Ricotta & Spinach Fritters image

This recipe was created when I was trying to think of something to use my leftover ricotta cheese and spinach mixture from the previous day.

15 oz part-skim ricotta cheese
1/2 c shredded mozzarella cheese
1/2 c freshly grated parmesan cheese
1 pkg frozen spinach, thawed, drained, squeezed of any excess water
1 large roma tomato, chopped
3 large eggs, lightly beaten
1 c italian bread crumbs
1 c panko crumbs
1 tsp garlic salt

Steps:

  • 1. Using a medium sized skillet, fill about 1/4 with extra-virgin olive oil and let heat on medium-high heat.
  • 2. In a medium sized bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese and spinach. Add garlic salt and mix together well with clean hands. Gently fold in the chopped tomatoes.
  • 3. Meanwhile, set up breading station using a small to medium bowl for the eggs, one plate with Italian bread crumbs and another plate for the Panko crumbs. Make cheese mixture into 2-inch balls and gently pat down to a "patty"; dip the fritter into the Italian bread crumbs then dip into egg mixture. Dip the fritter into the Panko crumbs. Repeat until all tomato slices are breaded. (For better results with the fritter staying together, you may want to put these in the freezer for 10-15 minutes before doing any further).
  • 4. Preheat oven to 350 degrees.
  • 5. Place three to four fritters into the oil and fry for 1 to 2 minutes and gently turn over using tongs. Allow to cook for 1 to 2 minutes longer or until golden brown.
  • 6. Place fritters on a baking sheet sprayed lightly with non-stick cooking spray. Bake for 15 minutes or until heated through.

Great way to add more vegetables into your breakfast! Serve with fresh hot biscuits or muffins and fresh fruit for a wonderful brunch.

Number Of Ingredients 10

1 cup baby spinach leaves, lightly packed
2 green onions, sliced
4 -6 button mushrooms, washed and sliced
1 fire roasted red pepper, diced
1 tablespoon fresh basil
1 -2 teaspoon butter
4 eggs (or egg substitute equivalent to 4 eggs)
1/3 cup ricotta cheese
2 tablespoons parmesan cheese, grated
salt and pepper

Steps:

  • Spray a non-stick 9 or 10 inch omelet pan with cooking spray.
  • Place over medium high heat, add butter.
  • When butter is melted add the prepared vegetables and basil.
  • Cook stirring often just until spinach is wilted.
  • Whisk together the eggs and ricotta cheese.
  • Pour egg mixture over cooked vegetables, cook until almost set, lifting edges frequently to allow uncooked portions to run to bottom of pan.
  • When almost set, reduce heat, cover and allow to cook covered for 1 to 2 minutes.
  • Invert onto a large plate and slip back into pan to finish cooking, top with grated parmesan cheese.
  • Cut in half and serve on warmed plates.

4 eggs
1/4 cup sugar
1 pound ricotta cheese
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup cake flour
1 tablespoon baking powder
1 pinch salt
Oil, for frying
Powdered sugar
Chestnut honey

Steps:

  • Mix eggs and sugar together. Add ricotta and vanilla. In a separate bowl sift together all- purpose flour, cake flour, baking powder, and salt. Add to egg mixture. Beat until smooth. Fill a pot or deep-fryer half full with oil. Heat until oil gets to 350 degrees F. Drop dough into hot oil by the tablespoonful. Fry until golden brown. Remove from oil, and drain on a paper towel. Dust with powdered sugar, drizzle with warm chestnut honey, and serve immediately.

1 tbsp olive oil
1 large onion , finely sliced
300g cherry tomatoes
100g spinach leaves
small handful basil leaves
100g ricotta
6 eggs , beaten
salad , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat oil in a large non-stick frying pan and cook the onion for 5-6 mins until softened and lightly golden. Add the tomatoes and toss for 1 min to soften.
  • Remove from the heat, add the spinach leaves and basil, and toss together to wilt a little. Transfer all the ingredients to a greased 30cm x 20cm rectangular baking tin. Take small scoops of the ricotta and dot over the vegetables.
  • Season the eggs and beat well, then pour over the vegetables and cheese. Cook in the oven for 20-25 mins until pale golden and set. Serve with salad.

10 ounces frozen chopped spinach, thawed and squeezed dry
1/4 onion, finely chopped (about 1/4 cup)
2 large eggs
2 tablespoons flour
1 teaspoon ground cumin
salt and pepper
2 tablespoons olive oil

Steps:

  • In a large bowl, stir together the spinach, onion, eggs, the flour and cumin; season with salt and pepper.
  • Heat the olive oil over medium heat in a frying pan. Spoon heaping tablespoons of the spinach batter into the oil. Cook the fritters until crisp and browned, about 2 minutes on each side.

1 pound fresh ricotta, drained of any excess liquid
1/2 ounce finely grated Parmigiano-Reggiano (1/4 cup)
1 (3-ounce) piece Genoa salami, peeled if necessary, finely chopped (3/4 cup)
2 large egg yolks
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup plus 3 tablespoons fine dry bread crumbs
About 2 cups vegetable oil
Special Equipment
a deep-fat thermometer

Steps:

  • Stir together ricotta, parmesan, salami, yolks, salt, pepper, and 3 tablespoons bread crumbs until combined. Put remaining 1/2 cup bread crumbs in a shallow bowl.
  • Line a large baking sheet with wax paper. Scoop a 1 1/2-tablespoon mound of ricotta mixture into bread crumbs, turning to coat completely, then pat into a 1/2-inch-thick oval with your hands and transfer to baking sheet. Make more ricotta fritters in same manner, arranging in 1 layer.
  • Heat 1/2 inch oil in a 12-inch heavy skillet over moderately high heat until thermometer registers 350°F. Fry half of fritters, gently turning over once with 2 spoons, until golden, 2 to 4 minutes. Transfer with a slotted spoon to paper towels to drain. Return oil to 350°F, then fry remaining fritters in same manner. Serve warm or at room temperature.

1/2 teaspoon finely grated fresh orange zest
1 tablespoon Grand Marnier or 1 tablespoon fresh orange juice
1/2 cup whole milk ricotta cheese
1/3 cup all-purpose flour
1/8 teaspoon salt
1 cup oil (for frying, I use a light olive oil)
confectioners' sugar, for dusting

Steps:

  • Whisk together egg and granulated sugar, then whisk in zest, Grand Marnier, ricotta, flour, and salt until just combined.
  • Heat oil in a heavy skillet over moderately high heat until hot but not smoking.
  • Working in batches of 4, spoon 1 tablespoon of batter per fritter into oil and fry, turning over once, until golden on both sides, about 2 minutes.
  • Transfer with a slotted spoon to paper towels to drain and cool slightly.
  • Dust fritters with confectioners sugar and serve immediately.
