For whatever reason, rice pudding is usually not near the top when people list their favorite desserts, but despite that, it's a proven crowd-pleaser, and quite easy to make, especially using this simplified, one-pot method.

½ cup uncooked long-grain white rice
¼ teaspoon kosher salt
1 cup water
¼ cup white sugar
1 ⅓ cups milk
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
1 large egg yolk
1 tablespoon cold butter
2 tablespoons dried cherries, chopped

Steps:

  • Place rice, salt, and water into a saucepan. Bring to a boil over medium-high heat. Reduce heat to low, cover, and cook until tender, about 20 minutes. Remove from heat; sprinkle with sugar and pour in milk. Stir with a whisk until until the thin layer of cooked-on starch at the bottom of the pan is cleared and incorporated into the mixture, 2 or 3 minutes.
  • Place pan over medium heat, stirring frequently, until it reaches your desired of level of doneness and creaminess, 8 to 10 minutes. The longer it cooks, the thicker and stickier it will be. Remove from heat. Add vanilla and cinnamon. Very quickly whisk in the egg yolk (to prevent it from cooking). Whisk for about 1 more minute. Add butter and dried cherries; stir thoroughly.
  • Transfer warm pudding to serving dishes. Cool to room temperature. Cover and refrigerate until thoroughly chilled, 3 to 4 hours.

3/4 cup uncooked regular long-grain rice
1/3 cup sugar
1/4 teaspoon salt
2 eggs, beaten
1 cup whipping (heavy) cream
1 teaspoon vanilla
1/2 cup sugar
1 tablespoon cornstarch
1/4 cup orange juice
1 1/2 cups frozen unsweetened tart red cherries (from 1-lb bag)
2 tablespoons brandy or orange juice

Steps:

  • In 2-quart saucepan, heat milk, rice, 1/3 cup sugar and the salt to boiling over medium-high heat. Reduce heat to medium-low. Simmer uncovered 40 to 45 minutes, stirring frequently, until rice is tender and mixture is thickened.
  • Stir a small amount of the hot rice mixture into eggs, then stir eggs back into mixture in saucepan. Continue cooking over medium heat about 3 minutes, stirring constantly, until heated through. Cool 45 minutes, stirring occasionally.
  • In chilled large serving bowl, beat whipping cream and vanilla with electric mixer on high speed until thickened. Fold in cooled rice mixture. Cover and refrigerate at least 3 hours until well chilled.
  • In 1-quart saucepan, mix 1/2 cup sugar and the cornstarch. Stir in orange juice and frozen cherries. Heat over medium-high heat, stirring frequently, until mixture boils and thickens slightly. Stir in brandy. Serve sauce warm or chilled with pudding.

4 cups cooked long grain rice
1 can (12 ounces) evaporated milk
1 cup 2% milk
1/3 cup sugar
1/4 cup water
3/4 cup dried cherries
3 tablespoons butter, softened
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine the rice, evaporated milk, milk, sugar and water. Stir in the remaining ingredients.   • In a saucepan, bring milk, half & half and sugar to a boil.
  • Add rice and vanilla extract.

1/2 teaspoon ground cardamom
2 cups skim milk
1/2 cup dried cherries
1/2 cup heavy cream, whipped

Steps:

  • Place the rice, sugar, cardamom, milk and one-third cup of the cherries in a heavy saucepan. Bring to a boil, lower heat to a gentle simmer and cook, covered, stirring from time to time, until the rice is very tender, about 40 minutes.
  • Divide the mixture in half and pack into two one-cup heart-shaped molds and refrigerate until well chilled, at least four hours, then unmold. Alternatively, the mixture can be refrigerated in a small bowl and, once it has been chilled, shaped into two hearts by hand.

3/4 cup Basmati rice
1 quart whole milk
6 tablespoons sherry
1/2 cup sugar
1 1/2 cups mixed fresh cherries, pitted and sliced
1/2 cup red currant jelly
1 cup heavy cream

Steps:

  • Preheat oven to 350 degrees.
  • Place the almonds on a baking sheet, and cook in oven for 10 minutes or until they are lightly browned.
  • Combine the rice and milk in a heavy-gauge saucepan over high heat. Bring to a boil, stirring constantly. Then, reduce heat to simmer and cook for about 30 minutes, stirring frequently, until rice absorbs milk.
  • Remove rice from heat, and stir in sherry, sugar and almonds. Refrigerate.
  • Meanwhile, place cherries and jelly in a saucepan over medium heat. Cook, stirring occasionally, for 5 minutes. With a slotted spoon, remove cherries to a bowl. Refrigerate.
  • Cook remaining fruit liquid over high heat until it is reduced by half. Set aside to cool.
  • Whip heavy cream until it develops firm peaks. Fold whipped cream, 1/3 at a time, into rice pudding.
  • Assemble dessert in large wine goblets, with cherries on the bottom, then a layer of rice pudding and then some slivered almonds. Pour reduced fruit liquid over everything.

15g butter, softened, for the dish
140g pudding rice
50g caster sugar
4 tbsp custard powder
1 tsp vanilla bean paste
1 litre whole milk
170ml double cream
150g frozen cherries (frozen sour cherries work well)
50g caster sugar
½ lemon, juiced

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a 1.5-litre baking dish. Put the pudding rice, sugar, custard powder, vanilla, milk and cream in a bowl and whisk to combine. Pour the mixture into the prepared dish. Bake for 1 hr 30 mins until a brown skin has formed on the surface and the rice is cooked through and tender.
  • Tip the frozen cherries into a small saucepan with the sugar and lemon juice. Cook gently over a low heat for 10-15 mins, or until the cherries have softened and the liquid has reduced enough to coat the back of a spoon. Let stand for a minute or two, then serve the rice pudding in bowls with the compote spooned over the top.

This is from my Eat Well Stay Well cookbook. I haven't tried it yet, but it looks like a great way to use up leftover rice. Dried cranberries or blueberries can be used in place of the cherries. 4 servings.

1 cup rice
1/2 teaspoon salt
1 (12 ounce) can evaporated skim milk
1/3 cup brown sugar
1/2 teaspoon orange zest
1/2 cup milk
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
1/2 cup dried cherries
1/4 cup slivered almonds, toasted

Steps:

  • Cook the rice until tender.
  • Add the evaporated milk, brown sugar and orange zest; cover and cook for 10 minutes.
  • Uncover and cook, stirring frequently, for 10 minutes or until the rice is very creamy and most of the liquid has been absorbed.
  • Stir in the milk, vanilla and almond extracts and remove from heat.
  • Cool to room temperature, stir in the cherries and almonds and refrigerate for 2 hours or until chilled.
