Ingredients

2 cups freshly grated sharp Cheddar
8 ounces cream cheese, at room temperature
4 ounces diced pimientos, drained
1/4 cup mayonnaise
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
Kosher salt
1 teaspoon chopped fresh chives
Crackers and assorted crudités, for serving

Steps:

Add the Cheddar, cream cheese, pimientos, mayonnaise, onion powder, cayenne, garlic powder and 1/2 teaspoon salt to a large mixing bowl. Use a hand mixer to beat the mixture until it is well combined and fluffy, about 1 minute. Salt to taste.
Transfer the dip to a serving bowl and garnish with the chives. Serve with crackers and assorted crudités.

Ingredients

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
1 cup shredded Cheddar cheese
1 teaspoon prepared mustard
salt and pepper to taste

Steps:

In a medium-size saucepan, melt butter or margarine. Mix in flour and 1 teaspoon of salt. Stir continually until the mixture is simmering.
Slowly pour milk into the mixture. Continue stirring over a medium heat until the mixture has thickened. Stir in cheese and mustard. Continue stirring until all of the cheese is melted and the dip is smooth. Serve warm after adding salt and pepper to taste.

Ingredients

2 1/4 cups whole milk
2 tablespoons unsalted butter
1 small Spanish onion, finely chopped
2 tablespoons all-purpose flour
1/4 teaspoon kosher salt
1 pinch cayenne pepper
1/2 lb blue cheese, crumbled

Steps:

Place the milk in a small saucepan and bring to a simmer over low heat.
Heat the butter in a medium saucepan over medium heat. Add the onion and cook until soft.
Stir in the flour and cook for 1 minute.
Slowly whisk in the warm milk, and continue whisking until thickened.
Season with salt and cayenne pepper.
Continue cooking for 5 minutes, whisking occasionally. Remove from the heat and stir in the cheese.
If the sauce is too thick, thin it with a little extra milk.
Serve sauce warm.

2 cups half-and-half
2 cups shredded Cheddar cheese
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper

Steps:

Melt butter in a saucepan over low heat. Blend in flour and cook until mixture is smooth and bubbly, 2 to 3 minutes. Remove from heat; stir in half-and-half, Cheddar cheese, salt, pepper, and cayenne. Return to heat and cook, stirring constantly, until sauce is smooth, about 5 minutes. Keep warm until serving.

There seems to be a general consensus that as it is it is bland but can be the basis for many different varities using different herbs and spices, examples given have been chives, basil or oregano. Please feel free to experiment.

500ml milk
4 tbsp plain flour
50g butter
100g grated strong cheddar (or 50g grated cheddar, 50g crumbled blue cheese)

Steps:

Pour 500ml milk into a large saucepan and add 4 tbsp plain flour and 50g butter.
Turn on the heat to medium and start to whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken.
Whisk for another 2 mins while the sauce bubbles then stir in 100g grated strong cheddar cheese (or 50g grated cheddar, 50g crumbled blue cheese) until melted.
