4 boneless skinless chicken breasts
1 c chicken broth
1/2 c white wine
1 medium onion, finely chopped
4 oz can mushrooms
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp black pepper
1 tsp dried parsley
3 Tbsp cornstarch
1/4 c cold water
1/2 c evaporated milk
8 oz spaghetti, cooked and drained
1/2 c parmesean cheese, grated
fresh parsley for garnish

Steps:

  • 1. Put a disposable slow cooker liner in your slow cooker.
  • 2. Cut the chicken into good sized chunks or strips. I like about a 2 inch or bigger chunk
  • 3. Chop onion and put onion and chicken in the slowcooker.
  • 4. Add the broth, wine, onion,mushrooms, salt thyme, pepper and parsley.
  • 5. Cover and cook on low for 4 to 5 hours.
  • 6. Turn to high. Dissolve cornstarch and water together and stir into slow cooker.
  • 7. Cover and cook for another 20 minutes.
  • 8. Stir in milk, cooked spaghetti, and half of the parmesean cheese.
  • 9. Serve in beautiful pasta bowls, sprinkle with remaining parmesean, and some fresh chopped parsley.

1/2 cup plus 1 Tbsp butter, melted
8 oz sliced cremini (baby portobello) mushrooms
1 yellow onion, diced
4 cloves garlic, minced
1 Tbsp fresh thyme, minced ((or 1 tsp dried thyme leaves))
1/2 tsp kosher salt
1/4 tsp black pepper
1/3 cup all-purpose flour
3 cups chicken stock
1 cup heavy cream
16 oz egg noodles, cooked according to package directions
3 cups cooked, shredded chicken ((see notes below for a fresh chicken breast option))
2 cups frozen peas
1 1/2 cups shredded Parmesan cheese
1/3 cup Panko breadcrumbs

Steps:

  • Preheat oven to 350 F degrees.
  • Heat a large oven safe pot (like cast iron) over MED heat. Add 1/2 cup butter and melt. Add mushrooms and onion and cook, stirring occasionally, until tender, about 5-6 minutes. Add garlic and cook an additional minute.
  • Stir in thyme, salt, and pepper, then add flour, stirring to coat completely.
  • Add in chicken stock and heavy cream, stirring or whisking frequently to remove any flour lumps. Cook, stirring often, about 8-10 minutes, until thickened.
  • Stir in prepared egg noodles, shredded chicken, frozen peas, and Parmesan cheese.
  • In a small mixing bowl, combine remaining 1 Tbsp melted butter with panko breadcrumbs, then sprinkle over top of the dish. Season with additional black pepper if desired, then bake, uncovered, for 35-45 minutes until golden brown and bubbly.

Steps:

  • Place Chicken Breasts into the bottom of a 6 Qt. Slow Cooker.

  • Cover and cook on High for 6-8 Hours. Shred Chicken with 2 forks.
  • Add in Cream Cheese. Cover & Cook for 30 minutes on high.
  • While Cream Cheese is cooking prepare pasta according to package directions.
  • Stir Cream Cheese into Chicken mixture until creamy. Add in cooked pasta and stir.
  • Top with Mozzarella Cheese and heat another 15-20 Minutes until Cheese is melted.

1 1/2 lbs. Foster Farms Simply Raised fresh chicken breast fillets
1/2 tsp. sea salt
1/4 tsp. garlic powder
1/4 tsp. black pepper
1 1/2 tsp. dried tarragon
1 cup diced white onion
2 cups sliced mushrooms
1 cup chicken broth
8 oz. pkg. cream cheese, ⅓ less fat or regular
1/2 pound dried spaghetti noodles (1/2 a box, cook according to package directions)
8 oz. pkg. mozzarella cheese, grated (reduced-fat or regular)

Steps:

  • Add the chicken, sea salt, garlic powder, pepper, tarragon, onions and mushrooms. Pour over the chicken broth. DO NOT ADD THE CREAM CHEESE OR SPAGHETTI YET. Cover and cook on LOW for 8 hours, or HIGH for 4 hours without opening the lid during the cooking time.
  • Cut the cream cheese into squares and add the slow cooker, cover. In the meantime cook the spaghetti according to the package directions.
  • After the cream cheese has had some time to melt. Take 2 forks and shred the chicken. Stir the sauce and chicken together. Add the cooked and drained pasta. Stir. Add the mozzarella cheese over the pasta and sauce. Cover for about 10 more minutes or until the cheese has melted. Serve and enjoy!

2 tablespoons butter
1 large onion (diced)
1 1/2 lbs chicken breasts
salt & pepper (to taste)
8 oz sliced mushrooms
2 tablespoons butter
2 tablespoons flour
1/2 cup white wine
2 cups milk
1 cup heavy cream
1 teaspoon dried thyme
1 cup frozen peas
1 lb cooked spaghetti
1 cup grated parmesan cheese
parsley (for garnish)

Steps:

  • Preheat empty crockpot on high.
  • In a large skillet, melt 2 tablespoons butter over medium heat. Saute onion for about 2 minutes until it starts to get tender. Sprinkle chicken breasts with salt and pepper on both sides and add into the pan, settling the chicken in between the cooking onions. Brown chicken on both sides, not cooking it through. Transfer the chicken and onions to the warming crockpot. Add in mushrooms.
  • Place large skillet back over medium high heat and melt remaining 2 tablespoons butter. Whisk in flour and cook 1 minute. Slowly whisk in white wine and milk and stir until it simmers gently and thickens slightly. Stir in cream, thyme and any salt and pepper if desired. Pour sauce over chicken, onions and mushrooms and stir. Reduce crockpot to low and cook 3-4 hours or until chicken is tender.
  • Remove chicken from crockpot and shred. Place back into the hot sauce. Stir in frozen peas, cooked spaghetti and parmesan cheese. Toss and serve. Garnish with parsley if desired.
  • Optional topping: Melt 1/4 cup butter in a small skillet. Stir in 1/2 cup plain bread crumbs and toast lightly. Sprinkle on top of completed dish as desired.
