1 1/2 cups basmati rice (rinsed)
2 tablespoons olive oil
3 tablespoons pine nuts
1 onion (finely diced)
4 tablespoons sultanas (golden raisins)
1 3/4 cups boiling water
3/4 teaspoon salt
1/2 teaspoon saffron threads

Steps:

  • Soak the rice in tepid water for 10 minutes; drain. While the rice is soaking, put half a kettle of water on to boil.
  • Add the oil to a medium, thick-bottomed lidded saucepan over medium heat. Add the pine nuts and cook until golden brown, about 1 to 2 minutes, stirring constantly. Transfer the pine nuts to a small bowl and set aside.
  • Add the onion to the saucepan you cooked the pine nuts in, and cook until softened and just starting to brown, about 5 to 7 minutes, stirring occasionally. Add the rice and cook 2 minutes, stirring frequently. Stir in the sultanas, boiling water, salt, and saffron (or turmeric), turn the heat up to high, and bring it to a rolling boil.
  • Give the rice a stir, then cover the saucepan, turn the heat down to very low, and cook until tender, about 10 minutes (do not open the lid during this time). Turn the heat off and let the rice sit (covered) 15 minutes, then fluff with a fork.
  • Transfer to a serving dish and sprinkle the toasted pine nuts on top; serve.
  • Optional: Add two pods of cardamom, two whole cloves, and one 2-inch (5 cm) piece of cinnamon stick at the same time that you add the rice.

This simple Mediterranean Rice Pilaf is the prefect side dish for American, Greek or Middle Eastern dishes. Makes 3 cups cooked rice.

1 cup long grain white rice
1 medium onion (diced)
1 teaspoon turmeric
1 clove garlic (minced)
1 Tablespoon butter
2 Tablespoons olive oil
2 cups chicken or vegetable broth
1/2 cup toasted pine nuts or slivered almonds
1 teaspoon kosher salt
1/2 teaspoon pepper (more to taste)
2-3 Tablespoons fresh chopped parsley for garnish.

Steps:

  • Heat oil and butter in a sauce pan over a medium heat. Add onions, and sauté 2-3 minutes, Add rice, turmeric and garlic, and continue stirring, 2 to 3 minutes. Don't let garlic burn

1 cup quinoa, rinsed well
1/4 cup pine nuts
2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
1/3 cup chopped fresh parsley
1/4 cup raisins
1 tablespoon fresh lemon juice
Kosher salt and freshly ground pepper

Steps:

  • Place the quinoa in a saucepan and cook over medium heat until toasted, about 2 minutes. Add 1 3/4 cups water (or use low-sodium chicken broth) and bring to a boil. Reduce the heat to medium-low and simmer, covered, until the liquid is absorbed, 10 to 15 minutes. Remove from the heat and let sit, covered, about 2 minutes.
  • Meanwhile, toast the pine nuts in a skillet over medium-high heat, stirring, until golden, about 3 minutes; transfer to a plate. Add the olive oil and garlic to the skillet and cook over medium heat, stirring, until golden, about 2 minutes. Transfer the garlic to the plate, reserving the oil.
  • Fluff the quinoa with a fork. Add the pine nuts, garlic, reserved oil, parsley, raisins and lemon juice. Season with salt and pepper and toss.

1/4 cup pine nuts
3 cloves garlic
1/2 onion
2 tbsp extra virgin olive oil
1 cup round rice
2 1/4 cups cold water
1/2 tsp saffron threads
handful fresh chives
pinch sea salt
pinch black pepper

Steps:

  • Add 1/2 cup of raisins into a bowl, cover the raisins with hot water and set aside, this will help soften the raisins
  • Heat a nonstick fry pan with a medium heat and add a 1/4 cup of pine nuts, mix them around continuously so they all cook evenly and they don´t burn, after toasting them for 4 to 5 minutes remove them from the pan and set aside
  • Heat a sauce pan with a medium-high heat and add 2 1/4 cups of cold water, pinch in 1/2 tsp of saffron threads and a generous pinch of sea salt
  • Using the same nonstick fry pan heat it with a medium-high heat and add 2 tbsp of extra virgin olive oil, after 2 minutes add 1/2 an onion that has been finely diced and 3 cloves of garlic that have been finely minced, mix with the oil and cook for 3 minutes
  • After cooking the onions and garlic for 3 minutes add 1 cup of round rice into the pan, the raisins in the bowl (drain the water before adding), the toasted pine nuts and season everything with sea salt & freshly cracked black pepper, mix together until well combined
  • At this point your saffron infused water should be boiling, add it into the fry pan with the rice, give it a gentle mix so everything is well distributed, after 6 minutes place a lid on the pan and lower the fire to a low-medium heat, after simmering for 4 minutes and there is almost no broth left, remove from the heat and set aside with the lid on, after 5 minutes remove the lid and top off the rice with some freshly chopped chives, enjoy!

