Ingredients

1 tablespoon Raspberry Syrup, recipe follows
1 tablespoon fresh lemon juice
Chilled prosecco, for serving
1 cup sugar
2 tablespoons fresh lemon juice
2 pints raspberries

Steps:

Add the Raspberry Syrup and lemon juice to the bottom of a champagne flute. Fill the glass with prosecco.
Place the sugar and 2 cups water in a medium saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved, 3 to 4 minutes. Add the lemon juice and raspberries and simmer, stirring occasionally, until the raspberries have broken down, about 10 minutes. Pour the mixture through a strainer and return to the pot. Simmer over medium heat until the syrup has thickened, about 10 minutes more. Let cool completely, then pour into an airtight container and store in the refrigerator for up 2 weeks.

1/2 cup lovage leaves
1 bottle (750 milliliters) prosecco or other sparkling wine, chilled
8 lime wedges, optional

Steps:

Combine sugar and a cup of water in a small saucepan, and bring to a boil. Stir until sugar dissolves, then turn off heat. Add lovage leaves and let syrup infuse for 3 hours. Strain, discarding lovage.
Measure 2 teaspoons syrup (or more to taste) into each of 8 Champagne flutes or other glasses. Top with prosecco and garnish with lime wedges. Leftover syrup is nice tossed with plums.

400ml cloudy apple juice
200ml vodka
juice 2 lemons
750ml prosecco
ice
1 green apple , cored and finely sliced
1 lemon , sliced

Steps:

Pour the apple juice, vodka and lemon juice into a punch bowl and chill for 1-2 hrs.
When you're ready to serve add the prosecco, ice and apple and lemon slices to garnish.
