24 dates - seedless, or remove the seeds
12 slices of bacon
2 - 4 ounces of cream cheese
24 wood toothpicks or more

Steps:

  • Remove seeds from dates if necessary. Stuff each date with cream cheese. Wrap 1/2 slice of bacon, overlapping bacon ends, around stuffed date and hold together by spearing through the date with a toothpick.
  • Heat oven to 350 degrees. Arrange stuffed and skewered dates on a cookie sheet or a large pan. If you have a metal rack for the pan, it's even better for keeping extra grease off dates.
  • Bake until bacon is brown and crispy, about 30 minutes. You will need to turn each bacon-wrapped date a couple of times during baking, so it does not blacken where it touches the pan - dates have such a high sugar content, they may burn if left in one position.
  • Drain dates on paper towels for a minute. And serve warm with a cool martini !

2 tablespoons heavy cream
1/2 cup blue cheese, at room temperature
1 pound thick-cut bacon (12 slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.
  • Place the bacon-wrapped dates on a baking sheet. Bake until the bacon is crisp, 15 to 20 minutes.

Goat cheese (any flavor - we used honey)
Almond and brown sugar (place almond inside the Date. Once wrapped in bacon, cover with brown sugar)
Almond and cream cheese

Steps:

  • Spray a cookie sheet with cooking spray or line with a silicone baking mat.
  • Fill your Date with one of the fillings above.
  • Wrap with bacon.
  • Place a toothpick through the Date.
  • Place on a baking sheet.
  • Bake at 400 degrees for 20-25 minutes; rotates the pan halfway through.
