1 1/2 pounds ground meatloaf mix
1 cup dried plain breadcrumbs
1/2 cup shredded carrots
One 4-ounce can chopped green chilies, drained
1/4 cup chopped fresh cilantro
1/4 cup ketchup
3 tablespoons chopped pickled jalapenos
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1 medium green bell pepper, finely chopped
1 clove garlic, minced
1 medium onion, grated
Kosher salt and freshly ground black pepper
1/4 cup barbecue sauce
2 teaspoons honey
1 teaspoon chipotle chile powder
1 teaspoon cider vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, carrots, green chilies, cilantro, ketchup, pickled jalapenos, Worcestershire sauce, eggs, bell pepper, garlic, onion, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands, mix together until combined well. Transfer the mixture to the loaf pan. Bake the meatloaf for 30 minutes.
  • Stir the barbecue sauce, honey, chipotle powder, and vinegar together in small bowl. Remove the meatloaf from the oven and brush the top and sides all over with the spicy barbecue glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

  • In a small bowl, combine the first 6 ingredients. Crumble pork and turkey over mixture and mix well. Shape into a loaf and place in a greased 8-in. square baking dish. Drizzle with barbecue sauce. , Bake, uncovered, at 350° for 40-45 minutes or until a thermometer reads 165°.

The author of the recipe says that it's OK to omit the bread slices under the individual meatloaf/pepper rounds but says that the bread "gets so fantastically toasty and crunchy and becomes the PERFECT way to enjoy this meatloaf."

  • Mix first 10 ingredients with your hands in a bowl.
  • Divide the mixture into eighths and fill into the pepper rounds. Make sure you smoosh (yes, smoosh) them down to completely fill them.
  • Top each pepper round with the ketchup mixture and place on top of a slice of bread.
  • Set each bread/pepper on top of a baking sheet and bake for 35-40 minutes or until a meat thermometer reads 160 degrees.
  • Cool for 10 minutes, serve and sigh with happiness.

I was undecisive on what to make for dinner one night between stuffed peppers and meatloaf. So I came up with this recipe and loved it.

2 red bell peppers
1 lb lean ground beef
1/2 cup quick oats
1/3 cup parmesan cheese
1/3 cup onion, finely chopped
1 teaspoon garlic, minced
1 tablespoon dried basil
1 tablespoon Worcestershire sauce
1/3 cup ketchup
1 egg
mozzarella cheese

Steps:

  • Cut red peppers lengthwise clean out the core and seeds and set aside.
  • In a large mixing bowl, combine ground beef, oats, parm. cheese, onions, garlic, basil, worcestershire sauce ketchup and egg. Mix well.
  • Divide meat mixture in 4 parts.
  • Stuff each part into the red peppers.
  • Place stuffed peppers in a casserole dish.
  • Bake in oven 30 minutes until meat is cooked through and pepper is slightly roasted.
  • Top with cheese ( Sliced or Shredded ) and bake until cheese is slightly melted.

  • Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. 2 cups chicken broth

  • Preheat oven to 425F& lightly coat a roasting pan with cooking spray.
  • Place whole peppers on the pan& roast, turning once, for about 20 minutes or until the peppers start to blister& burn.
  • Remove from oven& allow to cool; cut each pepper in half, remove the stem, seeds& pith.
  • Heat oil in saute pan; saute garlic& onion until the onion is translucent, about 3- 5 minutes.

1 lb bacon, divided (not thick cut)
1/2 cup red bell pepper, chopped
1/2 cup onion, chopped
1 teaspoon dried parsley flakes
2 1/2 lbs ground beef
1 cup breadcrumbs
2 extra large eggs
1 (1 7/8 ounce) package dry onion soup mix (use 1 envelope)
1/3 cup water
0.5 (10 3/4 ounce) can condensed golden mushroom soup
3/4 cup French-fried onions
6 ounces monterey jack cheese, cut into 1-inchX3-inch strips

Steps:

  • Preheat oven to 350 degrees F. Line a 13"X9" baking pan with Reynolds Aluminum Foil. Spray with non-stick cooking spray, or use Reynolds Wrap Non-Stick Aluminum Foil. Set aside.
  • In an 8" non-stick skillet, cook 4 slices of the bacon until just crisp. Transfer to a paper towel lined plate and let drain and cool. In same pan with the bacon drippings, saute the red bell pepper, onion and parsley flakes for 3-4 minutes. Remove from heat and cool.
  • In a large bowl, combine the ground beef, bread crumbs, eggs, dry soup mix, water, golden mushroom soup, French fried onions and crumbled bacon. Mix well with hands and form into a "football" shape. Place in prepared baking pan. Make a deep well in center of meatloaf, being careful not to break through the bottom. Carefully layer the cheese strips along length of meatloaf. Spoon red pepper/onion mixture over top of cheese. Carefully work meatloaf up and over filling. (It's ok if filling is not covered completely) Use remaining uncooked sliced bacon to "wrap" meatloaf, covering all exposed meatloaf with bacon in a diagonal pattern.
  • Bake for 1 1/2 to 2 hours or until meatloaf and bacon is thoroughly cooked.
  • Remove from oven and let rest 10 minutes before serving.

1 tablespoon Worcestershire sauce
1 egg, beaten

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper.   • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
