1 lb. petite red potatoes, halved (see notes)
1 onion, diced into chunks
1 teaspoon salt
2 teaspoon thyme
2 teaspoons garlic powder
1 teaspoon pepper
up to 1/4 cup olive oil

Steps:

  • Preheat oven to 425 degrees
  • Add potatoes, onions, and spices to a glass casserole dish
  • Pour on olive oil to coat well (I used the full 1/4 cup)
  • Toss to combine
  • Bake at 425 degrees for 50 - 60 minutes, checking to stir and flip every 15 - 20 minutes

2 pounds potatoes, sliced into 1/2-inch-thick pieces
1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
  • Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

1/4 cup extra-virgin olive oil
2 teaspoons dried rosemary

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, toss together all of the ingredients. Spread the mixture in a single layer on a baking sheet. Bake until the potatoes and onions are golden brown and cooked through, about 40 minutes. Serve immediately or cool and store in an air-tight container in the refrigerator, reheating the next day in a preheated 400 degrees F oven for 10 to 15 minutes.

  • Preheat oven to 375.
  • Spray a baking dish with cooking spray or grease lightly with olive oil.

2 pounds red potatoes (or your preferred)
Kosher salt
1/4 cup olive oil, take or give
1 pound pearl onions*, peeled and halved (frozen is fine, thaw before slicing & roasting)
1 packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix

Steps:

  • 1.Boil and sliced potatoes. In a large pot over high heat, add the potatoes and cover with water by 1-inch. Bring to a boil over medium heat, then add a pinch of salt, reduce the heat and simmer until slightly tender, but not easily poked by a fork, about 10 minutes. Drain the potatoes and pour put them onto a baking sheet to cool completely. Once cool, cut them in half or smaller for bite-sized pieces. 2.Saute potatoes and onions. In a large pan on medium-high heat add the olive oil, it should cover the bottom with an 1/8 of an inch of oil, if too much don't use all the oil, if not enough, add more. When the oil begins to swirl, add the potatoes, onions and Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix, tossing to combine, then allowing to rest and cook. Once a crust forms on the bottom give the pan a toss or flip potatoes and onions with a spatula, then allow them to crisp on the other side, about 3 minutes.   • 1. Preheat oven to 400 degrees F. Put onions and potatoes in a sturdy roasting pan. Pour olive oil over them and toss well to coat. 4 medium white potatoes, cut into bite-sized chunks
1 medium vidalia onion, cut into eighths

  • Preheat oven to 425 degrees.
  • Combine carrots, potatoes, onion and garlic with melted butter in 8x8" square glass pan.

1 large red onion, coarsely chopped
3/4 cup chicken stock

  • Preheat oven to 425ºF.
  • Scrub the potatoes under cold running water and pat dry.
  • In a roasting pan, combine potatoes, olive oil, salt and pepper.
  • Using a large spoon or by shaking the pan from side to side, coat the potatoes evenly.
  • Roast the potatoes for 20 minutes.
  • Sprinkle evenly with onion; drizzle evenly with chicken stock.

6 onions (about 5 ounces each), left unpeeled
3 tablespoons peanut or safflower oil

  • Split potatoes in half lengthwise and cut onions in half crosswise.

The potatoes were brown and crisp on the outside, fluffy on the inside and the onions added an extra layer of flavor. My mom wanted to find a way to have roast potatoes and onions when she wasn't cooking a roast and one that didn't require heating up the oven just for the potatoes. So, she came up with "Top of the Stove Roast Potatoes and Onions." Enjoy! Tip: use a non-stick pan to ensure even browning.
