HOW TO MAKE RICH AND FLAVORFUL CHICKEN STOCK

How to make rich and flavorful chicken stock image

Homemade chicken stock is delicious and a serious step up from the mushroom water, MSG and salt most store bought versions have.

Provided by Rachel Ballard

Categories     Main Course

Time 1h40m

Number Of Ingredients 10

1 4-6 pound cooked chicken bones with the skin (meat removed)
1 cup fresh Italian parsley, stems on
1 medium red onion, skin on (cut in half)
3 large stalks celery cut into 4-inch pieces (use the inner leaves too)
3 medium carrots, skin on (cut into chunks)
1 medium garlic clove (smashed, but not peeled)
2 teaspoons kosher salt
2 bay leaves
1 teaspoon fresh rosemary (optional)
1 1/2 gallons bottled water

Steps:

  • In a large stock pot, add all of the ingredients.
  • Cover and bring to a boil. Reduce the heat to low and simmer 2 to 4 hours. Skim off any foam that may form.
  • After the 2-4 hours, turn off the heat and allow the broth to cool slightly. About 30 minutes. Line a mesh strainer with cheesecloth and ladle the stock through into a large bowl.
  • Allow the broth to cool to room temperature then transfer to the refrigerator for up to a week, or measure 1-2 cup amounts and freeze flat in ziplock bags.

CHEF JOHN'S HOMEMADE CHICKEN STOCK

Chef John's Homemade Chicken Stock image

There's nothing like homemade chicken stock. It does take a long time to simmer, but the procedure is really quite simple.

Provided by Chef John

Categories     Soups, Stews and Chili Recipes     Broth and Stock Recipes     Chicken Stock Recipes

Time 13h40m

Yield 12

Number Of Ingredients 8

3 pounds chicken necks and backs
1 large onion, skin on, sliced into 6 segments
2 carrots, cut into chunks
1 stalk celery, cut into chunks
2 cloves garlic, peeled
4 sprigs chopped fresh thyme
1 bay leaf
3 quarts cold water

Steps:

  • Combine chicken, onion, carrots, celery, garlic, thyme, and bay leaf in a large stockpot; pour water into pot. Bring to a gentle simmer over medium-low heat, being careful not to let the mixture come to a boil. Once simmering, skim off any foam or impurities that accumulate on the surface of the water and reduce the heat to low.
  • Gently simmer the mixture on low for 12 hours, skimming off any foam as needed.
  • Remove stockpot from heat and let cool for 1 hour.
  • Pour stock through a fine strainer and transfer to food-safe containers.

BASIC CHICKEN STOCK

Basic Chicken Stock image

A great stock to use for soups, sauces, gravies, etc.

Provided by Logan

Categories     Soups, Stews and Chili Recipes     Broth and Stock Recipes     Chicken Stock Recipes

Time 1h40m

Yield 6

Number Of Ingredients 9

1 pound chicken parts
1 large onion
3 stalks celery, including some leaves
1 large carrot
1 ½ teaspoons salt
3 whole cloves
6 cups water
¼ cup cold water
1 egg

Steps:

  • Quarter onion. Chop scrubbed celery and carrot into 1 inch chunks. Place chicken pieces, onion, celery, carrot, salt, and cloves in large soup pot or Dutch oven. Add 6 cups water. Bring to a boil. Reduce heat, cover, and simmer for 1 hour.
  • Remove chicken and vegetables. Strain stock. Skim fat off the surface.
  • To clarify stock for clear soup, removing solid flecks that are too small to be strained out with cheesecloth, follow this method. Separate the egg white from the egg yolk, and reserve the shell. In a small bowl, combine 1/4 cup cold water, egg white, and crushed eggshell. Add to strained stock, and bring to a boil. Remove from heat, and let stand 5 minutes. Strain again through a sieve lined with cheesecloth.

RICH CHICKEN BROTH

Rich Chicken Broth image

Use this stock to make Matzo Ball Soup with Carrots and Dill. Leaving the skins on the onions adds to the rich golden color of the stock.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Yield Makes about 3 quarts

Number Of Ingredients 7

2 chickens (3 to 4 pounds each), quartered, with necks reserved
3 medium yellow onions (about 1 1/2 pounds), unpeeled
4 medium carrots (about 8 ounces), scrubbed

10 black peppercorns
1/2 bunch fresh dill (about 24 large sprigs)

  • Remove pot from heat and strain broth through a cheesecloth-lined sieve, discarding solids. Let broth cool to room temperature and refrigerate overnight. Remove any solidified fat from the surface (and save for cooking, if desired). Broth can be kept refrigerated for 2 days or frozen.
