, and place a slice of bread on top of the raisins to make a sandwich. Repeat with remaining ingredients.

2 slices raisin bread
1 tablespoon cream cheese
1 apple, sliced
1 generous tablespoon cinnamon sugar
2 tablespoons salted butter, softened
1 teaspoon powdered sugar

Steps:

  • Lay out the bread slices and spread them both with cream cheese. Lay the apple slices on one piece of bread. Sprinkle on the cinnamon sugar. Press the 2 slices together.
  • Butter one side of the sandwich and put it on a hot panini maker butter-side down. Butter the other side, close the lid and cook until it's toasted and warmed through. (If you do not have a panini maker, you can grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Turn to grill the other side in the same way.)
  • Sprinkle with powdered sugar, cut in half and serve!

2 tablespoons olive oil
1/4 cup raisins
1/4 cup pine nuts
1/4 cup apple, peeled and cubed
4 tablespoons chopped green onions
1/4 teaspoon salt

Steps:

  • Heat oil in a large saute pan over medium heat.
  • Add raisins, pine nuts, apples, and onion, and cook about 5 minutes, stirring occasionally, until raisins plump.
  • Stir salt into raisin mixture.
  • Add spinach, tossing until spinach is just wilted.
  • Serve immediately, with wedges of lemon to squeeze over spinach if desired.

2 slices bread (I prefer multi-grain for nutrition)
real peanut butter (from Wholefoods of Wild Oats)
grape jelly

Steps:

  • Spread peanut butter liberally on one slice of bread.
  • Spread jelly on the other slice.
  • Put the two pieces together.
  • Place the sandwich on a pre-heated panini maker.
  • Close the top and cook three minutes.
  • Remove, slice in half and serve.
  • (If you have toddlers, you might wait a minute to let the bread cool slightly for them).

1/4 cup golden raisin
1/4 cup peanut butter
2 tablespoons honey
11 1/4 inches round low-fat whole grain waffles
1 apple, cored and sliced into 1/8 inch thick pieces
4 tablespoons raspberry all-fruit jam or 4 tablespoons strawberry all-fruit jam
2 teaspoons unsalted butter

Steps:

  • Combine raisins, peanut butter and honey in small bowl; stir to blend. Divide and spread over 4 waffles to cover and top each with about 5 apple slices.
  • Spread 1 teaspoons jam on each four remaining waffles; place jam side down on peanut butter topped waffles.
  • Heat 1 tsp butter in large skillet over medium-high heat. Add waffle sandwiches and reduce heat to medium-low heat. Place another skillet over evenly on waffles.
  • Cook for 1 1/2 minutes.
  • Flip panini; add remaining 1 teaspoons butter to skillet and slide panini around skillet to coat with butter.
  • Replace skillet on top and cook one more minute or until lightly browned.
  • Cut and serve with remaining apple slices.