Steps:

  • Heat olive oil in a saucepan over medium heat and cook onion, turmeric, and cardamom, stirring constantly, until soft and translucent, about 5 minutes. Add rice and mix well.

1 and 1/2 cups hot water
1/4 cup parsley
1-2 tablespoons pine nuts

Steps:

  • Heat olive oil in a pan. Add in 2 tablespoons of pine nuts and onions. Cook until onions become translucent.
  • Add in rice, salt, sugar, cinnamon, allspice and raisins. Cook for 5 minutes stirring occasionally.
  • Pour 1 and 1/2 cups hot water and let it cook covered over medium heat until it boils.
  • Bring the heat to the lowest when it starts to boil and let it simmer until the rice is soft and all the water is gone.
  • When there isn't any water left in the pan, remove from the heat. Uncover, put a paper towel on the top and put the lid back. Let it sit for about 15 minutes. Uncover and add parsley. Give it a gentle stir.
  • For the optional topping, put pine nuts in a pan in a single layer without adding oil. Toast until golden brown.
  • Serve the rice with toasted pine nuts on the top.

Steps:

  • Heat the olive oil in a small saucepan over medium heat. Add the pine nuts, garlic, zest, and thyme, swirl the pan until the nuts and garlic are beginning to brown, about 2 minutes. Add the wild rice and cook, stirring with a wooden spoon, until lightly toasted, about 1 minute tops. Stir in the chicken broth and salt. Bring to a boil. Reduce heat to a rapid simmer and cook, stirring occasionally, for 45 minutes to 1 hour. Check the texture of the rice and, if needed, continue simmering until tender. 1 large head cauliflower, separated into 1-inch florets
1/4 cup olive oil
1 medium onion, finely diced

2 tablespoons drained capers
2 small cloves garlic, thinly sliced
Zest of 1/2 lemon
Pinch red pepper flakes
Kosher salt
1/4 cup fresh parsley leaves, finely chopped

Steps:

  • Soak the raisins in warm water until plump, about 15 minutes. Drain and set aside.
  • Meanwhile, trim the cauliflower florets, cutting away as much stem as possible. In three batches, break up the florets into a food processor and pulse until the texture resembles that of couscous.
  • Heat the oil in a large skillet over medium-high heat. At the first wisp of smoke from the oil, add the onions, and stir to coat. 1 cup basmati rice
2 cups vegetable stock
1/4 cup yellow onion (chopped)
1/2 clove garlic (peeled and minced)
3 tablespoons olive oil
1/4 cup pine nuts

Steps:

  • Soak the basmati rice in cold water for approximately 2 hours prior to preparing the dish. Drain thoroughly.
  • In a large saucepan, heat the olive oil over medium heat. Add the minced garlic, pine nuts, and chopped onion. Sauté for a few minutes until the onions and garlic are tender.
  • Add the rice to the saucepan and mix well. Add the vegetable stock and bring to a boil. Reduce the heat to medium-low and cover. Allow to simmer for approximately 20 minutes, fluff with a fork and serve hot.

Serve the pilaf with pot roast, lamb, or poultry.

1 1/2 cups dry white wine, such as a Sauvignon Blanc (recommended: Sterling Vintners Collection), divided
1/2 cup golden raisins
2 cups water
1 tablespoon unsalted butter
Pinch salt
1 1/2 cups long-grain rice
1/2 cup sliced almonds
1 tablespoon chopped parsley leaves

Steps:

  • In a small pot over medium heat, warm 1/2 cup of the wine. Take the pan off the heat, add the raisins, and let sit until cooled and the raisins are plump.
  • In a medium pot over high heat, bring 2 cups of water, remaining wine, butter, and salt to a boil over medium heat. Stir in the rice, reduce the heat to low, cover, and cook until the rice is tender, about 20 minutes. Add the raisins and mix them into the rice. Cover and let rest for about 10 minutes. Fluff the rice with a fork, then stir in the almonds. Transfer the rice to a serving bowl, garnish with parsley, and serve.
