MACADAMIA-ALMOND CHRISTMAS COOKIES

Nancy Fuller's Christmas cookies are filled with macadamia nuts and almonds and finished with a red-and-white striped chocolate kiss candy.

Yield 4 to 5 dozen cookies

Number Of Ingredients 15

2 cups macadamia nuts
11/2 cups sugar
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1/2 cup vegetable shortening
2 large eggs
1 tablespoon vanilla extract
1 tablespoon almond extract
2 3/4 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon fine salt
2 cups white chocolate chips
1 cup pistachios, roughly chopped
1 cup dried cranberries
Nonstick cooking spray
48 to 60 red-and-white striped chocolate kiss candies

Steps:

  • Put the macadamia nuts in a food processor and process until smooth and buttery (this should measure about 1 cup). Add the sugar, butter and shortening and pulse until blended. Add the eggs and vanilla and almond extracts and pulse until blended. Add the flour, baking soda and salt and pulse until just incorporated. Transfer the cookie dough to a medium bowl and fold in the white chocolate chips, pistachios and cranberries. Cover and refrigerate the dough for 30 minutes. Adjust the oven racks to the upper and lower thirds and preheat the oven to 375 degrees F. Coat 2 baking sheets with cooking spray.
  • Scoop out heaping tablespoons of dough, roll into balls and space about 2 inches apart on the prepared baking sheets. (You will need to bake the cookies in batches; be sure to allow the baking sheets to cool in between batches.)
  • Bake until the bottoms and edges of the cookies are golden brown but the middles are still soft, about 10 minutes. (The cookies will bake a bit after they come out of the oven) Press a chocolate candy kiss into each warm cookie. Allow the cookies to cool on the baking sheet for a few minutes and then transfer to a rack to cool completely. Store at room temperature in an airtight container for up to 3 days.

2 sticks (1 cup) salted butter
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 1/4 cups macadamia nuts, roughly chopped
10 ounces good-quality white chocolate, roughly chopped
1/3 cup good-quality white chocolate chunks
2 tablespoons roughly chopped macadamia nuts
Sea salt, for sprinkling

Steps:

  • For the cookies: Melt 1 1/2 sticks (12 tablespoons) of the butter in a small skillet over medium heat. Cook, swirling the skillet, until the butter is golden brown. Set aside to cool.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper.
  • In the bowl of an electric mixer, cream together the brown sugar, granulated sugar and remaining 1/2 stick (4 tablespoons) butter. Drizzle in the cooled brown butter. Mix in the eggs one at a time. Add the vanilla extract.
  • In a separate small bowl, stir together the flour, baking soda and salt. Add half of the flour mixture to the butter and sugar mixture and mix until incorporated. Add the remaining flour mixture and mix well. Add the nuts and white chocolate and mix until incorporated. Drop large scoops of dough onto the prepared baking sheets using a 2 1/4-inch ice cream scoop.
  • For the topping: Top the cookies with a few chocolate chunks and chopped nuts. Bake until the edges start to brown, about 14 minutes. Sprinkle the tops with a small amount of sea salt. Let cool on the baking sheets.

1 egg
1 stick butter, melted
3/4 cup flaked sweetened coconut
1/2 cup chopped macadamia nuts (recommended: Mauna Loa)
1/2 cups white chocolate chips, for drizzle

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, combine all ingredients for cookies except the white chocolate chips. Stir until soft dough forms.
  • Drop cookie dough by tablespoonfuls onto ungreased cookie sheet. Bake for 15 to 16 minutes or until edges are light golden brown. Remove from oven and cool 1 minute.
  • Melt white chocolate chips in microwave in 30 second intervals, stirring each time, until smooth. Drizzle over cookies.

1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup light brown sugar
1 egg
2 teaspoons vanilla extract
8 ounces (1 1/2 cups) white chocolate baking squares), cut into small chunks, or white baking chips
3/4 cup roughly chopped, unsalted, toasted macadamia nuts

Steps:

  • Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper.
  • Combine the flour, baking soda, baking powder, and salt in a mixing bowl.
  • Using a mixer, beat the butter in a large mixing bowl until fluffy, about 2 minutes. Add the brown sugar and mix together until smooth.
  • Add the egg and vanilla. Stop to scrape down the sides of the bowl with a rubber spatula. Blend in the flour mixture in 3 stages and stir in the white chocolate and the nuts.
  • Scoop out walnut-sized mounds of the cookie dough and place on the cookie sheet, leaving 2-inches between the mounds. Bake for 8 to 10 minutes, until the cookies are golden. Remove the cookie sheet from the oven and transfer the cookies from the parchment to cooling racks. Store in an airtight container at room temperature for up to a week. Freeze for longer storage.

Steps:

  • •Make sure the oven keeps the right temperature. The cookies may need a minute or two more or less than stated.
  • •Preheat oven to 350 degrees F.
  • •Line baking sheets with parchment paper (no need to grease).
  • •Measure flour, baking soda and salt in a large bowl and blend together. Set aside.
  • •In a large mixing bowl, preferably a heavy-duty mixer, and using the paddle or beater attachment, beat butter until creamy.
  • •Add brown sugar and beat again. Scrape down the bowl and add the granualted sugar. Beat until fluffy.
  • •Add eggs one at a time, beating after each addition.
  • •Add vanilla, beat and scrape again.
  • •On low speed, add flour mixture 2 cups at a time, and mix well.
  • •Mix in white chocolate and macadamia nuts. Mix only until blended.
  • •Using a cookie scoop, place dough on prepared baking sheets, spacing evenly to allow for spreading.
  • •Bake at 350 degrees for 10-12 minutes or until lightly browned. Do NOT over bake these cookies. They continue to bake for a few minutes after they are removed from the oven.
  • •Transfer to cooling racks. Store in air tight container or plastic bag to stay soft and moist.
  • •Makes 48 warm and gooey cookies.
