1 1/2 cup cheddar cheese (cubed)
8 slices bacon (cooked and chopped)
3 Tablespoons parsley (chopped)
1/2 cup sour cream
3 Tablespoons mayonnaise
1 Tablespoon cider vinegar
1 Tablespoon sugar

Steps:

  • In a large bowl add the peas, red onion, cheddar cheese, bacon and parsley.
  • In a small bowl whisk together sour cream, mayonnaise, cider vinegar, and sugar.
  • Pour the creamy mixture in the large bowl over the peas. Toss until the peas are fully coated. Chill for 30 minutes before serving.

1 bag (16 oz, frozen peas)
1 cup chicken broth
1/4 teaspoon salt
3 tablespoons butter
4 slices bacon (cooked and chopped)
1/3 cup half and half
2 tablespoons flour
1 tablespoon white sugar

Steps:

  • Pour your chicken broth, butter and bacon into a skillet and bring to a low boil.
  • Now add your peas to a boil in the liquid and stir. Lower heat to medium-high heat.
  • In a separate bowl, whisk together cream, flour, and sugar until well blended and without large flour chunks.
  • Stir your creamed mixture into the skillet and stir well, coating all of the peas.
  • Continue to cook your pan over medium-high heat until the creamed peas begin to thicken and bubble, which takes approximately 5-6 minutes. Make sure you constantly stir to avoid burning in the skillet and if if the peas thicken quicker, turn your heat down a bit.
  • Creamed Peas are done when peas are cooked all the way through and cream is nice and thick.

Steps:

  • Add the butter to a large skillet over medium heat. Cook the shallot for 3-4 minutes until softened, then add the frozen peas to the skillet. Toss the peas to combine with the butter, then add the cooked bacon, fresh thyme and chicken broth.

1 teaspoon white-wine vinegar
Coarse salt and ground pepper

Steps:

  • In a large skillet, cook bacon over medium, stirring occasionally, until fat is rendered and bacon is crispy, 5 to 7 minutes. With a slotted spoon, transfer bacon to a paper-towel-lined plate, leaving fat in skillet.
  • Add peas to skillet. Cook, stirring frequently, until heated through, 4 to 6 minutes. Remove from heat; stir in vinegar, and season with salt and pepper. Serve peas topped with bacon.
